Ingredients
  

  • 250 g flour All-purpose
  • 125 g butter Cold and cubed
  • 50 g sugar
  • 1 egg yolk Large
  • 1 tablespoon ice water
  • 300 g pineapple jam Store-bought or homemade

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • In a large bowl, combine the flour and sugar.
  • Add the cubed butter and use your fingers to rub it into the flour mixture until it resembles breadcrumbs.
  • Add the egg yolk and ice water, and mix until the dough comes together.
  • Wrap the dough in plastic wrap and chill in the refrigerator for 15 minutes.
  • Roll out the dough on a lightly floured surface to a 1/4-inch thickness.
  • Cut out circles using a tart cutter and place into tart molds.
  • Fill each tart with a spoonful of pineapple jam.
  • Optionally, create a lattice design with leftover dough on top of each tart.
  • Bake for 20 minutes, or until the tarts are golden brown.
  • Allow the tarts to cool before serving.

      Totally get it—store-bought pineapple jam can be *really* sweet. Next time I’d try reducing the sugar in the dough (or using a less-sweet jam) and chilling longer than 15 min. Also if the dough keeps shrinking, thicker dough + longer chill usually helps.

      I think it’s the butter. Mine did the same thing and I was like, “why it shrinking?!” Maybe your oven 180C too hot? I rolled it kinda thick too but didn’t chill long enough. I chill like 1 hour and it works way better. Pineapple jam still sweet tho 😅

      Omg yes 😅 I’m definitely adding this to my weekend baking rotation. The jam amount and 20 min at 180°C feels so doable.

      I tried similar tarts once and burned the edges too… so I’m glad you warned about the oven. But wait—pineapple jam is usually too watery, do you drain it or bake longer?

    Nope. 250g flour with only 125g butter and one yolk seems too dry. I think it needs way more liquid—mine cracked immediately.

    180°C seems high to me—mine browned fast and the crust got a little hard. Could be my oven, but I’d lower it next batch.

    I messed up the dough a little—ended up too sticky because my “ice water” wasn’t really cold enough. Still tasted good though, just not as crisp. Will try again.

      Ugh, sticky dough is the worst—but honestly “tasted good” is a win. Next time chill it a bit longer or use truly ice-cold water. Even 5–10 min more in the fridge helps a lot for crispness.

      Maybe you need more flour? Mine gets sticky sometimes too and I just add a little more until it stops sticking. Also 15 minutes chilling feels short to me—I’d do like half an hour.
