Ground Turkey Enchiladas are a delicious and lighter twist on a classic Mexican-inspired comfort food. Filled with seasoned ground turkey, wrapped in soft tortillas, and smothered in enchilada sauce and melted cheese, this dish is hearty, flavorful, and perfect for busy weeknights. Whether you’re cooking for your family or preparing meals ahead of time, these enchiladas offer a satisfying combination of protein, spices, and cheesy goodness in every bite.
One of the biggest advantages of using ground turkey is that it provides a lean source of protein while still delivering plenty of flavor. When combined with onions, garlic, and traditional Mexican-inspired seasonings such as chili powder, cumin, paprika, and oregano, ground turkey becomes a savory filling that pairs perfectly with enchilada sauce.
To prepare the filling, start by sautéing diced onions in a skillet until softened. Add minced garlic and cook for another minute before stirring in the ground turkey. Cook until the turkey is browned and fully cooked, breaking it apart as it cooks. Season the mixture with chili powder, cumin, paprika, salt, and black pepper. For extra texture and flavor, you can also add black beans, corn, or diced green chilies.
Warm the tortillas slightly to make them easier to roll. Spoon the turkey mixture into the center of each tortilla, add a small amount of shredded cheese, and roll tightly. Arrange the enchiladas seam-side down in a lightly greased baking dish.
Pour enchilada sauce evenly over the top, making sure each tortilla is covered to prevent drying out during baking. Sprinkle generously with shredded cheddar cheese, Monterey Jack, or a Mexican cheese blend. Bake in a preheated oven at 375°F (190°C) for about 20 to 25 minutes, or until the cheese is melted and bubbling.
Once baked, garnish with fresh cilantro, sliced green onions, diced tomatoes, or a dollop of sour cream. These enchiladas pair wonderfully with Mexican rice, refried beans, guacamole, or a fresh green salad.
Ground Turkey Enchiladas are a fantastic meal-prep option because they can be assembled in advance and refrigerated until ready to bake. They also freeze well, making them perfect for future meals. Flavorful, comforting, and easy to customize, these enchiladas are a healthy and satisfying dinner the whole family will love.
