Ingredients
  

  • 1 pound pork tenderloin sliced into rounds
  • 1 eggplant large, sliced into rounds
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place the pork rounds and eggplant rounds on a baking sheet.
  • Drizzle with olive oil and season with salt, pepper, oregano, basil, garlic powder, onion powder, and paprika.
  • Bake for 15-20 minutes or until the pork is cooked through and the eggplant is tender.
