Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 3 cups cooked rice
  • 2 tbsp vegetable oil
  • 1 cup peas and carrots frozen
  • 2 cloves garlic minced
  • 3 eggs beaten
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions
 

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium high heat.
  • Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove from the skillet and set aside.
  • Add the remaining tablespoon of vegetable oil to the skillet. Add the garlic, peas, and carrots and cook until tender, about 3-4 minutes.
  • Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through, then stir in with the vegetables.
  • Add the cooked rice to the skillet and stir to combine with the vegetables and eggs.
  • Add the cooked shrimp back to the skillet. Drizzle the soy sauce, oyster sauce, and sesame oil over the mixture. Stir well to coat everything evenly.
  • Cook for an additional 2-3 minutes to heat everything through. Season with salt and pepper to taste.
  • Serve hot and enjoy!

      I think 1 lb shrimp + 3 cups cooked rice is totally fine if you’re using day-old rice. If it was freshly cooked, it can turn out drier and harder to spread in the pan. Maybe try using colder rice and don’t overcrowd the skillet.

      Yeah 3 cups cooked rice sounds like a lot at first, but fried rice usually needs “leftover” rice that’s already pretty loose. If your skillet runs small or the rice is clumpy, it can feel dry—adding a touch more oil (or even a splash of soy sauce) makes a big difference.
