Cranberry brie bites are the perfect combination of sweet, savory, and creamy, wrapped up in a bite-sized appetizer that’s as elegant as it is effortless. Made with buttery puff pastry, creamy brie cheese, and tangy cranberry sauce, these little bites are always a hit at holiday gatherings, parties, or as a festive snack.
The magic begins with flaky puff pastry, cut into small squares and pressed into mini muffin tins to form golden, crispy cups. Inside each cup, a cube of brie melts into a luscious, creamy center as it bakes. A spoonful of cranberry sauce adds a sweet-tart contrast that perfectly balances the richness of the cheese. Some versions elevate the flavor even more with a sprinkle of chopped rosemary, thyme, or toasted pecans for a touch of earthiness and crunch.
As they bake, the pastry puffs up beautifully, turning golden and crisp, while the brie becomes gooey and melty, mingling with the cranberry sauce to create an irresistible bite. The result is a perfect harmony of textures, crisp, creamy, and jammy, with flavors that feel festive and indulgent.
Cranberry brie bites are incredibly versatile. They make a beautiful addition to a charcuterie board, can be served as a starter for Thanksgiving or Christmas dinner, or offered as an elegant party appetizer. They come together quickly and look impressive without requiring much effort.
Pair them with a glass of sparkling wine, Prosecco, rosé, or a crisp cider. The bubbles and acidity complement the richness of the brie and the tartness of the cranberry perfectly.
Simple yet sophisticated, cranberry brie bites are a crowd-pleasing appetizer that captures the cozy, festive spirit of the season in just one delicious bite.

I don’t know, they just didn’t taste as good as I thought they would. Maybe I did something wrong?
I totally get that! These bites can be tricky if the phyllo doesn’t bake right. Did you make sure to watch the baking time closely? Sometimes little things can make a big difference.
Maybe your brie was too aged or something? Just a thought, my friend. Brie can vary a lot in flavor. But don’t worry too much about it; they are still fancy! 🤷♂️
These bites are AMAZING! I made them for a dinner party and everyone loved them. Will definitely make again! 🍴
These are cute but honestly… a lot of work for mini bites. I feel like store-bought puff pastry would be easier. Taste is fine, just not worth the effort for me.
Totally get that—phyllo is fiddly. Store-bought puff would probably save a ton of time, and I bet the crunch would still be great.
They didn’t turn out right for me. The phyllo was soggy. Maybe I did something wrong?
Cranberry and cheese? Yummy! But I don’t trust phyllo pastry. Too many layers.
These are dangerously good. The phyllo gets so crisp and the brie turns all melty—perfect sweet/savory combo with the cranberry. I used store-bought cranberry sauce and it still tasted fancy.
Right?! I made these for a party and they disappeared way too fast. The crisp phyllo + melty brie is such a good contrast, and the cranberry keeps it from feeling too rich.
Phyllo pastry is that stuff you use in baklava, right? Curious how this would taste.
Cranberry sauce tasted kind of weird with the brie for me, like too tart. Walnuts were good though. Might try a sweeter cranberry next time.
5 stars! I added some diced apples and they were a hit!! Highly recommend.
These are amazing! So easy to make and a hit at my party! Definitely making them again.
I was skeptical about using phyllo pastry but wow, it worked out great! Just be careful, it can burn fast.
I tried this recipe too! The phyllo was super crispy, but I burnt a few of mine. Gotta watch it closely!
I forgot to buy walnuts, so I just left them out. Still yum! Maybe next time I’ll try adding them.
Hmm, not sure about cranberries and cheese. Sounds weird..
Can you make these ahead of time? I’m planning a big gathering and could use the prep!
Not a fan. The cheese got too gooey and the flavors didn’t mix well for me.
I think the gooeyness is just part of the charm! Maybe you didn’t bake them long enough? Love these bites!
Not sure what you did wrong, but mine turned out awesome! Cheese shouldn’t be gooey like that! You may want to try a different recipe.
These are sooo good! I brought them to a party, and everyone loved them. Total hit!
meh.
I think these sound amazing! The combo of cranberry and brie is to die for. 👌
Not sure what’s so great about this. Sounds kinda basic to me. Can anyone explain?
Yum yum! Perfect for Thanksgiving! I added some nutmeg to the cranberry sauce, and it was amazing!
Very easy to make! I used store-bought crust and it still turned out fine!
I agree! Store-bought crust made it so much easier! Definitely making these again!
I think using store-bought makes it less special. You should at least try making the crust yourself next time!
No honey for me. I felt like it made it too sweet with the cranberry. Otherwise, good texture and flavor. Phyllo is a little fiddly but worth it.
Totally get it—cranberry can already be pretty sweet/tart depending on the brand. Cutting the honey is probably the move. Glad the texture and flavor still came through though!
I used honey and it was sweet for me too 😅 but maybe my cranberry sauce was extra sugary. Phyllo is always a pain… mine kept ripping. Still, these were gone fast.
Yea, I made these but it wasn’t that great, Brie is a lil fancy for me. Just stick to cheddar.
Can I use cream cheese instead of Brie? I don’t like Brie.
This recipe is amazing! I replaced the walnuts with pecans and it was still great. Will make again!
This is just too fancy for my taste. I like simple snacks.
These came out dangerously good—crispy phyllo with melty brie is such a winning combo. I used store-bought cranberry sauce and it was still amazing.
Dangerously good?? Lol 😂 Mine kinda burst out of the phyllo after baking—maybe my brie was too big. Also I used 400°F and they were more brown than golden… still yummy though.
Yes!! I love that sweet-tart cranberry + melty brie situation. I did the same with store-bought sauce and it still tasted fancy. Definitely adding walnuts next time.
YAS! Perfect snack for the holidays! I drizzled brown sugar instead of honey. So good!
Made them for a party and everyone asked for the recipe. I did add the honey drizzle and walnuts—great sweet/salty balance. Only thing: my muffin tin stuck a bit, so grease well.
I wasn’t sure about the combo of cranberry and brie, but it actually works! Great recipe.
Delish! I added some cinnamon to the cranberry sauce, and it was a game changer!
Yum! I’ll be making these again for Thanksgiving! 😍
These sound amazing! Perfect for the holidays! 🤤
Not gonna lie, I was skeptical about phyllo + brie, but it actually works. Mine got a little soggy on the bottom though—maybe I didn’t grease enough.
Totally felt the same way before I tried it 😅 Good call on greasing—my bottoms only got soggy when I was lazy with the butter/oil. I also bake on the lower rack sometimes to get more browning.
Maybe your oven runs a bit cool? I’ve found 375°F is fine but if it’s not hot enough the phyllo steams. Also did you press the phyllo squares down firmly? If there’s gaps, it’ll get soggy fast.
I didnt have phyllo dough, so I used puff pastry. They still turned out ok, but not the same.
Too complicated for me! I prefer recipes that are more straightforward. Didn’t work out for me.
Not bad, but I subbed out the cranberry sauce for apple jelly and it was kinda weird. Lesson learned!
Weird? Sounds kinda gross tbh… apple jelly instead of cranberry? Yikes. 😬
I totally get that! Cranberry is so much better than apple jelly for this. Stick to the recipe next time!
Easy to make but kinda bland. I added some spices next time.
Too much work for such a simple snack. Just buy them ready-made!
Yum, perfect for Thanksgiving! Thanks for sharing! 😍
These are dangerously good. The brie turns all melty and the cranberry/honey combo is perfect for holiday vibes. I used store-bought cranberry and it still tasted homemade.
Is it possible to use cheddar instead of Brie? Not a fan of Brie.
Cheddar should work! It’ll have a different flavor but it’s cheese so I say go for it!
Pretty solid idea, but my phyllo dried out a bit and some squares cracked. Next time I’ll brush with melted butter before baking. Still tasty though—would make again for parties.
These are absolutely delicious! Perfect for my holiday party. Everyone loved them!
I’m so glad you enjoyed them! They’re a hit at every gathering I take them to. 😊
They look good, but I don’t know if everyone likes brie. Isn’t it kinda fancy for a party?
What is phyllo pastry?? Can I just use bread? Sounds easier…
The walnuts were an awesome touch! I did not use honey. Perfect appetizer!
Yummy!!! 😍
Looks good, but isn’t brie kinda overrated? 🤔
Totally agree! These are the best! 🍽️
I made these for my book club and shared the leftovers with my kids. They gobbled them up! 🧀❤️
These are perfect for Christmas gatherings! So easy to make and super tasty. Definitely a crowd-pleaser.
Cranberry and cheese is a weird combo! Not sure who thought of this. I wouldn’t make it again.
I think cranberry and cheese is actually a classic combo! You should give it another try with some modifications. Maybe add some spices or a different cheese? 😊
Wow. I brought these to a party and they disappeared first. Honey drizzle is a must—don’t skip it.
Yes!! I did the honey drizzle too and they were gone so fast I barely got one. The sweet/savory combo is unreal.
I tried them without the honey once… they were still good, but kinda flat, so I believe you 😅 Next time I’ll drizzle for sure.
I’m skeptical about baking brie in phyllo—felt like it might leak and make a mess. It didn’t totally fail, but a couple bites were greasy. Flavor was great, so I’ll try again with less cheese.
Pretty solid recipe! I used store-bought cranberry sauce and it still worked great. Next time I might add a tiny pinch of black pepper for extra flavor.
Glad it still worked with store-bought—honestly I’m team lazy on cranberry sauce 😄. Black pepper is a great idea too; I bet it’ll cut the sweetness nicely. I usually go light so it doesn’t overpower the brie.
I was skeptical at first, but I have to admit, they turned out great! Just beware of the phyllo – it’s easy to mess up.
Is it really worth making these? They kinda look complicated.
Too salty for me. I think I used too much Brie. Next time less cheese or experiment with cheddar maybe?
Not bad, but I think the Brie is too strong. Would be better with a milder cheese.
Maybe if you tried a different kind of cheese, you would enjoy it more. But Brie is classic, ya know!
I totally disagree! The Brie is what makes these bites special! Without it, they’re just boring.
Meh, they tasted like…nothing much. I guess I should’ve added more sauce?
These are so tasty! Made them for a party, and they disappeared fast! Everyone loved them.
These bites are fab! My kids gobbled them up in minutes!
Wow, this sounds delicious! I can’t wait to make these for my kids too!
The recipe is too complex for me. I’m not a good cook, maybe simpler ingredients next time?
Yum!
Just wow! Warm, crispy, and delicious! Will be making these again for sure!
I doubt phyllo pastry will work, it seems too hard to make. Maybe just use regular pie crust?
I’m skeptical about phyllo holding brie without it oozing. Mine leaked a bit, but honestly it just became extra tasty and messy in a good way.
Yum!! I made them for a BBQ and everyone loved them! Thanks!
Made these for a friends gathering, they vanished in minutes!!
Sounds delicious! I love how quick they are to make, definitely trying this recipe next time!
Easy peasy! Made these in no time. My kids devoured them! Will definitely make it again.
Ok.
Okay… I followed the directions and mine came out kinda salty? Also the honey drizzle made it sweet sweet. Like, not bad but I don’t think I get the hype. Maybe my cranberry sauce was way too tart.
Worst thing ever. Didnt melt. Burnt. never again. 🙁
These cranberry brie bites are amazing! I served them at a party and everyone loved them.
These were absolutely delicious! Perfect for our holiday party!
