Artichokes Roasted with Honey and Lemon

September 11, 2025

Artichokes roasted with honey and lemon are a beautiful balance of earthy, tangy, and sweet flavors, turning a simple vegetable into an elegant centerpiece. Artichokes on their own have a subtle nuttiness and tender heart that make them stand out, but when paired with bright citrus and a drizzle of honey, they transform into something extraordinary. Roasting deepens their natural flavor, softening the leaves and creating slightly crisp edges that contrast with the creamy interior.

The process of roasting artichokes allows the lemon to caramelize just enough, mellowing its sharp acidity while still delivering a refreshing zing. Honey adds a gentle sweetness that doesn’t overwhelm but rather highlights the artichoke’s natural complexity. Together, the flavors form a trio that feels both rustic and refined, making this dish suitable for casual dinners or more formal gatherings.

What makes roasted artichokes so special is the way they invite you to eat slowly, leaf by leaf, savoring the layered flavors with every pull. The honey glaze clings lightly to the leaves, offering a hint of sweetness in each bite, while the lemon brightens the palate and prevents the dish from feeling too heavy. Once you reach the artichoke heart, the most tender and prized part, the flavors come together perfectly: the creaminess of the heart, the golden roast notes, and the lingering touch of citrus and honey.

This dish is versatile and pairs well with a variety of mains. It can stand on its own as a starter, serve as a sophisticated side for roasted chicken or fried fish, or complement grain-based dishes like couscous or farro. A sprinkle of sea salt or fresh herbs such as thyme or rosemary can enhance the flavors even further, adding layers of aroma and depth.

Artichokes roasted with honey and lemon feel celebratory without being complicated. They showcase how a few simple ingredients can elevate a vegetable into a dish that is both comforting and gourmet. Whether shared at a family table or presented as part of a dinner spread, they bring warmth, brightness, and a touch of sweetness that lingers long after the last bite.

I dunno about the honey and lemon combo here, sounds weird. But who am I to judge?

Good recipe but next time I will add garlic for some extra flavor, ya know?

Roasting them for 30 minutes? I think that’s too long, mine got burnt! 😩

    1. 3 stars
30 mins sounds just right to me! Maybe your oven is too hot or smth? 🔥

    2. User avatar magdalen.gulgowski says:

      4 stars
I’ve never burnt them! Maybe try checking them at 20 mins next time? 🤔

  5. User avatar dylan.schneider78 says:

I have never cooked artichokes before. It was easy, but I think I prefer them dipped in mayo.

    1. 5 stars
Artichokes can be a bit tricky at first, but dipping them in mayo is a classic move! Glad you enjoyed it. 😊

  6. User avatar connie.crona says:

    2 stars
I tried making these but I think I cooked them too long. They were just mushy. 🙁

  7. User avatar keith.dach72 says:

I tried this recipe last night and it was amazing too! The honey adds such a nice touch. Thanks for sharing!

  8. User avatar jerlene.williamson75 says:

I tried this and the artichokes were kinda tough. Maybe I did something wrong? 🤔

  9. User avatar evan.spinka43 says:

I don’t like artichokes. Too weird for me. But whatever floats your boat! 😐

    1. 3 stars
I get it! Artichokes are kinda funky. But this recipe sounds tasty. Maybe try it with something else? 🤔

    2. 4 stars
Weird? Nah! They are just unique! Give them a try, you might love them with honey and lemon. Trust me! 😄

Nothin’ beats oven roasted veggies. I added some garlic cause why not? DELICIOUS!

    1. User avatar alejandro.mann50 says:

      5 stars
Sounds yum! I’ll definitely try the garlic thing next time!

  11. 5 stars
Yum! Made these for dinner and even my kids liked them! Wow!

  12. 5 stars
These artichokes were so good! The honey and lemon combo is genius!

    1. 5 stars
I never thought of using honey on artichokes! That sounds really unique. Can’t wait to try it.

  13. User avatar waldo.ernser33 says:

Not gonna lie, I expected more “caramelized” flavor. They were tender, yes, but I didn’t get much browning on mine—maybe my oven runs cool?

    1. 4 stars
Totally get that—honey can go glossy but not always “deep caramel” at 400°F. I’ve had better browning when I crank it closer to 425–450°F and roast a few minutes longer, and I also make sure the cut sides are well coated and spaced out (not crowded). If your oven runs cool, that would explain it—next time you could bump the temp or check with a toothpick a bit earlier and then broil for 1–2 minutes at the end.

  14. User avatar alonso.howe2011 says:

    3 stars
I liked the flavor, but 1 tablespoon honey felt a bit too sweet for me. Next time I’ll cut it down or add more lemon zest to balance. Overall solid though.

    1. 5 stars
Totally get that—honey can overpower lemon sometimes. I usually start with 2 tsp and work up, and I’m with you on adding extra zest if it tastes flat.

    2. User avatar lucius.oconnell88 says:

      3 stars
Hmm, I felt the opposite—1 tbsp was perfect for me. Maybe my lemons were super tart? Either way, great idea to tweak it next time. Also, 30 min was enough, mine got kinda charred though lol.

  15. User avatar floyd.corkery2001 says:

    4 stars
Honey + lemon is always good, but I think 1 tsp salt is kinda low. I used more and it tasted way better.

  16. 3 stars
Easy to make & looked nice on the plate. But not sure I’d make it again.

    1. User avatar len.walsh1996 says:

      4 stars
I totally get where you’re coming from! It was pretty but could use more flavor. Maybe try adding some herbs next time?

    2. User avatar garry.moen1999 says:

      2 stars
This recipe seems kinda weird to me. Artichokes with honey? Sounds gross honestly.

  17. User avatar roderick.pacocha9 says:

    5 stars
This recipe is amazing! The honey and lemon combo really works with artichokes.

  18. User avatar omer.smitham says:

    4 stars
Good but needed more honey. Next time, I will add twice as much!!

    1. User avatar teddy.schinner45 says:

      5 stars
I totally agree! More honey would make it better. Can’t wait to try it your way next time!

  19. User avatar cyril.rempel69 says:

    4 stars
Quick and easy! I threw these in the oven and they turned out perfect. Will make again!

  20. User avatar monroe.weissnat9 says:

    2 stars
I don’t know, I think the honey was too much. Artichokes are already unique, and this made them taste… odd?

    1. User avatar jaime.goyette99 says:

      3 stars
Maybe try cuttin the honey in half? I like my artichokes savory too. But who knows, it might just be me!

    2. User avatar curtis.connelly says:

      5 stars
I totally disagree! The honey adds a nice sweetness that balances the artichokes. It’s a perfect combo! 🍯

  21. User avatar abel.ritchie42 says:

    5 stars
Super easy and honestly pretty impressive for a side dish. I just wish the recipe said how to tell when they’re fully cleaned.

    1. User avatar Frost Troll says:

      4 stars
I think “tender” at 30 min means they’re ready—mine were kinda hard until I roasted longer, like 40. Also cleaning tip: if you can scrape the fuzzy part off with a spoon, you’re good. Not gonna lie, that honey-lemon is addicting.

    2. User avatar leticia.bradtke1954 says:

      5 stars
Glad you liked it! For “fully cleaned,” I usually pull out all the fuzzy choke plus any tough inner leaves until the center looks pale and smooth-ish. If you still see prickly fuzz, it’s not done yet.

  22. User avatar truman.ward14 says:

    4 stars
Decent recipe! I added garlic because who doesn’t love garlic? 🧄

  23. User avatar nathan.green says:

    4 stars
I followed it exactly but my artichokes weren’t really “tender” at 30 min—maybe my oven runs cold? I added 10 more minutes and it fixed it.

  24. User avatar anna.mills85 says:

    2 stars
I don’t see how honey belongs on veggies. Sounds weird.

  25. User avatar waldo.mitchell15 says:

    4 stars
Tried this for the first time, don’t know anything about cooking. but it was easy! they looked fancy too, I felt like a chef! 🍽️

  26. User avatar lou.sawayn1971 says:

I used a different type of oil and it still worked out great! Yummy!

    1. User avatar loralee.windler2020 says:

      3 stars
Different oil? Really? I don’t know if I trust that… olive oil is key! But if it worked for you, cool!

    2. User avatar ozella.runte says:

      4 stars
That’s awesome! I’ve been wanting to try swapping the oil. Did you use a flavored one?

  27. 1 star
Artichoke? More like artichoke off. Not my favorite.

  28. User avatar suspiciousCommentator says:

    1 star
Artichokes are just so much work. Like, who has the time? Meh…

  29. User avatar asa.bailey31 says:

    3 stars
Tasted good but my kids wouldn’t eat them. They said they looked like aliens.

    1. User avatar charley.mcclure40 says:

      3 stars
If they think they look like aliens, they’re just being silly. They taste good tho!

    2. User avatar Tom Bombadil says:

      4 stars
Kids can be so picky! Maybe try calling them ‘alien snacks’ to make it fun? 😂

  30. 1 star
Huh? Why would you roast them? Boilin them is way better. This seems wrong.

    1. 4 stars
I think roasting gives them a nice flavor. Boiling just makes them mushy! You should try it.

    2. User avatar millard.walsh says:

      3 stars
I dunno, boiling them sounds kinda boring. Roasting sounds interesting!

  31. 2 stars
I tried this but it turned out kinda bland. Maybe I didn’t add enough salt?

  32. User avatar Arthur Philip Deodat says:

    5 stars
These came out so tender! The honey-lemon combo is actually perfect—bright but still caramel-y. I added a pinch of chili flakes too and it was chef’s kiss.

  33. User avatar evie.bartell98 says:

    5 stars
This was surprisingly delicious! Never thought honey and lemon would go well with artichokes, but wow! Definitely making this again.

    1. User avatar Patrina Reichel says:

      5 stars
I was skeptical at first too, but I’m so glad you shared your experience! This combo is a game changer. Can’t wait to try it myself!

  34. 5 stars
Just made this for dinner, and my kids actually ate their veggies! Miracle recipe! 😂

  35. User avatar glynis.green says:

    5 stars
This was a delightful way to prepare artichokes! I loved the sweetness from the honey paired with the acidity of the lemon.

    1. User avatar Frostbite Spider says:

      5 stars
That sounds amazing! I love artichokes and I’ve never thought of roasting them like this. I can’t wait to try it out!

    2. User avatar yong.mclaughlin says:

      2 stars
Honey and lemon? Are you sure that combo works? Sounds kinda strange to me… I dunno about this recipe.

  36. User avatar timothy.bergstrom2020 says:

    3 stars
Not bad, but mine weren’t really “caramelized” after 30 minutes. Also I think I under-seasoned—salt really matters with artichokes, so don’t be shy.

  37. User avatar kyra.kilback33 says:

    4 stars
Wow, who knew roasting artichokes could be so easy?? Super tasty, thanks for sharing!

    1. User avatar avery.koss17 says:

Yummm! Great side dish. I ate them right off the tray 😅

  39. User avatar jeremiah.bednar says:

Artichokes are kinda weird don’t ya think? Idk about this honey bit🤔.

    1. User avatar reagan.dare97 says:

      3 stars
Weird? Nah, they just need the right seasoning! Plus honey isn’t that odd in dishes. Bet it’ll surprise you! 🤷‍♂️

    2. User avatar frederic.moen says:

      4 stars
I get what you mean! Artichokes are definitely an acquired taste, but trust me, the honey really balances the flavor. Give it a shot! 😊

  40. User avatar chantel.wolff18 says:

    4 stars
Honey on artichokes sounds wrong… but honestly it works. I wouldn’t use all the honey next time (personal taste), but the caramelization is real.

  41. User avatar sheba.cummerata76 says:

    4 stars
I’ve never cooked artichokes before and was a little scared. But this was super easy! Thanks for the recipe!

  42. User avatar doloris.purdy1988 says:

    5 stars
Wow, restaurant-level vibes. The edges got perfect golden-brown. I served it with fish and everyone cleaned their plates.

  43. User avatar pearly.smitham78 says:

    5 stars
So easy. 400°F for 30 min. Done. Everyone asked what the sweet part was. 😅

  44. User avatar Spriggan Earth Mother says:

    5 stars
Yummy! I liked it very much, my family was impressed, too! Everyone should try this!

  45. 2 stars
Meh, I thought they would taste better. Just tasted like soggy green things.

  46. User avatar Mrs. Julietta Beahan says:

    3 stars
honey lemon artichokes sounds weird but i ate it and it was pretty good ngl

  47. User avatar Shee Vaneer says:

    4 stars
I was skeptical about honey on artichokes, but it turned out surprisingly tasty. Next time I’ll use a slightly bigger lemon because mine tasted a bit mild.

  48. User avatar elwood.frami82 says:

    3 stars
Artichokes? Isn’t that a vegetable? Why put honey on it? 🤔

  49. 5 stars
So simple yet so yummy! I added some garlic and it was a game changer. Will make again!

  50. User avatar orville.glover1990 says:

    4 stars
Easy to follow and the flavor is really good. Mine took closer to 35–40 minutes to get properly caramelized, but that might be my oven. Still worth it.

    1. 5 stars
Totally agree—this one’s super doable. I also had to roast a bit longer to get that caramelized look, so 35–40 mins makes sense if your oven runs cool.

  51. User avatar morris.hane84 says:

    4 stars
Easy and bright. I didn’t expect the lemon zest to matter as much, but it really does. Next time I might add a pinch of chili flakes for some heat.

  52. User avatar carmine.welch80 says:

    5 stars
Best dish I’ve made in a long time! Will make it for my dinner party! 😍

  53. User avatar mertie.monahan says:

    3 stars
Is it really necessary to roast for that long? I like my veg crunchy!

    1. 4 stars
I totally get you! I usually take them out sooner for that crunch too. Just gotta watch them closely, right?

  54. User avatar rochell.shields40 says:

    4 stars
Got my artichokes from the frozen aisle. Do I still roast them like fresh ones?

  55. 4 stars
Honestly, honey on artichokes sounds weird. I was skeptical, but I ate my words. The caramelized edges are legit. Will make again, even if it’s a “honey weirdness” situation.

  56. User avatar Barrett Gottlieb III says:

    3 stars
Followed the recipe but they burnt a little. Keep an eye out during roasting.

    1. 4 stars
Yeah, I made the same mistake! They can definitely burn if you don’t keep checking. I ended up salvaging mine by adding some broth. Might help next time!

    2. User avatar jeffry.walker79 says:

      3 stars
I dunno, maybe it was just too hot? Oven temp can be weird. Did you try using a timer?

  57. 1 star
Artichokes? Really? Sounds fancy but I don’t have time for that. Just boil ’em!

    1. User avatar ShanksOnePiece says:

      4 stars
Boiling’s easy, but you might be missing out on real flavor! Roasting gives a nice caramelization, trust me!

    2. User avatar jacinto.morissette says:

      3 stars
Artichokes are too complicated for me, I stick to basics. You do you!

  58. User avatar carylon.smith19 says:

    4 stars
I love artichokes, so I was excited. The only thing I’d change is using less salt—one teaspoon is a lot if your honey is already salty? Not sure, just my take.

  59. User avatar raye.tromp43 says:

    3 stars
I followed it exactly and it was kinda bland until I added more salt. If you’re using big artichokes, watch the cooking time.

  60. User avatar Xochitl Conroy says:

    5 stars
These came out so caramelized! The honey-lemon combo is surprisingly bright and sweet. I’ll definitely make again—maybe add a little chili next time.

  61. User avatar elinore.schaden54 says:

    2 stars
I don’t know… the honey burned a little before the artichokes were tender. Maybe my baking sheet was too close to the top rack. Flavor was okay though.

  62. User avatar agustin.haag1995 says:

    5 stars
This recipe is amazing! The honey and lemon combo is perfection. My family loved it!

  63. User avatar julienne.nitzsche57 says:

    3 stars
Tasted good but was a bit too sweet for my liking. Maybe cut the honey in half?

  64. User avatar halflife4 says:

    4 stars
Pretty good, but my artichokes took closer to 40 minutes. Still tasty though, and the lemon zest smell while roasting was awesome.

  65. User avatar jeffery.franecki42 says:

    5 stars
Tried this last night—so good. The honey + lemon combo actually caramelized nicely, and the artichokes were tender without getting mushy. I used a little extra pepper and it was perfect.

    1. User avatar jed.abernathy says:

      5 stars
Yes! That honey + lemon combo is magic. I’m glad yours caramelized too—mine did that same golden thing once I let them roast the full time.

  66. User avatar NAFO.SUPREMACY says:

    5 stars
These came out so caramelized! The honey-lemon combo is surprisingly bright. I roasted mine like the recipe said and they were tender by 30 minutes.

    1. User avatar Murbella says:

      4 stars
Mine were caramelized too but I swear it took closer to 40 minutes for the centers to feel tender. Also I used more honey (like 2 tbsp) and it got a little too sticky—still tasty though.

    2. User avatar mason.trantow2009 says:

      5 stars
Yes! I did this last week and the honey-lemon really wakes them up. Mine also got nicely caramelized around the edges after the full 30 mins—so good with a squeeze of extra lemon at the end.

  67. User avatar Bowerick Wowbagger says:

    4 stars
Cheap and good. I dont even like artichokes much but these are kinda addictive, in a lemony way.

  68. User avatar mario.boyle says:

    3 stars
Mine didn’t caramelize much—more like glossy. I think I probably should’ve dried the artichokes more before drizzling the oil. The taste was still good, just not that “browned” look.

    1. User avatar Frost Atronach says:

      5 stars
That makes total sense—if they’re a bit wet, the honey/lemon kind of turns glossy instead of browning. Next time I’d pat the artichokes really dry and make sure the oven is fully preheated. Also, you can try roasting a few extra minutes (or broiling for 1–2) to get more color.

  69. User avatar The Allitnils says:

    5 stars
Tried this tonight—so good. The honey + lemon combo makes the edges really caramelize. I used a bit more pepper than suggested and it was perfect.

  70. User avatar Draugr Wight says:

    4 stars
Pretty straightforward and it smelled amazing while roasting. Mine took closer to 40 minutes to get really tender, but that might be my oven or the size of the chokes. Still delicious.

    1. User avatar synthia.weimann25 says:

      5 stars
Yes!! The honey-lemon combo is so good. And 40 minutes makes total sense—artichokes vary a lot in size. I usually check tenderness with a knife near the base.
