Ingredients
  

  • 1 lb chicken breast cut into bite-sized pieces
  • 1 tbsp vegetable oil
  • 1 cup coconut milk full-fat
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 cup bell peppers sliced
  • 1 cup snow peas
  • 1 lime juiced
  • 1/4 cup cilantro chopped

Instructions
 

  • Heat the oil in a large skillet over medium heat.
  • Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  • Stir in the red curry paste and cook for another minute.
  • Pour in the coconut milk and stir to combine.
  • Add the fish sauce, brown sugar, bell peppers, and snow peas to the skillet. Stir to combine.
  • Bring to a simmer and cook until the vegetables are tender and the chicken is fully cooked, about 10 minutes.
  • Stir in lime juice and sprinkle with chopped cilantro before serving.
