Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
In a large bowl, mix together the flour, instant pistachio pudding mix, sugar, baking powder, baking soda, and salt.
Add milk, vegetable oil, and eggs to the dry ingredients and mix until well combined.
Fold in the chopped pistachios.
Pour the batter into the prepared loaf pan and sprinkle some extra pistachios on top.
Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
