Jambalaya is a quintessential dish from Louisiana’s rich culinary tradition. It combines rice, meat (such as sausage, chicken, and seafood), and a variety of vegetables, making it a hearty and satisfying meal.

Ingredients
  

  • 1 cup long grain rice
  • 1 tbsp olive oil
  • 1 onion medium, diced
  • 1 green bell pepper medium, diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 cup chicken broth
  • 1/2 lb shrimp peeled and deveined
  • 1 tbsp Creole seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 2 stalks Green onions for garnish, sliced
  • 1/4 cup parsley for garnish, chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion, green bell pepper, and garlic. Cook until the vegetables are soft, about 5 minutes.
  • Stir in the diced tomatoes and chicken broth. Bring to a boil.
  • Add the rice and stir well. Reduce the heat to low and cover the pot.
  • Let the mixture simmer for about 15 minutes, stirring occasionally.
  • Stir in the cooked chicken, andouille sausage, shrimp, Creole seasoning, salt, and black pepper. Cover and cook until the rice is tender and the shrimp are pink, about 10 minutes.
  • Remove from heat and let the jambalaya sit for 5 minutes.
  • Garnish with green onions and parsley before serving.

      I dunno, more meat might make it too heavy. I kinda like the veggie and shrimp balance. But yeah, to each their own.

      Brown rice takes longer to cook than white rice. You might have needed to add more liquid and adjust the cooking time. Hope this helps!
