There’s something undeniably comforting about the combination of crispy bacon, tender spinach, and a warm tangy dressing. A warm spinach bacon salad is the kind of dish that feels both hearty and fresh — it’s rich enough to stand on its own but light enough to serve as a starter or side. This classic salad has roots in traditional American cooking, where hot bacon drippings were often turned into a dressing and poured directly over greens, slightly wilting them for maximum flavor.
The beauty of this salad is its balance. Fresh baby spinach provides a delicate, earthy base, while crumbled bacon adds savory crunch. Red onions or shallots lend a slight bite, and the warm dressing — usually made from rendered bacon fat, a splash of vinegar, a touch of Dijon mustard, and a hint of sweetness — brings it all together. Some versions include a sliced hard-boiled egg or mushrooms for added protein and texture, making the dish more filling.
The warmth of the dressing softens the spinach just enough to take off the raw edge without turning it soggy, creating a lovely contrast in textures and temperatures. It’s the kind of dish that works year-round but especially shines in cooler months when you want your salad to feel a bit more substantial.
Modern spins might swap in turkey bacon or add toasted nuts, blue cheese crumbles, or even sliced apples for a sweet crunch. However you make it, the heart of the warm spinach bacon salad lies in the simple pleasure of real, satisfying ingredients.
Whether served alongside a steak, with grilled chicken, or as a stand-alone lunch, this salad proves that comfort food doesn’t have to be heavy. It’s fresh, warm, and packed with bold flavor — a timeless combination that never goes out of style.

Ingredients
- 4 slices bacon cut into small pieces
- 4 cups baby spinach washed and dried
- 1 small red onion thinly sliced
- 2 tablespoons red wine vinegar or to taste
- 1 tablespoon olive oil extra virgin
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt or to taste
- 1/4 teaspoon black pepper freshly ground, or to taste
Instructions
- In a large skillet over medium heat, cook the bacon until crispy. Remove bacon with a slotted spoon, and drain on paper towels.
- Pour out most of the bacon fat from the skillet, leaving about 1 tablespoon.
- Add the red onion to the skillet and sauté until translucent, about 3 minutes.
- Whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and pepper in a small bowl.
- Place the spinach in a large bowl. Immediately pour the warm onion mixture over the spinach and toss gently to slightly wilt the leaves.
- Drizzle the dressing over the spinach and toss gently to combine. Top with the cooked bacon pieces.
- Serve immediately while warm.

This salad is the bomb! I love the warm dressing, it made the spinach so tasty.
Wow!! I never thought spinach could taste this good! My kids even ate it. Will make again!
Nothing but bacon and bubblegum in this?? Not a fan of spinach anyway.
Who puts bacon and bubblegum together? That sounds so weird! And spinach isn’t even that bad if cooked right.
I think you might be missing out! Bacon and spinach together are super tasty. Give it a try, maybe? 🤷♂️
What’s the point of using fancy vinegar? I’ll just use regular ol’ white vinegar next time lol.
Simple ingredients, great taste. A bit salty though for my liking.
I tried this recipe but it just didn’t work for me. Bacon went all soggy and the dressing was too strong.
Spinach? really? thought this was a pasta dish… guess I’ll just stick to pizza.
Yummm, the crispy bacon really makes this salad worth it! Highly recommend it.
I am not that good in the kitchen, but this was easy to follow. Thanks for the recipe!
Bacon, spinach… not bad, but my kids didn’t eat it. They said it was ‘too green.’ 🤷♂️
Absolutely love this salad! The warm bacon really brings everything together. ⭐⭐⭐⭐⭐
I was skeptical about “warm salad,” but honestly it works. Tossing the spinach right away is key—otherwise it goes from wilted to sad.
Why do people put bacon on everything? It’s too salty and ruins the healthy vibe. ⭐
It was okay, but I think I added too much vinegar. Next time, less vinegar for me. ⭐⭐⭐
Yeah, vinegar can be tricky! I usually go easy on it too. Glad you tried it though! ⭐⭐⭐
Bacon, spinach… what’s next? Rabbit food? No thanks. Just not for me.
This is basically a BLT without the bread. I get it, but I don’t see why it needs to be “warm.” Cold spinach would be fine. Still ate it, so…
This is such a cozy salad—warm spinach with crispy bacon is a combo I never get tired of. The Dijon + red wine vinegar dressing tastes really balanced.
Easy peasy! I made this in less than 20 minutes. Perfect for a quick lunch! 🌟
I didn’t have red wine vinegar so I used apple cider vinegar and it turned out fine. Also, is bacon necessary? Wasn’t that a bit too much for a salad?
I’m skeptical about putting dressing on immediately—mine got kinda watery. Maybe my spinach wasn’t fully dry?
Not bad, but mine was a little too salty. Next time I’ll start with 1/8 tsp salt and adjust. Also I kept forgetting to whisk the dressing fully so the mustard clumps.
Totally agree—bacon can already be salty. I usually start with less salt too, like you said (1/8 tsp), and then tweak after tossing. The mustard clumps are real if you don’t whisk long enough 😅
Maybe you should use less vinegar? I always just dump everything in the bowl and stir, never have clumps… unless the mustard is old. Also, I think 4 cups spinach is too much for 1 tbsp oil—needs more liquid.
It’s good, but honestly, I expected more. I think a little feta could’ve made it better. Might try that next time.
I totally agree! Feta would really add some zing to it. Maybe you could also try some walnuts for crunch!
Feta? Really? I thought this salad was perfect as it is. Bacon and spinach are like best friends in a bowl! But hey, to each their own.
I tried it but mine came out a little sharp from the vinegar. Next time I’ll start with less vinegar and adjust. The texture was still good though.
Bacon dressing on greens is my weakness 😂 Will definitely repeat for brunch or when I want something fast but not boring.
Confession: I used balsamic instead of red wine vinegar because that’s what I had. It still tasted good, just different. Could be more sour if you use the recommended vinegar, but overall would make again.
Pretty tasty, but I think 4 cups spinach is a lot for just 1 tbsp olive oil. Next time I’ll bump the dressing a bit.
I tried it and it was bland until I added extra pepper and salt. Once I fixed that, it was fine. The instructions are straightforward, though.
Bacon and spinach? Sounds weird but it actually worked! Surprised! ⭐⭐⭐
Not sure about putting bacon in salad… sounds heavy. I like my greens light. 🤔
I was skeptical too, but it really is a great combo! Who knew bacon could make spinach taste so good? 🍴
Didn’t have Dijon mustard, used regular mustard and it turned out fine. ⭐⭐⭐
Made it tonight and it actually worked like the recipe said—spinach wilted just enough. I used a little extra Dijon because I like it punchy.
Quick and delicious! Perfect for weeknight dinner! 🥗❤️ ⭐⭐⭐⭐⭐
BEST SALAD EVER. Seriously, you gotta try it. I never liked spinach before! 🥗❤️
This was surprisingly good—warm spinach + crispy bacon is such a nice combo. I used a little extra Dijon and it tasted super bright.
Made this for dinner tonight and it was surprisingly cozy. Crispy bacon + slightly wilted spinach is such a good combo. I added a tiny pinch of sugar to the vinegar and it helped balance the tang.
Cozy is the word 😄 I love the warm onion + spinach combo. The pinch of sugar tip makes so much sense—sometimes vinegar can be a little sharp. I’ll try that next time.
I can’t cook but this was super simple to follow! Thanks for sharing! ⭐⭐⭐⭐
I made it without Dijon (ran out). Still okay, but it definitely wasn’t the same—needed more tangy flavor.
I don’t get why people add bacon to salads. Isn’t it unhealthy? Just sounds wrong to me.
I dunno, sounds kinda gross to me too. Why ruin a healthy salad with meat? Just eat the spinach, it’s better!
Bacon in a salad makes it so much tastier! It’s all about balance, and a little indulgence never hurt anyone. Just enjoy it in moderation!
Spinach is just rabbit food. Where’s the real meat? 😒 ⭐⭐
I’m not usually a salad person, but this one actually feels like a real meal. The Dijon dressing clings nicely. Next time I’ll add some toasted nuts for crunch.
Not gonna lie, 1 tbsp olive oil feels like not enough, my dressing was kinda thin. Also bacon fat leftover—do we really need that? I might try adding more oil next time.
