Preheat your oven to 375°F (190°C).
In a large baking dish, combine cubed chicken breast and cauliflower florets.
Drizzle olive oil over the chicken and cauliflower, and then sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat evenly.
Pour chicken broth over the mixture and cover the dish with aluminum foil.
Bake for 30 minutes, then remove the foil and sprinkle shredded cheddar cheese on top.
Bake uncovered for an additional 15 minutes, or until the chicken is cooked through and the cauliflower is tender.
Remove from the oven and let it cool for a few minutes before serving.
