Ingredients

- 1 tbsp fresh herbs thyme, or chives), such as parsley
- 1 cup milk
- 1/4 cup butter melted
- 1 egg large
Instructions

- Stir in the grated cheddar cheese, Parmesan cheese, and chopped fresh herbs.
- In another bowl, whisk together the milk, melted butter, and egg.

- Spoon the batter into a greased muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Mozzarella would probably make them super gooey! I say go for it! It’ll be like a cheese explosion.

Made these at 10pm last night (I was craving cheese muffins but we had a power failure so I waited). I’m going to buy more cheese later today so I can make more because the first batch just wasn’t enough 😅. I heat them a little before eating them and put a little bit of butter and it’s heaven, great for a winter snack. Best recipe ever!
