Ingredients
  

  • 2 cups chicken breast cubed
  • 1 head cauliflower cut into florets
  • 1 cup chicken broth low sodium
  • 1 cup Cheddar Cheese shredded
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • to taste salt
  • to taste black pepper freshly ground

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large baking dish, combine cubed chicken breast and cauliflower florets.
  • Drizzle olive oil over the chicken and cauliflower, and then sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat evenly.

      Totally get that—30+15 is quick. I’ve found it depends a lot on how small the chicken cubes are and how thick the casserole dish is. If your cauliflower was big florets, it can definitely take longer.

      Not gonna lie, I’m skeptical about cauliflower staying tender in only 45 min… but if the broth helps, ok. Also I’d probably use more cheese next time 😂 How much thyme was it—like a whole tsp?

    Pretty good but I think 30 minutes covered is too short for my oven—my cauliflower needed longer. Also, I’d rather add the cheddar for the last 10 minutes instead of 15 so it doesn’t get too browned.
