Totally fair question! With 1/2 cup chimichurri for 500g potatoes, it should coat pretty well, but “chimichurri-y” really depends on how juicy/thin your sauce is and how aggressively you toss. If yours tasted good but not punchy enough, I’d absolutely try adding a bit more (start with 2–3 more tablespoons) and toss again right after roasting while they’re still hot.
