Roasted Cauliflower and Broccoli

October 2, 2024

Roasted Cauliflower and Broccoli is a delicious and easy-to-make side dish that brings out the natural sweetness and earthy flavors of these vegetables. Roasting transforms cauliflower and broccoli into golden, caramelized perfection, enhancing their textures while keeping them tender on the inside. This dish is the perfect addition to any meal, offering a nutritious and satisfying vegetable option that’s both healthy and full of flavor.

What makes Roasted Cauliflower and Broccoli so special is the simple technique of roasting. When cauliflower and broccoli are tossed with a little olive oil, salt, and pepper, then roasted at high heat, their flavors intensify. The caramelization process adds a depth of flavor that makes these veggies irresistible. As the florets turn golden and crispy on the edges, they maintain their soft, tender centers, making every bite a balance of crisp and smooth textures.

For added flavor, you can experiment with different seasonings. A sprinkle of garlic powder, onion powder, or smoked paprika adds an extra layer of depth, while a drizzle of balsamic vinegar or a squeeze of fresh lemon juice just before serving brightens up the dish. You can also toss in some Parmesan or grated cheese during the last few minutes of roasting for a cheesy, savory finish.

Roasted Cauliflower and Broccoli is incredibly versatile and can be served with a variety of dishes. It pairs well with roasted meats, pasta, or grain-based salads, and it also makes a great addition to bowls or wraps. For a more substantial dish, you can serve it with a protein like grilled chicken or a hearty grain like quinoa or couscous.

The beauty of this dish is its simplicity. With just a few ingredients, you can elevate two humble vegetables into a side dish that’s both flavorful and nutritious. Whether you’re looking for a quick weekday side or something to accompany a special meal, Roasted Cauliflower and Broccoli is a guaranteed hit that will leave you coming back for more.

Took forever to cook, and the garlic burnt. Not what I expected. 😒

The flavor balance is solid. I’m not usually into broccoli, but the red pepper flakes make it pop. Would serve as a side with chicken or even over rice.

    1. User avatar delmer.romaguera says:

      5 stars
Totally agree—those red pepper flakes really wake it up. I’ve served it with chicken a few times, and it’s also great over rice when you want an easy meal. The roasting time is key too; letting it brown a bit makes it way better.

  3. User avatar mohammed.oconner1969 says:

    3 stars
Tasty but 25 minutes wasn’t enough for my oven—mine came out a bit under-browned. Next time I’ll push closer to 35.

  4. User avatar domenic.turcotte6 says:

    4 stars
Yummy! I didn’t have paprika, so I used curry powder and it was still great!

  5. 5 stars
Made this last night and it turned out way better than I expected. The paprika + garlic combo is awesome, and the browned bits are the best part.

I don’t know about this, my kids didn’t eat it at all. Maybe if I added cheese?

    1. User avatar elvin.runolfsson31 says:

      3 stars
Nah, kids just dont appreciate good veggies yet. You gotta start ’em young! Just keep trying different stuff!

    2. User avatar mose.abshire21 says:

      5 stars
Adding cheese sounds like a great idea! Kids usually love cheesy things. Maybe try a sprinkle of parmesan or some melted cheese on top next time?

  7. User avatar argentina.lowe51 says:

This was a game changer for my dinners! So easy and delicious! 5 stars for sure!

  8. 5 stars
This dish is absolutely delicious! Super easy to make and the paprika really adds a nice kick. Will definitely make again.

  9. 1 star
I don’t get why people like this. Broccoli and cauliflower? No way!

  10. User avatar harris.pagac0 says:

    3 stars
I don’t know, it just feels like broc and cauli need more flavor. Maybe some cheese on top?

    1. User avatar terminatorXYZ says:

      5 stars
I totally agree! Cheese would make it so much better. Maybe some mozzarella or Parmesan?

    2. User avatar frederic.moen13 says:

Veggies are good for you, I think. This recipe is healthy, but I’m not a fan of vegetables. 🙁

    1. User avatar jerrod.weber6 says:

      5 stars
I used to hate veggies too, but roasting makes them so yummy! You might like this recipe if you give it a try! 🙂

  12. User avatar augusta.dach61 says:

Tried this tonight—so easy and the veggies actually browned nicely. I used a little extra paprika and it was perfect with garlic breath (worth it).

  13. 1 star
meh, it’s just veggies… didn’t really excite me at all.

    1. User avatar tyree.mcglynn98 says:

      4 stars
I totally disagree! Roasted veggies can be super tasty if done right. Maybe try seasoning them differently next time?

    2. User avatar King Vegeta says:

      2 stars
Sounds so boring! Veggies don’t have much flavor, right? How bout adding some cheese or bacon to make it pop?

  14. User avatar brady.thiel69 says:

    4 stars
Can I sub the olive oil with butter? I like butter more, lol!

  15. User avatar cameron.ebert1978 says:

Good flavor, but 25 minutes was a little short for my oven (more like 30–35). Still came out crispy though—won’t complain.

Super easy and I had all the ingredients at home. Definitely a keeper!

  22. User avatar zofia.medhurst9 says:

    2 stars
Wasn’t a fan. Broccoli and cauliflower taste bland roast idk how people like this.

This is so simple it feels like cheating. My kids asked for seconds. I’m giving it 5 because I’m lazy and it works 😂

    1. User avatar dewey.schiller says:

      5 stars
Honestly same 😂 I love recipes that don’t require effort and still turn out crispy. The kids going for seconds is the real review!

    2. User avatar loriann.hoeger1992 says:

      3 stars
Hmm I tried something like this but mine came out kinda soggy. Maybe I didn’t roast long enough or I crowded the pan. Do you really get browning in only 25 minutes?

  26. User avatar daniel.kertzmann75 says:

    5 stars
My kids loved this! First time they asked for more broccoli! ⭐⭐⭐⭐⭐

    1. 5 stars
That’s awesome! I’m so glad your kids liked it. Broccoli can be tough to get them to eat! 🎉

    2. User avatar nicola.baumbach8 says:

      4 stars
Really? My kids won’t touch broccoli, even with cheese on it. Guess I’ll have to give this a try. 🤔

  27. User avatar wilson.weimann says:

    2 stars
This is just roasted veggies. Where’s the flavor? Dissapointing.

  28. User avatar leigh.denesik says:

    4 stars
I made this for my kids and they actually ate it without complaints! Miracles do happen, I guess!

  29. 3 stars
I used frozen broccoli. Is that okay? It didn’t turn out right.

    1. User avatar teodoro.zulauf says:

      4 stars
Frozen broccoli works fine! But maybe don’t roast it for as long, it can get mushy.

  30. User avatar marcene.carroll2013 says:

    5 stars
Five stars. The flavors actually stick to the veggies and everything caramelizes nicely. Great side dish for meal prep.

  31. User avatar idell.boehm1996 says:

    5 stars
Yum! Just yum! Will definitely make again 😊

  32. User avatar lavona.cremin18 says:

    2 stars
Not sure why people roast broccoli this much… It came out kinda dry for me. Maybe I used too much time or cut the florets too small. Sauce would help.

  33. User avatar regenia.ziemann94 says:

    3 stars
This was good, but mine came out a bit soggy. I think I overcrowded the pan and didn’t stir enough. Still flavorful though—would try again on a bigger sheet.

  34. 4 stars
I confused black pepper with chili powder. Oops! Still tasted good.

  35. 3 stars
OK, I thought broccoli was bad for you. Why is everyone saying this is healthy? Confusing!

  36. User avatar wade.hintz54 says:

    4 stars
Very simple and quick. Perfect for a healthy dinner!

  37. 1 star
Looks delicious but I don’t eat vegetables that turn brown. No thanks!

    1. 2 stars
Why not just eat it raw? Who likes their food turnin brown? 🤷‍♂️

    2. User avatar amos.jacobi83 says:

      4 stars
I understand your hesitation! But browning can actually enhance the flavor. Maybe give it a try? 🍽️

  38. User avatar arnold.halvorson says:

    3 stars
Pretty good, but my florets ended up a little soggy. I think I overcrowded the pan—single layer really matters.

    1. User avatar selena.wuckert50 says:

      5 stars
Totally agree—single layer is key. If the pan’s crowded, they steam instead of roasting, so soggy florets make sense. Next time, use two trays or give them a little more space and don’t skip the halfway stir.

  39. User avatar bernarda.zulauf78 says:

    5 stars
I was skeptical but WOW! This recipe is simple yet so flavorful! My new go-to side dish.

  40. User avatar jamaal.mayert1960 says:

    1 star
Why are you roasting vegetables? Just steam them, it’s easier…

  41. User avatar liberal.hero says:

    4 stars
Simple and healthy! I added some lemon juice for extra flavor. Will make again!

  42. 1 star
Why roast when you can steam? Seems pointless to me.

  43. User avatar rich.landlord says:

    3 stars
This is great but where’s the protein? We need more than just veggies!

  44. User avatar Oolon Colluphid says:

    4 stars
Pretty solid base recipe. Mine took closer to 30 minutes because my oven runs hot/cold (?) but the flavor was still great. Next time I’ll cut florets more evenly.

    1. 5 stars
Nice! I also have a temperamental oven, so 25 min never quite works for me either. Cutting the florets more evenly is such a good fix—love that you noticed it.

  45. User avatar winfred.murray says:

    4 stars
Simple and delicious! Even my picky eater enjoyed it.

  46. User avatar king.gerlach22 says:

    2 stars
How do you know if its tender? Does it break apart easily? I’m confused.

    1. 3 stars
I think tender means it falls apart, like wet paper, right? But this recipe sounds good anyway, I’ll give it a try!

    2. User avatar stephenie.bode1979 says:

      5 stars
You’ll know it’s tender when you can easily pierce it with a fork. It should break apart with slight pressure. Just keep an eye on it while roasting!

  47. User avatar delma.daugherty says:

    2 stars
Too spicy for my taste!!! I hardly felt my tongue after! Yikes!

  48. User avatar hugh.greenfelder says:

    3 stars
I think I put too much pepper. It’s a little spicy for my taste, but my friends loved it.

  49. User avatar anya.casper says:

    4 stars
Pretty solid and easy. I was worried 25 minutes wouldn’t be enough, but it browned nicely after I stirred. Next time I’ll go a little heavier on the pepper flakes.

    1. User avatar shannon.ritchie31 says:

      5 stars
Totally agree—25 min is about right if you stir halfway. I always watch for the browned bits more than the clock. Pepper flakes next time sounds perfect.

  50. User avatar alexander.macejkovic56 says:

    4 stars
Roasted broccoli is life! I added some lemon juice on top after it came out. So fresh!

  51. User avatar Frost Troll says:

    5 stars
Made this tonight—super easy and the paprika + red pepper flakes combo is perfect. My whole tray browned nicely after the halfway stir.

  52. User avatar Sand-Dial says:

    2 stars
Roasting veggies is just stealing their vitamins!!! You should steam instead!

  53. User avatar shizuko.zemlak says:

    4 stars
I used frozen florets and it turned out fine. Just adjusted the time a bit!

    1. User avatar art.beier says:

      5 stars
Thanks for sharing! I’ve always used fresh, but I’ll try frozen next time. Good to know it worked!

  54. User avatar charolette.douglas63 says:

    5 stars
Tried this tonight—so easy and the browned spots really make it. I added a squeeze of lemon at the end and it tasted restaurant-level.

  55. 5 stars
This recipe is life-changing! I never liked veggies but this was absolutely delicious!

    1. User avatar lizzzard says:

      5 stars
Wow, that’s amazing! I was skeptical about veggies too, but this recipe really changes everything. Can’t wait to try it!

    2. User avatar Josefa Robel says:

      2 stars
Are you sure? I mean, it’s just roasted veggies… I don’t know if it can really be life-changing.

  56. User avatar dionne.haag says:

    2 stars
I think the cooking time was too long. My veggies were burnt!

  57. 4 stars
Never had broccoli like this before!! Never thought to roast them, but I’ll definitely do it again.

  58. User avatar Pizpot Gargravarr says:

    1 star
I forgot to preheat the oven and ended up microwaving it. Not the same.

  59. User avatar grasshopper says:

    4 stars
My kids loved it! Great way to get them to eat veggies. Thanks!

    1. User avatar billy.hettinger65 says:

      5 stars
That’s awesome to hear! My kids usually run from veggies, but I’ll give this a shot!

    2. User avatar Kellee Sawayn says:

      2 stars
Veggies? Yuck! How can kids like that? Are you sure they ate it?

  60. User avatar anja.koch29 says:

    5 stars
Made this tonight—so easy and honestly it tastes way fancier than it is. The browned bits are the best part. I used a little extra paprika and it was perfect.

    1. User avatar karmen.crooks45 says:

      5 stars
Yes!! The browned bits really make it. I always roast a little longer than the recipe says so they get extra caramelized.

  61. User avatar larry.schamberger34 says:

    4 stars
Not bad at all. I’m not usually a cauliflower person but these actually had flavor. Took well with a lemon squeeze.

  62. User avatar alonso.lueilwitz1973 says:

    1 star
Bland 😕—didn’t get enough seasoning for me. I should’ve salted more and maybe added Parmesan or something.

    1. User avatar anonymous_hacker says:

      5 stars
Totally get that—these veggies really need a “to taste” hand. Next time I’d go a bit heavier on salt and add Parmesan after roasting for extra punch.

  63. User avatar karina.harvey says:

    4 stars
I thought it would be bland with just oil + spices, but the paprika + garlic is doing work. Next time I’ll double the red pepper flakes.

    1. User avatar adina.west55 says:

      5 stars
Totally agree—paprika + garlic really changes it. I also go a bit heavy on the red pepper flakes; it makes it taste “real” somehow 😄

  64. User avatar Dionne Turner says:

    5 stars
This is a fantastic side dish! So simple but full of flavor. Got a thumbs up from my kids!

    1. User avatar kimbra.hand says:

      5 stars
Glad to hear your kids loved it! This is one of my go-to recipes too.

  65. User avatar Jarvan IV says:

    3 stars
I totally forgot to stir halfway and it still turned out okay—just less even browning. Still tasty.

  66. 2 stars
Kinda bland for me. Maybe my paprika was weak. Next time I’ll add Parmesan or a drizzle of balsamic because otherwise it feels plain.

    1. User avatar Mr. Prosser says:

      4 stars
Hmm I get that—mine always tastes more flavorful if I really let the garlic roast. I’d try bumping the paprika (or adding a little smoked paprika) before you go the balsamic/Parmesan route.

  67. User avatar kris.conn11 says:

    2 stars
Not my favorite. The garlic was too strong for my taste. I prefer mine without it.

  68. User avatar Dro'marash says:

    4 stars
Perfect for a healthy side! Who knew roasting makes veggies taste so good? Yum!

  69. User avatar ALTplusF4 says:

    3 stars
400°F is like… 300°C? idk 😅 but anyway it was fine. my garlic got a lil burnt tho.

  70. 4 stars
I’m not a cauliflower person but this was actually good. Easy to toss together and the garlic smell is legit.

  71. User avatar geraldo.tromp36 says:

    2 stars
Okay but… 400°F is too hot maybe? Mine charred on the edges. Tasted fine, just looked like I overdid it. 😅

  72. User avatar Evan Hamill says:

    5 stars
I used smoked paprika and it tasted restaurant-y. Would roast a few minutes longer next time for extra crisp edges.

  73. User avatar Lunkwill and Fook says:

    3 stars
Ok but why only 25 minutes?? My florets were still hard at that point. I guess it depends how big you cut them. I’d say 30-35 for me.

  74. User avatar toccara.gislason says:

    4 stars
I’m not a veggie person, but this smelled amazing and I ate more than I thought I would. The red pepper flakes made it.

  75. User avatar myung.hackett says:

    3 stars
I followed the recipe exactly but my broccoli was mushy 😕. Maybe I roasted it too long?

  76. User avatar courtney.mraz14 says:

    2 stars
This was super bland for me. I think I accidentally used old paprika or something. Maybe also needed more salt—“to taste” really matters here.

  77. 4 stars
Roasted veg always works, but does anyone else stir and then the florets break? Lol. Still delicious.

  78. User avatar lucila.schaden1955 says:

    5 stars
OMG I added cheese on top before roasting and it was AMAZING!!!

  79. User avatar broderick.gorczany55 says:

    2 stars
Why does everyone roast veggies at 400? I did 425 and it burned slightly. Timing matters more than the temperature, I guess.

  80. 3 stars
Mine came out a bit soggy because I overcrowded the tray (rookie move). When I re-roasted with more space, it finally got that nice browned look. Lesson learned.

  81. 2 stars
Honestly, I find cauliflower boring unless it’s covered in cheese. This was okay, but it needed more seasoning for my taste.

  82. User avatar Eccentrica Gallumbits says:

    2 stars
hmmm im not sure the kids will like. they scream when I say brocolli

  83. User avatar darnell.kunze says:

    5 stars
5 stars because garlic makes everything better! 🧄 Love it!

  84. User avatar kirby.bogan1967 says:

    3 stars
Honestly thought it would be bland. I added lemon juice at the end and a sprinkle of parmesan and then it was way better. Without extras, it needs more seasoning.

  85. User avatar Samwise Gamgee says:

    4 stars
400°F for 25 minutes is a bit optimistic for me. I like them more caramelized, so I added 10 more. Still tasted good though—crispy edges are the goal.

  86. 5 stars
So good! My kids ate broccoli 😅. I added a tiny drizzle of balsamic after roasting and it was a hit. Definitely making this again.

  87. User avatar toi.berge29 says:

    5 stars
I followed it exactly and my veggies came out perfect—tender inside, caramelized outside. Great weeknight side!

  88. User avatar Galaxia Woonbeam says:

    5 stars
Roasting at 400°F works! I tossed with the oil/garlic/spices and got nice caramelization. Could eat the whole tray by myself. Next time I’ll add lemon juice at the end for brightness.

  89. User avatar sari.legros90 says:

    5 stars
Roasting is the best way to cook these. So much flavor! I’m making again tomorrow.

  90. User avatar brooks.greenfelder1982 says:

    5 stars
Made this tonight—so simple and honestly way tastier than I expected. Browning in the spots is the key. I used smoked paprika too, which bumped it up a lot.

    1. User avatar Owen Money says:

      5 stars
Yes!! The browned spots are everything—makes it taste way more “roasty” than steamed. I’ve been doing this exact method and it never disappoints.
