Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk or regular milk with a splash of vinegar
  • 1 large egg
  • 2 tablespoons melted butter plus more for cooking
  • 1 teaspoon vanilla extract

Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together buttermilk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Some lumps are okay.
  • Heat a non-stick skillet over medium heat and lightly grease with butter.
  • Transfer pancake batter to a squeeze bottle or piping bag and pipe small dots onto the skillet.
  • Cook for 1-2 minutes on each side until golden brown. Repeat with remaining batter.
  • Serve the mini pancakes in a bowl with your favorite toppings such as milk, syrup, or fresh fruit.

      I tried this and mine was also kinda thick—thought I did something wrong. Did you change the milk amount or use buttermilk? Also, I cook mine more like low-medium so they don’t set too fast before they spread.

    I didn’t have vanilla so I used almond extract. It tasted… different, but still good? My kids were like “why does it smell like cookies” lol. Would make again with vanilla though.

    Nice idea, but my batter got too thick and the dots wouldn’t spread. Next time I’ll thin it a bit and not overmix. Flavor is good though!

      That makes sense—if the batter is too thick, the dots won’t really “flow.” I usually aim for like a thin-yogurt consistency and let it rest 5 min so the flour hydrates. Glad the flavor still worked though!

      Hmm I had the opposite problem once… my dots expanded and merged, but I think I overmixed AND used too much baking soda? Also my skillet wasn’t hot enough, so they just sat there. Maybe try medium-high and a thinner batter next time.

    Hmm… 1 cup flour feels like a lot for mini pancakes. Mine made fewer pieces than expected. Also, medium heat browns them fast—watch the first batch closely.

      Good call—1 cup flour can definitely make fewer mini pancakes if the dots are bigger than intended. I usually do smaller than “pea size” and it helps.
