Ingredients
  

  • 500 grams potatoes peeled and cubed
  • 1/2 cup pesto homemade or store-bought
  • 1 tablespoon olive oil
  • 1/4 cup pine nuts toasted
  • to taste salt
  • to taste black pepper freshly cracked
  • 1/2 cup cherry tomatoes halved

Instructions
 

  • Bring a pot of salted water to a boil and add the cubed potatoes. Cook until tender, about 20 minutes.
  • Drain the potatoes and let them cool slightly.
  • In a large bowl, combine the potatoes, pesto, olive oil, and cherry tomatoes.
  • Gently mix until the potatoes are well coated with the pesto.
  • Season with salt and freshly cracked black pepper to taste.
  • Top with toasted pine nuts before serving.
