  • 1 medium sweet potato peeled and cubed
  • 200 grams ground beef lean
  • 1/2 cup cottage cheese low-fat
  • 1 tablespoon honey combined with hot sauce for hot honey
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon hot sauce to taste

Instructions
 

  • Preheat the oven to 400°F (200°C).

      Good point—sweet potatoes can definitely take longer than 30 min depending on how big the cubes are and your oven. Next time I’d cube smaller or roast a bit longer. And yeah, regular cottage cheese is tangier than low-fat/used ones, so I get that. Still sounds tasty though!
