Kipfler potato salad is a fresh and earthy variation of the beloved potato salad, made with uniquely flavorful Kipfler potatoes. These small, finger-shaped potatoes have a firm, waxy texture and a slightly nutty taste that makes them perfect for salads. They hold their shape beautifully when cooked, allowing for a satisfying bite in every forkful.
Unlike the heavier, mayo-laden versions of traditional potato salad, a Kipfler potato salad leans more toward a rustic, European-style dish. Think tender slices of golden potatoes tossed with a light vinaigrette, fresh herbs, and maybe a hint of mustard or tangy capers for contrast. The simplicity of this salad is what makes it stand out—it lets the natural flavor of the potatoes shine.
The salad typically includes thinly sliced red onions or shallots for a bit of sharpness, while ingredients like fresh parsley, dill, or chives add brightness. A warm dressing made with olive oil, whole-grain mustard, white wine vinegar, and a touch of honey or lemon juice coats the potatoes gently, soaking in as they cool for maximum flavor.
Kipfler potato salad can easily be customized. You might add in crispy pancetta or bacon for a savory crunch, soft-boiled eggs for richness, or green beans for a bit of snap and color. It also pairs beautifully with grilled meats, roast chicken, or fish, making it a go-to side for picnics, barbecues, and family dinners.
One of the best things about this salad is that it tastes even better after it sits for a bit. The potatoes absorb the dressing and the flavors meld together, making it a great make-ahead option for gatherings. It’s a dish that feels familiar yet a little more refined-simple, nourishing, and always welcome on the table.

Where are the pickles? A potato salad without pickles ain’t a potato salad! 2/5 for me.
Wow, who knew potatoes could be so fancy? Love it. Perfect for summer BBQs!
Totally agree! This is gonna be a hit at my next BBQ, can’t wait to try it! 🤩
But why kipfler potatoes? Aren’t regular potatoes good enough? Anyway, I guess it’s worth a shot.
Best potato salad ever!!! !
This potato salad is delicious! I added some cherry tomatoes for extra flavor. 5 stars!
Yum! I love that you added cherry tomatoes. It’s a great twist! I’ll have to try that next time. 😍
Honestly, I don’t see what the fuss is about. It’s just another potato salad. Maybe too much mayo, idk.
Not a fan. The vinegar taste was way too strong for me, and I love mayo but it felt off here.
Best. Salad. EVER!! 😍
Not sure if I like the mustard in there. It kinda overpowers everything. Maybe just a little less next time?
Delicious! My fam loved it, even the kids. Thanks for sharing!
First time making potato salad, and it turned out great! I omitted the onion tho. Yum! 5/5.
I didn’t have kipfler potatoes, used regular ones instead. Still turned out okay I guess.
Super easy and tasty! My kids loved it. Thanks for sharing!
The mayo in this was too much for me. I prefer using yogurt instead. Not my thing. 2.
Dill? Really? I think it’s too much in this recipe. That’s just my opinion tho.
I dunno… I think dill should be there. But you do you, I guess. Maybe it’s just ur taste.
I actually love dill in potato salad! It adds such a nice flavor. Give it another try!
I dont even like potatoes that much but this recipe made me a fan!
Super easy and quick! Perfect for a last-minute dish. Will make again for sure. 👍 4 stars!
This salad was sooo good! The dill gave it a nice twist. Will definitely make again!
I love this recipe! Makes me think of my grandma’s cookin’. Definitely making this for our family BBQ! 🌟🌟🌟🌟🌟
Seems too complicated for a potato salad. Why use so many ingredients? Just boil and dressing!
I disagree! The flavors mix well with different ingredients, that’s what makes it special! 🤷♂️
I get that! Sometimes simple is better. But this sounds tasty if you like flavors! 😋
This has too many ingredients for potato salad! Why dill? Just keep it simple! 1 star.
This is just potato salad, nothing special. I thought it was overrated. 2 stars.
easy and quick recipe but not my fav. I prefer Italian dressing.
I totally get that! Italian dressing has such a nice zing to it. But I really enjoy this potato salad during summer BBQs. 😋
Tasted okay, but it was missing something. Maybe cumin next time? 3/5.
Yall forgot to tell how to peel the potatoes! I had a rough time with that. Only gave 2 stars.
This potato salad is so good! I love the dill flavor. Will definitely make again.
Honestly, I think this recipe is too basic. Where’s the flavor? I don’t get all the hype around potato salad.
I’m glad you loved it! The dill really makes a difference, doesn’t it? I added some chopped celery for a crunch, too!
This potato salad is a game changer! I never thought Dijon mustard would go so well with potatoes. Will def make again!
i dont know about the olive oil in potato salad?? that just seems wrong lol but its okay i guess
I was skeptical too, but trust me, the olive oil adds a nice richness! You should give it a try. 🙂
I tried this but I forgot the vinegar. It was still okay but I guess that must be important. Next time I’ll follow it!
Oh, I totally get that! I once forgot the vinegar too. It still turned out tasty but way different. Next time I’m going to remember it for sure!
Super easy to make! My kids helped out and they ate it all. Success!!
I struggled a bit with the boiling part. My potatoes turned mushy! Might try with less time next time.
A bit too complicated for me. I just want simple potato salad without all these fancy stuff. 🤷♂️
