Ingredients
  

  • 200 g pasta such as rotini or penne
  • 1/2 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Instructions
 

  • Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to cool.
  • In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, black olives, and feta cheese.
  • In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
  • Add the cooled pasta to the bowl with the vegetables and pour the dressing over. Toss to combine.

    Not gonna lie, this tastes bland to me. Like… where’s the garlic? I added a clove and some chili flakes and it suddenly made sense. Original needs a boost.

      Yeah, I’ve had that happen too—feta + olives can sneak in a lot of salt. I usually do half the salt at first and then add more only after it sits 10 minutes. Your approach makes sense!
