Ingredients
- 4 large russet potatoes washed and dried
- 1 cup cheddar cheese shredded
- 1/2 cup sour cream

Instructions
- Preheat your oven to 400°F (200°C).
- Pierce each potato a few times with a fork. Place them directly on the oven rack and bake for about 45-60 minutes until tender.
- Once the potatoes are done, remove them from the oven and let them cool down enough to handle.
- Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch of shell, and place the scooped-out flesh into a bowl.
- Mash the potato flesh with melted butter, sour cream, cheddar cheese, bacon, and green onions. Season with salt and pepper to taste.
