Pot Stickers (Chinese Dumplings)

January 3, 2025

Pot stickers, also known as jiaozi in Chinese cuisine, are delicious dumplings filled with a savory mixture of ground meat, vegetables, and seasonings, then pan-fried to crispy perfection. The tender, flavorful filling contrasts beautifully with the crispy, golden-bottomed crust, making pot stickers a favorite appetizer or snack. They’re easy to make at home and can be customized with a variety of fillings to suit your taste.

To start, the filling typically includes ground pork, beef, or chicken, mixed with finely chopped cabbage, ginger, garlic, and green onions. Some recipes also include shiitake mushrooms or other vegetables for added texture and flavor. The filling is seasoned with soy sauce, sesame oil, and a pinch of salt and pepper, giving it a well-rounded, umami-rich taste. The ingredients are mixed together until well combined, creating a fragrant, savory stuffing for the dumpling wrappers.

The wrappers themselves are thin, round discs of dough that hold the filling inside. You place a spoonful of the filling in the center of each wrapper, then fold the edges over and pinch them together to form a half-moon shape. To seal the edges, a little water is often dabbed along the perimeter to help them stick.

Cooking pot stickers is a two-step process. First, the dumplings are pan-fried in a small amount of oil until the bottom is golden and crispy. Then, water is added to the pan, and the pot stickers are covered to steam through, ensuring the filling is fully cooked while keeping the exterior crispy. This method creates a perfect balance of textures — crispy on the bottom and soft on the top.

Pot stickers are typically served with a dipping sauce made from soy sauce, rice vinegar, sesame oil, and sometimes a bit of chili paste or sugar to add a sweet and spicy kick. They can be served as a snack, appetizer, or part of a larger meal, and they’re perfect for dipping and sharing. Whether you make them from scratch or buy pre-made wrappers, pot stickers are a versatile and crowd-pleasing dish that’s sure to satisfy.
