Ingredients
  

  • 4 slices whole wheat bread
  • 4 eggs large,
  • 2 cups spinach fresh
  • 1/2 cup shredded cheese optional
  • Salt and pepper to taste
  • butter or oil for cooking

Instructions
 

  • Heat a non-stick skillet over medium heat.
  • Add the spinach and cook until wilted, about 2 minutes.
  • Remove the spinach from the skillet and set aside.
  • In the same skillet, melt a pat of butter or heat some oil.
  • Crack the eggs into the skillet and scramble them.
  • Add the cooked spinach and shredded cheese (if using) to the eggs and mix well.
  • Season with salt and pepper to taste.
  • Toast the slices of bread.
  • Spread butter or your favorite spread on the toasted bread slices.
  • Divide the egg and spinach mixture evenly among the slices of toast.
  • Serve hot and enjoy!

      Hmm I tried once and my eggs came out a bit rubbery… maybe my heat was too high? Also I didn’t have spinach so I used kale and idk, it tasted bitter. Still, good idea!

      Actually, it works! You scramble the eggs and then split the mix across the four slices. One egg doesn’t just go on one slice. It’s all mixed together. 🙂

      Hmm mine usually turns out kinda rubbery if I’m not careful, but I think your instructions say medium heat. Maybe your skillet runs hot? Also I add the cheese way earlier so it melts—maybe that helps keep it softer? Not sure though, but still sounds yummy.
