Brussels Sprouts Gratin

November 7, 2025

Brussels Sprouts Gratin is the elegant, bubbling proof that this tiny cabbage has grown up. Once misunderstood and often boiled into childhood dinner resentment, Brussels sprouts have officially claimed their place in the world of indulgent side dishes. When baked beneath a creamy, garlicky sauce and topped with a golden crust of cheese and breadcrumbs, they transform into a dish that steals attention instead of begging for it.

The magic begins with roasting. While some recipes skip this step, roasting the sprouts first creates caramelized edges and a deeper, nuttier flavor that steaming could never achieve. Their natural bitterness softens, leaving behind a pleasant earthiness balanced by sweet, browned notes. Once roasted, they’re fork tender, warmed through, and slightly crisp at the edges, the perfect base for a lush sauce.

The cream sauce is where comfort enters the scene. Built from butter, garlic, and cream, it carries a whisper of nutmeg in some kitchens, a hint that quietly enhances everything without overpowering. Cheese melts into the equation, usually gruyere, sharp cheddar, or parmesan, turning the sauce silky, glossy, and rich enough to coat every curve of every sprout. This is not shy food, it is cozy, confident, and luxuriously direct.

Layering is part of the charm. Sprouts are nestled into the baking dish like little green gems, then blanketed with sauce that sinks into their crevices. Breadcrumbs finish the job on top, whether plain, buttery, or mixed with herbs, they form that irresistible crust people fight over with a serving spoon. In the oven, everything melds. The sauce bubbles, the edges darken slightly, and the top crisp turns a perfect shade of golden celebration.

The first bite tells the story clearly: tender sprouts, creamy sauce, salty cheese, buttery crunch, a blend that is equal parts comfort and refinement. It pairs beautifully with roasted meats, tomahawk steak, holiday spreads, or simply a hunk of crusty homemade bread dragged through the sauce when nobody’s watching.

Brussels Sprouts Gratin is more than a side dish, it’s redemption for every sprout that came before it, and a guarantee that this one will not be left on the plate. It’s decadent, warm, layered, and completely impossible to resist.

Too much grease and the bread crumbs didn’t stay crunchy. I prefer a different recipe I have that uses less cream.

    1. 5 stars
I totally agree with you! This recipe is way too heavy. I think adding less cream would make it so much better.

IDK about this… brussels r for salads not gratin! Tried it, but my kids wouldn’t touch it.

    1. 5 stars
Gratin or salad, I think brussels are yummy either way! My kiddos loved it when I made it. Maybe try adding some bacon?

    2. User avatar basementDweller says:

      4 stars
I totally get it! Brussels sprouts can be hit or miss, especially for kids. Maybe try a different recipe next time?

  3. 4 stars
This is the best way to eat Brussels sprouts! My family loved it. I’ll definitely make it again. Thanks for sharing!

    1. 5 stars
So glad to hear that! Brussels sprouts can be super tasty when cooked right! 😊

  4. User avatar kena.ebert48 says:

    4 stars
I’m not very good at cooking, but this was pretty easy to follow! Thanks for the clear instructions. Mine turned out nice.

  5. 3 stars
I found this recipe too rich for my taste. Maybe less cream next time? Also, I think Parmesan cheese would work better than Gruyère.

  6. User avatar yolande.greenfelder says:

    4 stars
I was skeptical about using sprouts in a gratin, but hey it worked! The garlic powder made it pop.

  7. User avatar Thufir Hawat says:

    5 stars
This was absolutely delicious! I never liked Brussels sprouts before, but this recipe changed my mind. So creamy and cheesy! 😍

  8. User avatar homer.rosenbaum51 says:

YUM! I added some bacon bits to it, what a treat! 🌟 Definitely a keeper. 😋

    1. User avatar miyoko.nicolas31 says:

      5 stars
Bacon bits? That’s genius! I never thought of adding that. I’m definitely trying this next time. 😍

  9. User avatar howard.schuppe says:

    3 stars
Brussels sprouts? Really? Just eat em raw with some dip lol. But I guess this is okay if you like baked stuff.

  10. 5 stars
This was absolutely delicious! The cheese really made it special. Will definitely make again!

  11. User avatar grant.beer1971 says:

    5 stars
Made this last night—so creamy and the top actually gets that perfect golden crunch. I added a pinch of nutmeg too, and it was chef’s kiss.

  12. User avatar Falmer Shaman says:

I don’t trust Brussels sprouts. They taste like dirt. Why would anyone bake these?

    1. 5 stars
I used to think they tasted like dirt too! But when baked with cheese and cream, they are totally different. You gotta try it! Trust me!

  13. 5 stars
So easy to make! Just make sure to not overcook the sprouts in boiling water, or they get mushy.

  14. User avatar anh.romaguera says:

    1 star
Why do people like Brussels sprouts? They taste like plants. Not for me. 😖

  15. User avatar jc.johns2017 says:

    3 stars
I tried substituting cheddar and it turned kinda greasy? Still edible, but Gruyère is probably the move. Also my bread crumbs were clumpy for some reason.

  16. User avatar avery.kertzmann2017 says:

    3 stars
Way too rich for me, not gonna lie. I could taste the butter/cream a lot. Maybe half the cream next time? Also I forgot the garlic powder and it still worked, lol.

  17. User avatar richelle.schaefer55 says:

    5 stars
So easy and fancy at the same time. I served it with steak and it looked like I tried way harder than I did.

    1. 5 stars
Totally agree—this one looks restaurant-level but doesn’t take forever. I did the same with steak and it was a hit. 😄

  18. User avatar felice.roob says:

Wow, this looks absolutely delicious! Can’t wait to try this for Thanksgiving dinner!

  19. User avatar myrl.volkman75 says:

It was good, but I think I put too much salt. Just a bit less next time for me. 3 stars.

  20. User avatar rich.landlord says:

400°F seems a little high for 25-30 minutes with cream—mine started to bubble aggressively and I had to cover it with foil halfway. Still delicious though.

  21. 1 star
I don’t understand why folks like Brussels sprouts. Yuk! I’ll stick to mac and cheese. 1 star.

  22. User avatar catharine.wilderman says:

    3 stars
The flavor is good but mine was kind of bland until I added more pepper and salt at the end. Also, 1 pound felt like not enough for my dish.

  23. 3 stars
Not bad, but I burnt my bread crumbs. Oops! Next time, I will keep an eye on them. 3 stars.

    1. User avatar len.kuphal16 says:

      4 stars
Hey, at least you still have the rest of the gratin to enjoy! Burning crumbs happens to the best of us—next time maybe try to set a timer? Good luck!

  24. User avatar gayle.larkin41 says:

    5 stars
I love this. The combo of butter + breadcrumbs gives it that restaurant vibe. Salt/pepper was spot on too. Will definitely make again for holiday meals.

  25. 5 stars
Made this tonight—so creamy and the top gets nicely golden. I used a bit more pepper than called for and it was perfect.

    1. User avatar raeann.klocko6 says:

      5 stars
Love this! The golden top is the best part—glad the extra pepper worked out. 😊

  26. User avatar gordon.bayer89 says:

    2 stars
I followed the recipe and it was meh. The top got brown but the inside was a little watery—maybe I didn’t drain enough after boiling?

  27. User avatar kirk.wintheiser51 says:

    4 stars
Really easy to make, but I dont think the Gruyère is the best choice for this. Something sharper might work better. Still tasty though! 4/5.

    1. User avatar Lumberjack says:

      5 stars
I disagree! Gruyère adds such a nice creaminess and depth. I’ve made it with sharper cheese before but it didn’t taste as good. 5/5 for me!

  28. User avatar ArabianNights says:

    2 stars
Brussels sprouts always taste kinda bitter to me, and this didn’t fully fix that. I baked a little longer hoping it would caramelize more, but not really.

  29. User avatar demetrice.jacobson says:

    5 stars
This turned out so creamy and the top got perfectly golden. I used extra Gruyère and it was a hit with everyone at dinner.

  30. User avatar X. Benedict says:

    4 stars
Not gonna lie, I’m not a fan of Brussels sprouts… but this gratin tricked me. The cheese + cream hides the bitterness well.

    1. User avatar Michael83 says:

      3 stars
Idk… 3-4 minutes in boiling water seems too short to me. Mine was still crunchy unless I roasted it longer. Also I used mozzarella (ran outta Gruyère) and it was fine but not as “grown up” lol.

    2. User avatar lizzzard says:

      5 stars
Same here—I usually skip brussels sprouts, but the cream/cheese vibe makes it way more “comfort food.” I added a little extra pepper and it came out perfect.

  31. User avatar armand.welch1 says:

    3 stars
Not gonna lie, I’m not sure what the bread crumbs do besides making it more crunchy. Still tasty though.

    1. 5 stars
Good point—crumbs mostly add that crunchy, golden top. The butter helps them toast and they also kind of soak up a little of the creamy sauce so you get more texture overall.

    2. User avatar bethanie.wolf69 says:

      3 stars
I think the bread crumbs are to thicken it? Like, they absorb the cream and make it less runny. I always add a little extra too, otherwise it’s just cheesy sprouts… but yeah crunchy is the main vibe.

  32. 3 stars
I dunno, sounds kinda fancy. Can I just use cheddar cheese instead?

  33. User avatar cornell.kessler63 says:

    2 stars
I followed the recipe but it turned out mushy. Maybe I cooked the sprouts too long? Not a fan.

    1. User avatar mathWizard says:

      4 stars
Sounds like you might have overcooked them a bit! Next time, try to keep an eye on them in the boiling water. It’s easy to do, though! Hope your next attempt goes better!

  34. 3 stars
Brussels sprouts are hit or miss for me, but the bake helps. Still, 25–30 minutes felt a bit long with my oven—top got too dark before the centers were fully bubbly.

  35. User avatar Death Hound says:

    4 stars
This was really nice, but I added some bacon bits for flavor and it was a hit! Who doesn’t love bacon?

  36. User avatar pauletta.kutch81 says:

    5 stars
Made this tonight—so rich and comforting. The Gruyère + cream combo is perfection, and the breadcrumb topping actually turns out crunchy. I’ll definitely do it again.

  37. User avatar temeka.connelly says:

    4 stars
I used cheddar because I didn’t have gruyère and it turned out fine. Not fancy, but it worked and my family ate it all.

  38. User avatar Spriggan Matron says:

    4 stars
My oven is weird so 25-30 min wasn’t enough. I had to bake almost 40 minutes to get the top actually golden. Once I fixed that, it was great.

  39. User avatar nicole.haley34 says:

    2 stars
Bruh these sprouts are supposed to be bitter? Mine were, which is probably user error lol. I’ll try again with less boiling time.

  40. User avatar Mr. Prosser says:

    5 stars
I’m a vegetarian, and this is going on my plate every week! Love it! 😊

  41. User avatar scottie.morissette2002 says:

    5 stars
Made this tonight—wow. The Gruyère + cream combo is super comforting, and the breadcrumb topping actually gives it a nice crunch. Followed the bake time and it came out perfectly bubbly.

  42. User avatar landon.bogan says:

    4 stars
Why is it always gruyère in recipes like this? Expensive cheese tax 😅 But yeah, it melts beautifully and it’s worth it occasionally.

  43. User avatar valerie.hegmann2014 says:

    2 stars
Idk brussel sprouts are just gross. But my husband ate it all so… maybe I’m wrong 😂

    1. 5 stars
Lol I get it—brussels sprouts can be a bit intimidating. But this gratin makes them way more “comfort food” than “ew.” The Gruyère + cream really helps. If your husband polished the whole dish, I’d call that evidence 😂

    2. 2 stars
Honestly I still hate brussel sprouts 😅 They taste like cabbage to me. Maybe the cheese helps but I’d rather do them crispy on a pan. Also 3-4 minutes boil seems short? Mine never get tender that fast.

  44. User avatar cornelius.hills28 says:

    5 stars
This turned out so creamy and cheesy—exactly the comfort food I wanted. The breadcrumb + butter topping got nicely golden.

    1. User avatar jacinto.jerde says:

      3 stars
Mine didn’t get that golden—more like pale. I think I didn’t toast the breadcrumbs enough? Still tasted good though. Gotta try again.

    2. 5 stars
Yes!! I love when it gets that bubbly, cheesy top. I also add a tiny pinch of nutmeg sometimes—makes it extra cozy.

  45. User avatar winford.stracke says:

    4 stars
Made it for dinner and everyone went back for seconds. Only change: I used half-and-half because that’s what I had, still tasted great.

  46. User avatar monty.kovacek71 says:

    5 stars
I followed it exactly and it came out awesome. My family went back for seconds which NEVER happens with sprouts.

  47. User avatar lea.collier1965 says:

    2 stars
Couldn’t get “just tender” in 3-4 minutes—maybe my sprouts were larger? I ended up cooking them closer to 6 minutes.

  48. 3 stars
Pretty good, but mine was a bit too salty. I think “to taste” is tricky—next time I’ll start with less salt and adjust after baking.

  49. User avatar sam.kozey says:

    4 stars
The garlic powder + pepper is a great combo. I used half-and-half since that’s what I had, and it still worked, just slightly less rich.

  50. User avatar evelina.sawayn says:

    5 stars
Made this last night—so creamy and the breadcrumb top is perfectly crunchy. I added a pinch of nutmeg because why not, and it was great.

  51. User avatar Michael83 says:

    2 stars
I don’t know why anyone would want to bake Brussels sprouts. They should be steamed, not drowned in cream. 2 stars.

    1. User avatar tanner.spencer2014 says:

      4 stars
I understand your point, but baking them like this actually brings out a whole new flavor! It’s creamy and can be a great side dish with the right meal. Give it a shot! ⭐️⭐️⭐️⭐️

  52. User avatar arlen.muller21 says:

    2 stars
I followed it exactly and honestly it was bland. I added paprika and a squeeze of lemon after baking, and then it tasted way better.

  53. User avatar alene.ziemann50 says:

    4 stars
This recipe is super easy! I loved how creamy it was. Perfect side dish for thanksgiving!

  54. User avatar lonnie.feest2017 says:

    4 stars
Honestly I was skeptical about Brussels sprouts, but the gratin vibe won me over. The sauce/bubbly cheese situation is real.

  55. User avatar sherly.graham80 says:

    5 stars
This dish was a hit at our family dinner. Everyone loved it, even the kids. THANK YOU! 5 stars for sure!

  56. User avatar lianne.davis6 says:

    5 stars
Made this for dinner and it came out super cozy—golden top, bubbly sauce, and the garlic flavor wasn’t overpowering. I used extra pepper and it was perfect.

  57. 5 stars
This recipe is amazing! I never liked Brussels sprouts until I tried this. The cheese makes all the difference. 5 stars!

  58. 2 stars
Eh, it was okay. Tried to add bacon bits, and it turned out strange… might not make again. 2 stars.

  59. 4 stars
Pretty solid gratin concept. My only tweak is I cooked the sprouts a couple minutes longer because 3-4 felt a bit underdone in my oven.

    1. User avatar Grandpa Gohan says:

      3 stars
Hmm I’m not sure about cooking them longer. I did 3-4 once and they were fine, like still a little firm. If you cook too long won’t they get mushy in the baking step? But maybe depends on the size of the sprouts.

    2. User avatar Wonko the Sane says:

      5 stars
Totally agree—sprouts timing can be super oven-dependent. I’ve had the same issue where they need a couple extra minutes to get to “just tender” without being crunchy. Love that you adjusted instead of forcing the recipe.

  60. User avatar cody.collier2010 says:

    5 stars
I was skeptical about Brussels sprouts, but the Gruyère + cream combo totally wins. The crumb topping got nice and crunchy.

    1. User avatar vanita.berge says:

      3 stars
I’m not sure about cooking them only 3-4 minutes first—mine were still a bit firm after baking. Maybe I should’ve parboiled longer or covered the dish? Either way, the breadcrumb crunch is a nice touch.

    2. User avatar elaine.pfeffer says:

      5 stars
Same here—I didn’t think Brussels sprouts could be “worth it” but this sounds like the adult version of comfort food. Gruyère + cream is basically a cheat code. 😄

  61. User avatar evie.fay2021 says:

    4 stars
This tastes kind of bland if you go light on seasoning. I know it says “to taste,” but I ended up adding more salt and black pepper and it came alive.

    1. User avatar patricia.fritsch1950 says:

      5 stars
Totally agree—mine was kinda flat at first too. I wound up going heavier on salt + pepper and it really popped. The garlic powder helps, but seasoning is everything here.

    2. 3 stars
I’m not sure I buy that—mine tasted fine with the exact amounts. Maybe your Gruyère was less salty? Also I always forget the “salted water” step lol so that could be why.

  62. 5 stars
Made this last night—so creamy and cheesy. I added a squeeze of lemon at the end and it really brightened everything up. 10/10 side dish.

  63. 5 stars
Made this tonight—so creamy and cheesy! The breadcrumb topping got nice and golden. I added a pinch of nutmeg too, and it was perfect.

  64. 4 stars
I’m skeptical about Brussels sprouts getting “better” in the oven, but the cream + cheese wins. Mine turned out a little too soft though—maybe I boiled them too long.

  65. User avatar Random Dent says:

    5 stars
So easy! Literally mix, layer, bake. I love when dinner is not a whole project.

  66. User avatar shakia.towne37 says:

    4 stars
Pretty tasty, but I’d cut the garlic powder a bit. Mine tasted a little too strong for my liking, and I’m not even a garlic-hater. Still, the texture was great.

  67. User avatar Grunthos the Flatulent says:

    3 stars
I think I messed up the sauce—mine wasn’t very “bubbly” at all. Maybe my oven runs cold? Also, I added the salt before draining the sprouts and it ended up a tad salty.

  68. User avatar ayesha.schneider says:

    5 stars
Made this for dinner and wow—super comforting. The top gets perfectly golden and the cream turns into this bubbly sauce. I only added an extra pinch of pepper. 10/10.

  69. 3 stars
Ok but—400°F seems high for 25 minutes? My top browned fast and the inside felt slightly watery. Maybe I should cover it with foil halfway.

  70. User avatar tonette.adams24 says:

    4 stars
I used cheddar instead of Gruyère and it was still good, though not as fancy. The sauce got all thick after cooling, which I liked.

  71. User avatar chad.howell78 says:

    5 stars
This is the first time my brussels sprouts didn’t taste bitter. I’ll make again for sure—10/10 side dish.

    1. User avatar avelina.kuphal2014 says:

      5 stars
Yes! Brussels sprouts can be so hit-or-miss—this sounds like the cream + cheese combo really fixes the bitterness. Definitely trying it.

  72. User avatar earnest.swift6 says:

    2 stars
only 400 degrees?? mine got burnt on top but still hard inside lol. maybe my oven runs hot—still edible though.

    1. User avatar Werewolf says:

      4 stars
Mine also does the burnt-on-top thing… I think my broiler sneaks in somehow? 😅 I’d try lowering to 375 and baking a bit longer so it cooks through without turning charcoal.

    2. 5 stars
I’ve had that happen too—400°F can be a sweet spot for some ovens, but others blast the top fast. Next time I’ll cover loosely with foil for the first ~15 minutes, then uncover to brown.

  73. User avatar drema.welch90 says:

    3 stars
Not sure about the garlic powder—tastes a little flat to me, like it needs fresh garlic. Also, I felt it was a bit salty even with 1 tsp “to taste.”

  74. User avatar dee.blanda says:

    4 stars
I’m not usually a Brussels sprouts person, but the garlic powder and Gruyère really saved it. Next time I’ll roast the sprouts a bit longer for more browning.

  75. User avatar don.corwin10 says:

    3 stars
The garlic powder flavor was strong (in a good way), but I’d reduce salt next time. Also mine bubbled over a bit—baking dish should be deeper.

    1. User avatar Gail Andrews says:

      4 stars
Totally agree about the salt—mine tasted a little too salty too. I think next time I’ll do 3/4 tsp and maybe skip salting at all until I taste the cream/cheese.

  76. 4 stars
I’m not usually a Brussels sprouts fan, but this gratin won me over. 3-4 minutes blanching was exactly right—still had a little bite.

    1. User avatar lemuel.muller55 says:

      5 stars
Same here—I usually hate sprouts. The blanching timing is everything. I did 4 min and it stayed crisp-tender instead of mushy. The Gruyère + crumbs top was so good.

    2. User avatar elden.stehr19 says:

      3 stars
I’m skeptical about the 3-4 minutes thing—my sprouts always take longer. But I guess it depends how big they are. Might try halving them smaller next time. Also, do you cover it while baking or just leave it open?

  77. User avatar Pizpot Gargravarr says:

    5 stars
I added a squeeze of lemon on top and it tasted restaurant-level. Also, the crumbs stayed crunchy which I love.

  78. 4 stars
“Gratin” is supposed to be more browning, right? Mine was tasty but not super gratiny. Still, will make again.

  79. User avatar Torchbugs says:

    2 stars
400°F for 25-30 min? Mine browned too fast and the middle was still kinda firm. I think I should cover with foil halfway.

The garlic powder made it taste a little harsh to me—maybe my bottle was stronger? Still good though, just not my favorite flavor balance.

Honestly, I was skeptical about the cream + bread crumbs combo, but wow. The texture was creamy inside and crunchy on top. Will make again for sure.

Brussels sprouts in a gratin sounds like a punishment 😅 Still, I’ll admit it smells amazing while baking. The top got golden but the inside was kinda soft.

Pretty good, but 3-4 minutes boiling felt a tiny bit short—my sprouts were still a little firm. Next time I’ll go closer to 5.

“Just tender” is vague lol. Also 1 cup cream seems like a lot—ended up kinda watery for me. Wouldn’t change much though? maybe add more cheese next time.

  86. 4 stars
Pretty good. I think 3-4 minutes parboil is a little short though; mine were still firm after baking. Next time I’ll cook them 1-2 minutes longer.

I followed the recipe pretty closely. The flavor is great, but mine came out a bit watery at the edges. Next time I’ll probably reduce the cream slightly or bake a few minutes longer.

So easy and feels fancy for weeknights. I used Gruyère with a little Emmental mix because that’s what was in my fridge.

    1. User avatar mathWizard says:

      5 stars
Yes! Mixing cheeses sounds perfect—Gruyère + a little Emmental is exactly the kind of fridge-friendly upgrade that makes it taste extra rich. Mine always turns out bubbly and golden too. 😄

I’m not usually a Brussels sprouts fan, but the garlic powder + buttery crumbs made it actually enjoyable. Would make again.

Followed the steps exactly and my cheese never got “bubbly,” it just stayed kinda greasy. Maybe my oven runs hot? Or the dish was too shallow.

    1. User avatar karri.cormier says:

      4 stars
Happens to me too sometimes. I’d double-check that the sprouts were drained well after boiling—extra water can make it feel greasy instead of creamy/bubbly. Next time try patting them a bit dry and don’t skimp on the breadcrumb/butter layer.

    2. User avatar deangelo.hackett70 says:

      4 stars
This sounds like a combo of temperature + bake time. If your oven runs hot/cool, the “bubbly” stage changes a lot—maybe bake closer to 35 min and use the deepest middle rack. Also your dish might be too shallow or too large so the cream evaporates faster and won’t bubble up under the cheese.

I tried following it exactly, but I think I overcooked the sprouts (3-4 min maybe too much for my pot). The texture was softer than I wanted. Otherwise, cheesy smell was amazing.

Couldn’t get it to brown the way I wanted. I left it 35 minutes and it was still pale. Maybe my oven runs cold or I used low-fat cheese.

  93. User avatar hilda.beier93 says:

400°F is too hot—my top burned before the inside got bubbly. Would try 375°F next time and cover with foil if needed.

  94. User avatar lucien.stoltenberg says:

I followed the recipe but mine came out a bit watery. Next time I think I’ll dry the sprouts more after boiling or bake a few minutes longer.

  95. 3 stars
Way too rich for me, not gonna lie. The heavy cream is doing a lot. Still tasty though, just smaller portions needed.

    1. 4 stars
Maybe just do smaller servings like you said. I find gratin is best as a side anyway. Next time I’ll use more sprouts and less cream.

    2. User avatar eden.jaskolski45 says:

Totally get it—1 cup heavy cream is *a lot* for brussels sprouts. Cutting the cream in half (or using half-and-half) keeps it creamy without feeling heavy.

  96. User avatar Paula Nancy Millstone Jennings says:

Not gonna lie, Brussels sprouts can be hit or miss, but this gratin saved them. I used half-and-half instead of heavy cream and it still worked. Next time I’ll use a bit more cheese for sure.

I love hearing this—brussels are such a gamble. I’m definitely trying it with the same cheese + crumb topping. More cheese next time sounds perfect 😄

    2. 3 stars
Hm, I’m not convinced about the cream swap. Half-and-half might work, but 25-30 min at 400°F feels like it could dry out the sprouts. What size dish did you use?

  97. User avatar karrie.kutch2003 says:

Not bad, but I felt like it needed more garlic—like, at least double the garlic powder. Also would’ve liked a little crunch, so I toasted the bread crumbs first.

    1. User avatar carson.quitzon2011 says:

      4 stars
I liked it as-is tbh. The garlic powder was enough for me, but I do think the crumbs could use some toasting. Also I accidentally cooked the sprouts like 10 mins once and it still tasted fine 😅 maybe crunch helps even more then.

    2. 5 stars
Totally agree on the garlic—1 tsp garlic powder feels a little timid. Doubling it would probably make it pop, especially with all that Gruyère. Love the idea of toasting the bread crumbs too for extra crunch.

Not gonna lie, I’m not usually a brussels sprouts fan, but this gratin convinced me. The Gruyère flavor is the star.

Pretty good, but mine was a little bland until I added extra pepper and a pinch more garlic. Next time I’d probably taste the sauce before baking.

    1. User avatar karina.collins93 says:

Totally agree—these gratins can use a little extra punch. I also taste the sauce once it’s mixed and adjust pepper/garlic before baking.

Really good, but my Brussels sprouts took closer to 6-7 minutes to get “just tender” in my pot. Next time I’ll under-boil a bit more—otherwise it was still tasty.

    1. User avatar rashad.gutmann50 says:

      5 stars
Good call on the timing! Mine usually runs a little long too depending on how thick the halves are—6–7 min makes sense for “just tender.” Glad it still tasted great.

    2. User avatar danilo.langworth says:

      3 stars
Wait 3-4 min seems too fast? I’d be afraid they’d be raw inside. Next time I’ll do your under-boil idea—also I didn’t know you could “just tender” in that short time lol.

Brussels sprouts in a gratin form is a genius idea. My picky eater even asked for seconds. I used Jarlsberg instead of Gruyère and it still worked well.

  102. 2 stars
Honestly? I don’t get the hype. Too rich for me and the texture is meh. Could be just my sprouts, but I’d rather roast them plain with olive oil.

Bread crumbs + melted butter makes a nice crust. However I wish there was a step about mixing the cream with cheese first—mine stayed a little separated.

    1. 5 stars
Totally agree on the crumb + butter crust—mine always turns out nicely golden. For the separation, I wonder if your cream and cheese just needed a little more time/bigger heat contact before baking. Next time I might warm the cream slightly and stir it with a bit of the cheese first, then top the rest.

    2. 3 stars
Mine did that “separated” thing too 😅 I think the cream sits on the bottom and the cheese doesn’t fully melt through. Also I followed the steps exactly—so yeah, adding a cream+cheese mix step could help. Or maybe I used pre-shredded Gruyère (which is probably not real Gruyère). Still tasted fine though.

Pretty tasty, but mine came out a little watery even after baking 30 min. I think next time I’ll cook the sprouts a minute longer or use less cream.

Brussels sprouts are gross but I try any new recipe. This one was ok… like edible? The cheese helped.
