Smash Burger

February 1, 2024

Learn how to make a delicious and juicy smash burger that will satisfy all your burger cravings. Perfect for any meal, family gatherings or outdoor barbecue, this recipe is the ultimate burger lover’s dream.

What is a smash burger?

A smash burger is a thin, crispy-edged beef patty made by smashing a ball of ground beef onto a hot griddle or skillet, creating a flavorful crust thanks to the Maillard reaction. It’s fast, juicy, and super satisfying.

Why smash the burger?

Smashing the burger increases surface contact with the pan, creating a deliciously crispy crust and locking in juices for big flavor in every bite.

What kind of meat should I use?

Use 80/20 ground beef for the perfect balance of fat and flavor. Avoid lean meat, which can dry out.

Do I need a special tool to smash it?

Not necessarily. A metal spatula or burger press works best, but anything flat and sturdy (like a cast iron press) will do the job.

How thick should smash burgers be?

They’re typically very thin, about 1/4 inch or less, with crispy edges and a juicy center.

How long do you cook a smash burger?

Cook for 2–3 minutes per side on high heat. Don’t flip too early, wait until the edges are crispy and brown.

How are smash burgers different from regular burgers?

Smash burgers are thinner, crispier, and cooked quickly at high heat, while regular burgers are often thicker and juicier in the center.

Can I make smash burgers without a griddle?

Yes! Use a cast iron skillet or stainless steel pan, just make sure it’s hot and flat for the best sear.

Notes

Tips for the Ultimate Smash Burger

🔥 Use High-Fat Beef:
Choose ground beef with at least 20% fat (80/20) — the fat helps create a crispy, flavorful crust when smashed.
🔥 Preheat the Griddle or Pan:
Get your surface screaming hot before adding the meat. This is key for achieving that signature golden-brown sear.
🔥 Don’t Overwork the Meat:
Form loose balls of ground beef without packing them tightly. This keeps the burgers juicy and tender after smashing.
🔥 Smash Immediately:
Place the beef ball on the hot surface and smash it flat with a heavy spatula right away — thinner patties mean more delicious crispy edges.
🔥 Season After Smashing:
Sprinkle salt and pepper right after smashing to ensure it sticks to the surface and seasons the crust perfectly.
🔥 Quick Cook Time:
Smash burgers cook fast — about 2 minutes per side. Keep an eye on them to avoid overcooking.
🔥 Stack for Extra Flavor:
Double up with two thin patties for the ultimate smash burger experience, layering with melty cheese between them.

These burgers are amazing! So juicy and the cheese just melts perfectly. My family loved them!

My buns got toasted but the meat stuck to the griddle. I think I need more oil or a hotter pan. Anyone else?

    1. 5 stars
That sounds like it wasn’t quite greased enough. I usually wipe the griddle, then add a thin layer of oil (or a little clarified butter) right before the meat goes down. Also make sure the surface is really hot—like it should sizzle immediately.

  3. User avatar claudia.ruecker says:

    3 stars
Pretty basic recipe, but it worked. I wish it had more spices though.

    1. 4 stars
I totally get you! A little more spice would make it really pop! Maybe try adding some paprika or garlic powder next time.

  4. 5 stars
Super easy recipe! Even kids loved it! 😋

Looks simple, but missin’ some info on cookin’ temp and stuff. I guess I’ll wing it.

  6. User avatar Prostetnic Vogon Kwaltz says:

    2 stars
I don’t get the hype about smash burgers. They just taste like regular burgers!

  7. User avatar Yooden Vranx says:

1 pound for 4 buns = kinda small? Also “cheese optional” is like… why optional though 😅. I’d add cheese every time. Tasty but needs more guidance.

    1. 4 stars
I get what you mean—1 lb for 4 buns is a bit “slider-ish.” If you want more of a proper smash, I’d do thicker patties or use more beef. And cheese optional… nah, cheese always 😄

    2. User avatar rayford.stehr says:

      3 stars
Tbh I don’t mind it. Smash burgers cook down fast, so 1 lb can still feel filling with bigger buns and good toppings. But yeah, the instructions could’ve mentioned the cheese timing better—like add it right when it finishes browning. Also “cheese optional” kinda weird 😂

  8. User avatar Hotblack Desiato says:

    5 stars
These burgers were incredible! Juicy and full of flavor.

  9. User avatar mathWizard says:

    5 stars
Smash burgers are my weakness 😄 The 2-3 minutes per side usually hits that crispy edge sweet spot.

    1. User avatar Dr. Percy Conroy says:

      5 stars
Yes!! That crispy edge is everything 😄 I usually don’t overthink it—press hard and let it get that deep brown crust.

    2. 3 stars
2-3 min per side feels a little short to me… I always worry it’s undercooked. Maybe with thinner patties it works though. Also do you flip only once?

  10. 4 stars
I pressed a little too hard at first and made them thinner than I wanted, but the flavor was still great. Next time I’ll aim for a slightly thicker patty.

  11. User avatar andrea.dickinson1952 says:

    4 stars
Who needs all those toppings? Just ketchup is enough for me. Simplify!

    1. User avatar herschel.wyman says:

      2 stars
I think toppings make it special! Just ketchup is kinda boring, don’t you think?

    2. User avatar nicky.ferry says:

      3 stars
Ketchup? Really? You’re missing out on all the good stuff! But hey, to each their own!

  12. User avatar isreal.corkery32 says:

This is just a regular burger recipe but you call it smash? I dunno, man.

    1. User avatar Miss Dane Nikolaus says:

      5 stars
I think the ‘smash’ technique really changes the game! It gets a nice crust on the patty. Can’t wait to try it!

    2. 2 stars
It’s just a burger, my dude. Why not just call it a burger? Smash or not, what’s the big deal?

  13. 4 stars
Tasted great, but I messed up the cooking times. Mine were a bit burnt. Oops!

  14. 4 stars
I followed it pretty closely, but 2-3 minutes each side was a little too fast for my skillet. Still tasted great though, just had to cook a bit longer.

  15. User avatar Spider Guardian says:

    4 stars
Just burger, buns and cheese! Why complicate things? Simple, good food!

  16. User avatar donette.erdman3 says:

    3 stars
Mine stuck a little to the pan even though I preheated. Next time I’ll use more oil or a properly seasoned griddle.

  17. User avatar warner.herzog says:

    3 stars
Not bad but like… “salt to taste” is hard when you’re hungry lol. I’d rather have a measurement. Still tasty though!

    1. User avatar noemi.daugherty19 says:

      5 stars
Haha so true—“salt to taste” is like, guesswork when your stomach is yelling 😅 I usually do like 1/2 tsp per pound and adjust after the first flip. Glad it was still tasty!

  18. User avatar Trin Tragula says:

    4 stars
Quick and simple recipe! I added grilled mushrooms to mine. Yum!

  19. User avatar ron.kunze82 says:

    1. User avatar hans.reynolds24 says:

      2 stars
Burgers tough? How do you mess that up? Maybe try a timer next time. 🤔

  20. User avatar micheline.gibson10 says:

Super yummy! Just used some BBQ sauce instead of ketchup and it was delish!

  21. User avatar raymundo.beier7 says:

Who needs cheese? I just use extra ketchup. Very good, best smash burger!

    1. User avatar wesley.strosin says:

      4 stars
Ketchup instead of cheese? That’s a bold choice! But I guess it works for you. 🍔

  22. User avatar raul.heller1967 says:

    4 stars
Honestly, 1 lb for 4 burgers is perfect if you like thin patties. If you like thicker, this won’t feel like a normal burger.

  23. 3 stars
I can hardly read this recipe! More details please? Like how long to preheat the skillet?

  24. 5 stars
Just made these for dinner and everyone loved them!! So easy and sooo yummy 🤤

  25. User avatar Galaxia Woonbeam says:

    3 stars
I’m confused about the “each side” part—if you smash first, do you flip immediately? Mine stuck for a second, but it worked out.

    1. User avatar rich.landlord says:

      5 stars
Yeah I think of “each side” as: smash, cook that side until it’s browned (usually a minute or two), then flip and cook the other side. If yours stuck for a second, that’s normal—let it get a crust before flipping.

    2. User avatar maritza.nikolaus61 says:

      3 stars
Wait so you smash then flip immediately? I usually just press once and if it won’t move, I panic and scrape it… maybe that’s why mine tears up lol. Also “2-3 minutes” feels long on my stove. Still tastes good though.

  26. User avatar sana.damore3 says:

    1 star
Is it really right to call it a smash burger if I didn’t smash it? Idk.

  27. 5 stars
These burgers are just amazing! So easy to make and they taste fantastic.

    1. User avatar eric.cronin29 says:

      5 stars
I agree! These burgers are seriously the best. I made them last weekend and everyone loved them!

  28. 5 stars
Wow, this recipe was a hit at my BBQ! Everyone loved them. Thanks!

  29. User avatar barrett.moore65 says:

    3 stars
Salt and pepper only is a bit plain for me. I added garlic powder and it tasted way more like a restaurant burger.

  30. User avatar matilda.jerde26 says:

    3 stars
Why do you need to smash it? I think it’ll be better if you don’t smash the beef. Just saying.

  31. User avatar Questular Rontok says:

    2 stars
1 pound ground beef is kinda small? Like we usually use way more. But flavor is alright.

  32. 5 stars
Perfectly med-well and flavorful. Definitely recommend using this recipe for your next football game day

  33. 5 stars
Perfectly med-well with flavorful season. Patty was still juicy, would definitely recommend for your next game day. Pairs great with chips or crisps

  34. User avatar deandre.tillman2018 says:

Burgers good! I forgot to get cheese, but still tasty. Will try again with cheese next time!

    1. User avatar penney.pfeffer23 says:

      5 stars
Glad you liked it! Cheese does make everything better. Next time for sure! 🧀

  35. 5 stars
I forget to add the onions but still taste yum yum! 10/10!!!

  36. User avatar irina.boyer12 says:

    4 stars
Pretty good, but 2-3 minutes each side felt a little short for my thick patties. Next time I’ll go a bit longer and press harder for thinner burgers.

  37. User avatar valene.goldner1951 says:

    3 stars
I followed the recipe but my burgers came out dry. Maybe I used too much salt? 🤔

  38. 5 stars
Best burger ever! I added bacon too! Soooo good, I suggest everyone try it!!!

  39. User avatar ellie.dickens says:

    5 stars
These burgers are so easy and yummy! My kids loved them!

  42. User avatar lavelle.rippin says:

    3 stars
These were good but my patties shrank a lot. I think I pressed and moved the spatula too soon. Still tasty though.

  43. 2 stars
Takes too long to cook! I prefer my burgers thick. Will not make again.

  44. 5 stars
Yummy! My kids loved helping smash the patties! 😊👩‍🍳

  45. User avatar carmine.sawayn2024 says:

    4 stars
I like the simplicity, but I think it needs one step: season right after pressing, not before? Not sure why, just tastes better to me.

  46. 3 stars
Easiest burger recipe ever! But 2-3 min per side? Seemed too short.

    1. User avatar hailey.huels82 says:

      4 stars
I think 2-3 min is just fine! Burgers can overcook easily. Gotta trust the recipe!

  47. User avatar glynda.kuhic says:

    3 stars
I thought the patties were too thin. Next time, I’ll use more beef.

    1. User avatar avery.koss1993 says:

      4 stars
I totally understand! Thicker patties can be way better. Just adjust how much beef you use next time! 😄

    2. User avatar wally.dare says:

      3 stars
But isn’t the whole point to smash them? They gotta be thin, right? Just curious!

  48. User avatar santos.grady says:

    3 stars
Uh, this is a recipe, not a crypto ad! But burgers look good!

  49. 5 stars
Smash burger? Sounds weird, but it was delicious!!! My kids loved it.

  50. User avatar Sand-Dial says:

    5 stars
Tried this and it came out great—super juicy inside with those browned bits. Added onions on the griddle at the end too.

  51. User avatar gary.prosacco73 says:

    2 stars
I don’t get why you smash the burger? Isn’t it supposed to stay thick for juiciness? Just saying.

  52. User avatar abraham.runte says:

    5 stars
Smash burgers are always a win. The “press down” step really makes them crispy around the edges—mine came out perfect.

  53. 2 stars
Meh, I don’t get the hype. A burger is a burger, right? Maybe I’ll try again.

    1. User avatar tissues_with_issues says:

      4 stars
I get what you mean, but trust me, there’s nothing like a good smash burger! They have this cool crust that’s just yum. Give it another shot!

    2. User avatar willian.beier says:

      5 stars
Nah, burgers ain’t just burgers. Smash burgers are like, the best! You gotta try it with some toppings!
      And don’t skip the cheese!

  54. User avatar joshua.hirthe5 says:

    3 stars
Wait, aren’t smash burgers supposed to be seared more? I’m confused.

  55. 5 stars
Super easy instructions, even for a beginner. My buns got toasted just right and the burger didn’t stick to the pan.

  56. User avatar Loonquawl says:

    2 stars
I don’t get all the hype. Mine turned out dry and tasteless.

    1. 4 stars
I’m sorry to hear that! Maybe try adjusting the cooking time or add some sauce to make it more flavorful next time. Cooking can be tricky! Good luck!

  57. User avatar pat.langworth says:

    4 stars
This is good but I’d add garlic powder. Also who measures salt “to taste” like that lol.

    1. User avatar oPandariaNo says:

      5 stars
Totally agree—garlic powder would level this up. I usually do a little garlic + extra pepper right on the patties before smashing. Yum.

    2. 3 stars
“Salt to taste” is kinda annoying but fair 😂 I usually mess it up anyway. Also smash burgers need more fat right? Like higher heat so they don’t dry out?

  58. User avatar Jovan Hoeger says:

    3 stars
What kind of cheese did y’all use? I put cheddar, but it wasn’t that great.

  59. User avatar sean.rath34 says:

    2 stars
cheese optional?? nah. also i pressed too hard and it became beef jerky vibes. i will try again but maybe less force.

    1. 5 stars
Cheese totally optional, but it’s the cheat code 😄. And yeah—smash = pressure, but too much and you’re basically making jerky. Try gentler presses and keep it cooking just until you get that nice browning.

  60. User avatar Dr. Miki Brown says:

    5 stars
Wow, these burgers were amazing! I added some bacon and it was a hit at the barbecue!

  61. User avatar lacy.herman says:

Low effort, high reward. Also, ketchup + mayo + mustard is the move lol.

  62. User avatar adell.bechtelar says:

Too much work for a burger! Just throw them on the grill like normal.

  63. User avatar walton.pfannerstill48 says:

Smash burgers? More like splat burgers! Messy but fun to make. 😂

    1. User avatar johnie.kulas says:

  65. User avatar Piter De Vries says:

I tried it and they came out way better than my usual patties. I did 2 minutes each side and added cheese right at the end—perfect melt.

  66. User avatar krystina.morissette47 says:

    4 stars
Not bad. I used cheddar and it melted perfectly. However, 2-3 minutes per side felt short for my stove, so I gave it an extra minute.

  67. 5 stars
These burgers are amazing! So juicy and flavorful. Must try with cheese!

    1. User avatar trista.connelly says:

  70. User avatar steve_maga says:

Honestly, I was skeptical about the whole ‘smash’ concept. But wow, these were juicy!

  71. 3 stars
I don’t get why people fuss over smash burgers. Ground beef + salt/pepper + bun is already great. Still, I admit the browned bits make it better.

  72. User avatar Kurt Remarque says:

    2 stars
I don’t really get the hype about smash burgers. They’re just average to me.

    1. User avatar martin.runte1993 says:

I totally disagree! Smash burgers are the best! The crispy edges make them so tasty. You should give them another try with some good toppings!

  74. 3 stars
I did cheese, but it didn’t really melt fast enough for me. Maybe my heat was too low or I should cover the pan.

  75. 5 stars
Made these tonight—smashing them thin is the whole magic. Super tasty and the browning on the edges was perfect. I added cheddar and caramelized onions. 10/10.

  76. User avatar Oolon Colluphid says:

    5 stars
Smash burgers are my weakness 😄 The instructions are super clear—pressing the patties thin on a hot griddle is exactly how you get that crispy edge.

    1. 5 stars
Yes!! Crispy edges are everything. I always overthink the timing but 2-3 min per side sounds spot on. 😄

  77. 5 stars
Cheese melt tip was on point. I threw the cheese on right at the end and it melted instantly. Great texture.

  78. 3 stars
Medium-high heat might be a little too vague. Mine charred faster than expected. Next time I’ll watch the edges and maybe drop the temp a notch.

  79. 5 stars
Just made these for my kids and they loved em! Will make again for sure.

  80. User avatar Vanda Rath I says:

    3 stars
I tried it but my burgers stuck to the pan like crazy. I think I didn’t preheat enough or didn’t use enough oil. Flavor was still solid though.
