  • 1.5 cups all-purpose flour
  • 1 package instant pistachio pudding mix
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 3 pcs eggs
  • 1 cup chopped pistachios plus more for topping

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a large bowl, mix together the flour, instant pistachio pudding mix, sugar, baking powder, baking soda, and salt.
  • Add milk, vegetable oil, and eggs to the dry ingredients and mix until well combined.
  • Fold in the chopped pistachios.
  • Pour the batter into the prepared loaf pan and sprinkle some extra pistachios on top.
  • Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.
