Ingredients
  

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp enchilada seasoning or chili powder
  • 1 cup salsa
  • 8 small flour or corn tortillas
  • 2 cups shredded Mexican blend cheese divided
  • 1/2 cup enchilada sauce
  • 2 tbsp chopped cilantro optional, for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  • Heat the olive oil in a skillet over medium heat. Add the onion and cook until softened, then add the garlic and cook for 30 seconds.
  • Add the ground turkey and cook until browned, breaking it up as it cooks. Stir in the enchilada seasoning and salsa, then simmer for 2 to 3 minutes.
  • Spoon some enchilada sauce into the bottom of the baking dish. Fill each tortilla with the turkey mixture and a little cheese, then roll up and place seam-side down in the dish.
  • Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  • Bake for 20 to 25 minutes, until hot and bubbly. Garnish with cilantro if desired and serve warm.
