Ingredients
  

  • 500 grams baby potatoes halved
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chimichurri sauce homemade or store-bought

Instructions
 

  • Preheat your oven to 200°C (400°F).
  • In a large bowl, toss the halved baby potatoes with olive oil, salt, and black pepper until evenly coated.
  • Spread the potatoes in a single layer on a baking sheet.
  • Roast in the preheated oven for 35-40 minutes, or until golden and crispy, turning once halfway through cooking.
  • Remove the potatoes from the oven and transfer them to a serving bowl. Toss with chimichurri sauce until well coated.
  • Serve immediately while warm.
