Ingredients

Yeah Iām with youā10-12 min depends a lot on cube size and oven/grill strength. I always go by internal temp too (165°F/74°C). Otherwise you risk dry chicken.

Yogurt + lemon can curdle, yeah. Next time maybe just use yogurt and skip lemon, or use lime? Lemon is acidic and it kinda separates the protein. If yours tasted āokayā then it wasnāt ruined, just the mouthfeelāannoying though.

Iāve had that happen tooāsometimes the salt doesnāt āreadā right until it hits the grill. If your yogurt was a bit low-salt or tangy, Iād definitely increase the salt slightly and taste the marinade before adding chicken. Thick marinade is fine; it should cling.
Mine charred too much on the outside because my grill runs hot. Next time Iāll lower the heat and maybe grill a couple minutes longer more gently.
Totally makes senseātikka is notorious for burning fast if the grill runs hot. Iāve had the same issue and lowering to medium (and doing a couple extra minutes) fixes it for me. Also, make sure the chicken cubes arenāt too close together on the skewers so they cook evenly.
I only marinated for about 45 minutes (oops) and it was okay, but the flavors didnāt sink in as much. Also I ran out of ginger-garlic paste so I used minced garlic and gingerāstill tasted good though.
45 minutes is still decent! If you want more āsink inā next time, try grilling a little hotter and let it rest too. Also minced garlic/ginger worksājust chop them fine so they mix evenly.
