Chocolate Chip Mint Cookies

Ingredients
- 1 cup butter softened
- 1 cup sugar granulated
- 1/2 cup brown sugar packed
- 2 eggs large
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips semi-sweet
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla and peppermint extracts.
- In another bowl, combine the flour, baking soda, and salt; gradually stir into the creamed mixture.
- Fold in the chocolate chips.
- Drop by rounded teaspoonfuls onto ungreased cookie sheets.
- Bake for 10 to 12 minutes, or until edges are nicely browned.
- Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Really good, but I think there’s a bit too much butter for my taste. Next time I’ll reduce it a little.
I tried making these but used mint chocolate chips instead. The taste was so overpowering! Not what I expected.
