Delicious and rich homemade ravioli filled with a creamy spinach ricotta blend, perfect for a comforting meal.

Ingredients
  

  • 250 grams fresh spinach washed and chopped
  • 1 cup ricotta cheese drained
  • 1/2 cup grated Parmesan cheese freshly grated
  • 1 egg beaten
  • 1 package wonton wrappers typically 12 ounces
  • 2 cups heavy cream
  • 2 tablespoons butter unsalted
  • 1 clove garlic minced
  • to taste salt and pepper

Instructions
 

  • In a pan, sauté the spinach until wilted. Drain excess moisture and chop finely.
  • In a bowl, mix spinach, ricotta, Parmesan, and egg. Season with salt and pepper.
  • Place a small spoonful of filling in the center of a wonton wrapper. Moisten edges with water and fold to seal.
  • Repeat the process until the filling is used up.
  • In a pot, bring salted water to a boil. Cook ravioli until they float to the surface, about 3 minutes.
  • In a saucepan, melt butter and sauté garlic. Add cream and cook until slightly thickened.
  • Drain ravioli and toss gently with the creamy garlic sauce.
  • Serve hot, garnished with extra Parmesan if desired.

    I had a hard time with the wonton wrappers! They kept ripping when I tried to fold them. Is there a trick to it or something? Overall, flavor was okay, but it was a messy process.
