Instructions
Heat the oil in a large skillet over medium heat.
Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
Stir in the red curry paste and cook for another minute.
Pour in the coconut milk and stir to combine.
Add the fish sauce, brown sugar, bell peppers, and snow peas to the skillet. Stir to combine.
Bring to a simmer and cook until the vegetables are tender and the chicken is fully cooked, about 10 minutes.
Stir in lime juice and sprinkle with chopped cilantro before serving.
