Ingredients
  

  • 2 cups white rice long-grain or jasmine rice
  • 4 cups water for cooking rice
  • 1 teaspoon olive oil or canola oil
  • 1 bunch cilantro finely chopped
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon salt to taste

Instructions
 

  • Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.
  • In a medium saucepan, bring the water to a boil. Add the olive oil and salt, then stir in the rice. Cover, reduce the heat to low, and simmer for about 18-20 minutes until the rice is tender and the water is absorbed.
  • Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes. Then, fluff the rice with a fork.
  • Stir in the chopped cilantro and lime juice. Adjust the seasoning with more salt if necessary. Serve warm.
