Ingredients
  

  • 4 fillets cod 6 ounces each
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground, to taste
  • 2 cups red bell pepper roasted and peeled
  • 1/4 cup almonds toasted
  • 2 cloves garlic minced
  • 1 tablespoon sherry vinegar
  • 1/2 teaspoon smoked paprika
  • 1/4 cup olive oil for Romesco sauce

Instructions
 

  • Preheat grill to medium-high heat.
  • Brush cod fillets with olive oil and season with salt and pepper.
  • Grill the cod for 4-5 minutes on each side or until the fish is opaque and flakes easily with a fork.
  • While the cod is grilling, prepare the Romesco sauce by blending roasted red bell peppers, toasted almonds, minced garlic, sherry vinegar, smoked paprika, and olive oil in a food processor until smooth.

      Interesting… I think 4-5 minutes on each side is gonna dry it out. Cod’s pretty delicate, so I’d do like 2-3 min and call it. Also, is it sherry vinegar or sherry wine? I used the wrong thing once 😅

      Oof—no garlic would definitely make the romesco taste flatter. Also, cod is super picky: if the grill is too low it can come out kind of bland/soft, but if it’s too high it can dry out and lose flavor. Next time add a tiny pinch more salt right before serving (or a squeeze of lemon).

      Hmm I always think romesco has a little tang but “sharp” might mean too much vinegar or not enough sweetness from the peppers. If yours were less sweet, yep, less vinegar makes sense.

    Grilled cod tastes a bit bland unless you do more seasoning. Also, my grill flare-ups burnt the edges so I got charred fish. Won’t make again.

      Sorry it turned out charred! I do find cod needs a bit more pepper/salt than the recipe suggests, and I oil the grates so it doesn’t stick. Medium heat helps a lot with flare-ups.
