Yeah that fish sauce can sneak up on you—1 tbsp is plenty if it’s extra salty. Next time try 3/4 tbsp and taste the sauce before adding all the veggies.

I’m not usually a curry person but this actually worked for me. The fish sauce + sugar combo is strange at first but it balances nicely.
I don’t have bell peppers, so I used whatever veggies were in the fridge (zucchini + carrots). Worked surprisingly well, though snow peas would’ve been better for the crunch.
