Roasted Rhubarb Salad

June 13, 2025

Looking for a way to enjoy rhubarb beyond crumbles and cakes? Try this vibrant Roasted Rhubarb Salad—a refreshing, slightly tangy dish that transforms tart rhubarb into something truly elegant. Paired with leafy greens, creamy cheese, and a light vinaigrette, this salad is perfect for spring and summer dining.

Why Roast Rhubarb?
Rhubarb is naturally tart, but roasting it softens its texture and mellows the acidity. Tossed with a bit of olive oil and honey or maple syrup, the rhubarb caramelizes in the oven, bringing out its natural sweetness and creating tender pieces that melt in your mouth.

Optional Add-Ins:

  • Thinly sliced red onions for a savory bite
  • Fresh strawberries or oranges for extra sweetness
  • Grilled chicken or lentils for added protein

Why You’ll Love It:
This salad is a perfect balance of flavors—sweet, sour, creamy, and crunchy. It’s light enough for lunch but satisfying enough to serve as a side for grilled meat or fish. Plus, it’s naturally gluten-free and easy to adapt for vegan or dairy-free diets.

Rhubarb is often celebrated for its tart flavor and use in desserts, but it also offers a surprising number of health benefits. Packed with antioxidants like anthocyanins and polyphenols, rhubarb helps fight oxidative stress and inflammation in the body. These compounds are believed to support heart health and may even reduce the risk of chronic diseases such as cancer.

Digestive and Heart Health Support
Thanks to its high fiber content, rhubarb supports healthy digestion and can relieve occasional constipation with its gentle, natural laxative effects. The fiber also contributes to lowering cholesterol levels, which is beneficial for heart health. Additionally, rhubarb contains potassium, a mineral that helps regulate blood pressure and maintain cardiovascular balance.

Bone Strength and Weight Management
Rhubarb is a good source of vitamin K, which plays a key role in bone formation and helps prevent osteoporosis. This nutrient also supports proper blood clotting. With its low calorie content and high fiber, rhubarb makes an excellent food choice for those trying to manage their weight, as it promotes satiety without adding many calories.

Blood Sugar Balance and Anti-Inflammatory Benefits
Some early studies suggest that rhubarb extract may help balance blood sugar levels by improving insulin sensitivity. While more research is needed, it shows potential as a natural aid for metabolic health. Additionally, rhubarb’s anti-inflammatory properties—thanks to its antioxidant profile—may help ease symptoms of inflammation-related conditions.

A Word of Caution
While rhubarb stalks are safe and healthy to eat, its leaves are toxic due to their high oxalic acid content and should never be consumed. Always trim off the leaves completely and use only the stalks in your cooking.

Isn’t rhubarb toxic? I thought we weren’t supposed to eat that raw. Confused.

    1. 4 stars
Rhubarb does have some toxic parts, but the stalks are safe to eat when cooked! It’s definitely better cooked than raw, though. So you can enjoy this salad without worrying too much!

  9. User avatar Lenard Watsica says:

    2 stars
Why would you roast salad? Salad is supposed to be cold! 🤷‍♂️

  10. User avatar brigida.tillman54 says:

    3 stars
I followed it exactly and thought it was kinda bland? The feta helped, but I wanted more tang. Maybe add lemon next time.

This salad is a game-changer! The rhubarb adds such a unique flavor that pairs perfectly with the feta. Will definitely make again!

That sounds delicious! Grilled chicken is such a great addition to salads. 🥙

Salad? More like a weird fruit dish. Sorry but I’m not a fan. ⭐

Can someone explain how to roast rhubarb? Mine got mushy… 🙁

  16. User avatar alice.sanford69 says:

I mixed up the ingredients and added too much vinegar. Oops! Made it kinda tangy! ⭐⭐

    1. User avatar darius.little says:

      2 stars
I’ve done that before! Too much vinegar ruins the taste for me. But hey, live and learn, right? 😂

    2. User avatar dallas.conroy2004 says:

      4 stars
Adding too much vinegar might have made it unique! Sometimes those happy accidents create the best dishes. Just adjust next time! 😊

  17. User avatar matthew.douglas70 says:

I tried it but the rhubarb was too sour for me. I might skip it next time and just stick to normal veggies. 2 stars.

    1. 4 stars
I get it, rhubarb can be a bit much for some people. Maybe try adding more honey or pairing it with sweeter fruits next time!

  18. User avatar Questular Rontok says:

Made it for dinner last night. My husband was skeptical but ended up loving it! Will make again!

    1. User avatar Chi Shenlong says:

  19. User avatar Ice Wraith says:

Rhubarb in salad feels odd to me. Like—where’s the main dish? 😅 But honestly it wasn’t bad, just not my usual.

  21. User avatar luna.kilback says:

    4 stars
The recipe is pretty straightforward, but I feel like 1 tablespoon honey for only 2 stalks is either spot on or not enough depending on how tart your rhubarb is. Mine was super sour—added a splash more.

  22. User avatar alphonso.pfeffer85 says:

    2 stars
Uh, I don’t get why people are raving about this. The rhubarb was too sour for me, and the dressing didn’t help. Not my favorite.

    1. User avatar zulma.feeney says:

      5 stars
I loved it! The sourness is what makes it unique. Just a matter of taste, I guess.

    2. User avatar lizzzard says:

      4 stars
I get what you mean! Rhubarb can be real hit or miss. Maybe try adding more honey next time?

  23. User avatar halflife4 says:

So easy to make! I just threw it together while watching my kids. Will try it with different greens next time!

  25. User avatar Gormlaith says:

Meh. This sounds complicated for a salad. I just toss greens and call it a day.

  26. User avatar aiko.heidenreich45 says:

    3 stars
I put too much honey in, oops! Still tasted good but too sweet LOL. Next time, I’ll measure better!

    1. User avatar erminia.kuvalis2017 says:

      3 stars
Too much honey? That’s not a problem! Just means more energy, right? But like, maybe cut it next time? Just sayin.

    2. 4 stars
Haha! I’ve been there too! I think sometimes a little extra sweetness can actually make it fun. Glad it still tasted good!

  27. User avatar nicolas.swaniawski says:

This is weird. Rhubarb in salad? I’m not convinced. I think I’ll stick to traditional greens.

  28. User avatar darron.fadel says:

Is this really a salad? Looks more like a dessert with that honey. 🤔 Anyway, at least it was easy. ⭐⭐⭐

I don’t know what rhubarb is but my mom made it and said it’s good… I think it was ok, I liked the greens, haha. 3 stars.

  32. User avatar Pasta Fasta says:

    2 stars
Not sure why people rave about this. The rhubarb just tasted sour to me. I couldn’t finish it. ⭐⭐

  33. User avatar willis.dietrich says:

    5 stars
I didn’t have walnuts, so I threw in some almonds instead. Still delicious! ⭐⭐⭐⭐⭐

    1. User avatar concha.flatley96 says:

      2 stars
Almonds?! That’s not the same at all! Walnuts add a crunch that almonds just can’t match. 🤷‍♂️

    2. 5 stars
I love using almonds! They give a different flavor but still work great with the rhubarb. Glad you enjoyed it! 😋

  34. User avatar nicki.stamm36 says:

    1 star
Yuck! Never again. Thought it would be better. Just weird for me. 1/5.

  35. 4 stars
Tried this out and my family was like ‘What is that?’ 😂 But I liked it, the honey mellows the tartness!

  36. User avatar bambi.smith says:

    3 stars
Salad was alright, but I thought the walnuts overwhelmed the dish a bit. Maybe less next time? 3 stars.

  37. 3 stars
I tried it, but the rhubarb was too tart for my taste. Maybe adding more honey would help?

  38. User avatar Mr. Pandora Purdy says:

    5 stars
This is delish! Made it for a BBQ and everyone devoured it! Feta and walnuts are perfect! 🥗

  39. User avatar austin.fahey says:

    2 stars
This was okay, but I think rhubarb is just too tangy for me. I won’t be making it again.

  40. 3 stars
Anyone else accidentally burned their rhubarb? The oven was too hot! Still salvageable tho.

  41. User avatar chanda.schmeler3 says:

    5 stars
I love rhubarb, so this was a win. I used toasted pecans instead of walnuts and it was even better—crunchy contrast is key.

    1. 3 stars
I might be missing something—15-20 min at 400°F makes mine kinda mushy. Maybe my rhubarb is too thick? Still tastes good tho, just not crunchy.

    2. 5 stars
Yes!! Crunchy contrast is the whole point with tart-sweet rhubarb. Toasting nuts makes such a difference.

  42. User avatar latoya.botsford90 says:

    5 stars
Super easy to make and looks pretty! I added some grilled chicken on top since I needed protein. 5 stars all the way!

  43. 3 stars
How do you know when rhubarb is done roasting? Do you just look at it?

    1. User avatar Britta Koss says:

      5 stars
You can tell when rhubarb is done by its softness! Just poke it with a fork, and if it breaks apart easily, it’s ready. 🙂

    2. User avatar mara.cruickshank1953 says:

      3 stars
I usually just peek at it. But honestly, I don’t think it matters much, just roast it till it looks nice and colorful.

Tasted like a fancy restaurant! Homecooked dreams! 🥗❤️

  45. User avatar tennille.kuhic7 says:

Rhubarb sounds like a fancy name for something. What even is it? I just like greens.

  46. User avatar tanner.fisher says:

    4 stars
I’m not usually a fan of rhubarb, but the caramelizing helped a lot. Took longer than 20 minutes in my oven though—maybe my temp runs low.

  47. 2 stars
Kinda weird, right? Rhubarb in a salad? Not for me. I won’t be trying this again.

  48. User avatar charlyn.nolan56 says:

    3 stars
You gotta be kidding me. Rhubarb in salad is just wrong. Stick to fruit pies people!

  49. User avatar nickie.rice7 says:

I didn’t really like it. The rhubarb was too sour for my taste. Maybe more honey next time?

  50. User avatar keneth.satterfield42 says:

  58. User avatar dwight.marks50 says:

My rhubarb got a little too caramelized at 20 minutes, but it was still good. Next time I’ll pull it closer to 15.

    1. 4 stars
Mine did the same thing the first time. I think my oven runs hot? I’m always scared to pull it early but 15 min prob better. Also I might add less honey next time.

    2. 5 stars
Good call—rhubarb can go from “caramelized” to “too far” fast in a hot oven. I usually check around 12–15 min like you said.

  59. User avatar colby.volkman99 says:

    5 stars
Absolutely loved this recipe! The roasted rhubarb adds a unique flavor that I didn’t expect. Will make again!

  60. User avatar Gretchen Nolan says:

Rhubarb salad sounds fancy but also… why? 😅 Still, I tried it and the walnuts + feta made it work. Not mad.

    1. User avatar tanesha.gerlach1984 says:

      3 stars
Wait rhubarb salad?! I thought rhubarb only for pie lol 😅 But if it’s roasted it prob tastes less weird. Did you make sure to not use too much honey or it gets like candy?

    2. User avatar wellRespected says:

      5 stars
Honestly I’m into this—rhubarb is tart as heck, so honey + balsamic is the perfect bridge. Walnuts and feta make it feel like a real grown-up salad 😄

  61. User avatar lashawn.bogan85 says:

    5 stars
This was such a unique recipe! I never thought rhubarb could taste so good in a salad. Definitely a 5/5!

  70. User avatar carroll.casper says:

  75. 2 stars
Sounds weird. Rhubarb in a salad? Is that even a thing? I think I’ll skip this one.

  78. 2 stars
I tried this and it was way too sweet. Maybe because my honey was really thick? I’d use less honey or more vinegar to balance.

  79. User avatar sonny.stoltenberg1996 says:

5 stars—except my rhubarb burned a little… still ate it tho. Amazing idea.

  80. User avatar rey.anderson says:

This salad is amazing! The roasted rhubarb gives it such a unique flavor. Will definitely make again.

  82. User avatar dave.gulgowski47 says:

Nice recipe but I forgot to roast the rhubarb first. Whoops! It was still okay.

  84. User avatar Blue Dartwing says:

I totally get that! Walnuts do add such a nice crunch. I love the idea of adding chicken for some protein! 😋

    2. 2 stars
Chicken? In a salad? Why would you mess with the rhubarb? Just toast the walnuts next time and you’ll be good.

  86. User avatar julian.moen says:

I had to substitute apple cider vinegar cuz I ran out of balsamic, and it turned out fine. The general method works.

    1. User avatar anonymous_hacker says:

      3 stars
Huh, balsamic is kinda key tho. Apple cider vinegar can be sharper—did it taste sour to you? Still, if it turned out fine, I’ll try it.

    2. User avatar lizzzard says:

      5 stars
Nice! I’ve been using apple cider vinegar too when I’m out of balsamic—good to know it still works. The caramelizing step is what makes it shine.

  89. 3 stars
Honestly, not my favorite. The rhubarb was too tart for my taste. And I’m not a fan of walnuts.

Totally agree—rhubarb + balsamic sounds weird at first but it’s such a good sweet-tart balance. I’ll definitely try this!

I don’t know about this recipe. Rhubarb in a salad? Sounds weird to me. But my friend loved it.

I’m not really into health food, but this was alright. Better than I expected. 4 stars from me.

Um, I used strawberry instead of rhubarb and it was amazing! Do you think that counts as the same recipe?

I think it’s great that you experimented! Strawberry sounds tasty, though it’s not the same dish anymore. But who cares if it’s delicious, right?

I loved it! The walnuts added a nice crunch and the feta complemented the rhubarb perfectly.

Did I read this right? You want me to roast rhubarb?! That sounds weird but I guess I’ll try it. 🤨

Mine came out kinda mushy because I roasted a bit too long. Flavor was still good, but texture wasn’t as nice. Next time I’ll start checking at 12-15 minutes.

Rhubarb? Never tried it before. This was a fun recipe, but I’m not sure it’s for me.

Pretty tasty! I did add a pinch of salt to the greens and it made everything pop. Would make again for sure.

This turned out way better than I expected—sweet-tart roasted rhubarb with the balsamic is such a good combo. I also loved the walnuts and feta together.

I made this with slightly less honey and it still came out sweet-tart and really addictive. The roasted rhubarb smells incredible.

That sounds so good—rhubarb can go from tart to addictive fast. I love that roasted caramel vibe with balsamic. 😋
