Picnic Potato Salad

May 22, 2025

Picnic potato salad is the ultimate side dish for any outdoor gathering, bringing comfort, freshness, and a creamy texture in every bite. Whether you’re hosting a barbecue, going on a picnic, or attending a potluck, this classic dish is always a crowd-pleaser. It’s simple to make and easily customizable with various add-ins like hard-boiled eggs, pickles, and fresh herbs, making it the perfect accompaniment to grilled meats or sandwiches.

To make this classic potato salad, start by boiling potatoes until tender but firm. Yukon Gold potatoes are a great choice for their creamy texture and ability to hold their shape, but any waxy variety works well. Once boiled, drain and let them cool slightly before cutting them into bite-sized pieces. The key to a great potato salad is ensuring the potatoes are still warm when you toss them with the dressing, which allows them to absorb all the flavors.

The creamy dressing is what makes this potato salad irresistible. A mixture of mayonnaise, Dijon mustard, and a bit of apple cider vinegar gives it the right balance of richness and tang. Season with salt, pepper, and a touch of garlic powder for depth, then stir in finely chopped celery, onion, and pickles for crunch and flavor. For a bit of extra tang, some people like to add a spoonful of sour cream or Greek yogurt to the mix.

Once the potatoes are coated in the creamy dressing, let the salad chill in the fridge for at least an hour to let the flavors meld together. Garnish with fresh parsley or chives before serving for a pop of color and freshness.

This picnic potato salad is a classic side that never goes out of style, making it the perfect dish to prepare ahead of time for your next outdoor event. It’s simple, satisfying, and guaranteed to be a hit with guests of all ages.

I dunno, it just didn’t taste that great to me. Maybe too much mayo? I probably won’t try it again.

Honestly, this is way too much mayonnaise. I would cut it back to 1/2 a cup max. Just my opinion!

This is tasty but kinda bland unless you salt more than you think. Also I used sweet onion once and it made it weirdly sweet? Not bad, just different.
