Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 cups grated carrots about 4 large carrots
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large eggs beaten

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • In a large bowl, combine the flour, sugar, baking powder, cinnamon, baking soda, and salt.
  • In another bowl, mix together the beaten eggs, vegetable oil, and grated carrots.
  • Add the wet ingredients to the dry ingredients and stir until combined. Do not overmix.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake in the preheated oven for about 1 hour, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes, then remove from the pan and transfer to a wire rack to cool completely.
