In a separate bowl, whisk together buttermilk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Some lumps are okay.
Heat a non-stick skillet over medium heat and lightly grease with butter.
Transfer pancake batter to a squeeze bottle or piping bag and pipe small dots onto the skillet.
Cook for 1-2 minutes on each side until golden brown. Repeat with remaining batter.
