Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber sliced
  • 1/4 cup red onion diced
  • 1/4 cup parsley chopped fresh
  • 1/4 cup dill chopped fresh
  • 2 tbsp lemon juice
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat grill to medium-high heat.
  • In a bowl, combine the shrimp, olive oil, garlic, paprika, salt, and black pepper. Toss to coat the shrimp evenly.
  • Thread the shrimp onto skewers and grill for 2-3 minutes on each side, until they are pink and opaque.
