Easy Grilled Potatoes In Foil

May 22, 2025

Grilled potatoes in foil are a foolproof side dish that combines crispy edges with tender, flavorful centers. Simple to prepare and packed with flavor, they’re the kind of recipe that works for summer barbecues, camping and picnic trips, or quick weeknight dinners. Cooking in foil packets keeps the potatoes juicy while letting herbs and seasonings infuse every bite.

When choosing potatoes, go for waxy varieties like baby potatoes or red potatoes. They hold their shape beautifully on the grill and deliver a satisfying texture. Slice them evenly, halves or wedges work best, so they cook at the same pace. For seasoning, a classic blend of olive oil, garlic, rosemary, salt, and pepper does wonders. You can also get creative: add a squeeze of lemon for brightness, smoked paprika for depth, or Parmesan cheese for an extra savory kick.

To assemble, lay a sheet of heavy-duty foil on a flat surface and place the potatoes in the center. Drizzle with your seasoned oil mixture and toss to coat. Fold the foil into a tightly sealed packet to lock in heat and moisture, which ensures soft centers and crisp edges.

Place the packet directly on a preheated grill and cook for 25–30 minutes, turning once or twice. You’ll know they’re ready when they pierce easily with a fork and have that golden, crispy exterior that makes grilled potatoes so irresistible.

These foil packet potatoes pair well with almost anything: grilled steak, juicy chicken, flaky fish, or even plant-based mains. They’re versatile, customizable, and endlessly adaptable to your flavor preferences. With just a few ingredients and minimal prep, grilled potatoes in foil are the kind of dish you’ll come back to again and again, whether you’re feeding a crowd or enjoying a cozy backyard meal.

Mushy potatoes? That sucks! Maybe you added too much oil or didn’t grill them long enough. I’ve done that too. Next time, try using less oil.
