Pesto potato salad is one of those dishes that manages to be comforting and fresh at the same time. It takes the classic potato salad we all know and transforms it into something brighter, more vibrant, and undeniably flavorful. By swapping the traditional mayo-based dressing for pesto, this salad gets a big hit of herbs, garlic, and Parmesan, offering a Mediterranean twist on a backyard staple.
The star of the show is, of course, the pesto. Whether you make your own with fresh basil, pine nuts, and olive oil or grab a good-quality jar from the store, it adds bold, earthy flavor to every bite. When tossed with warm, just-cooked potatoes, the pesto sinks in beautifully, making each piece savory and satisfying. The potatoes absorb that rich green sauce in a way that feels indulgent but still light.
Beyond the basics, this salad is easily customizable. Add in green beans or arugula for color and crunch, or toss in cherry tomatoes for a juicy burst of sweetness. A handful of toasted nuts like almonds or walnuts can add texture, while a sprinkle of crumbled feta or shaved Parmesan brings creaminess and a salty bite. You can serve it warm, at room temperature, or chilled, depending on the vibe of your meal.
Pesto potato salad works equally well for casual cookouts or fancier dinner parties. It pairs beautifully with grilled chicken, salmon, or steak, but it’s also hearty enough to stand on its own. For a vegetarian main, it can be served alongside roasted vegetables or a fresh garden salad.
It’s also a great make-ahead option, as the flavors deepen over time. Leftovers taste even better the next day, making it a smart choice for meal prep or weekday lunches. Whether you’re feeding a crowd or just looking for something new to try, pesto potato salad is a guaranteed crowd-pleaser that never goes out of style.

This potato salad is the best! The pesto adds such a great flavor!
Totally agree! The pesto makes everything better. I can’t wait to try this!
I dunno, man. Pesto in potato salad? Sounds a bit weird to me. I’ll stick to mayo.
Did you really need 500g of potatoes? Seems like a lot. 😅
I tried this recipe and it turned out way too oily for my taste.
Oily? Really? I used the same recipe and it was just right! Maybe you added too much pesto?
I’m sorry to hear that! Maybe try using less olive oil next time? It could help balance it out.
I’m not sure about the combination of potatoes and pesto… doesn’t sound right.
Eh, too many steps for just a potato salad.
10/10 would recommend. Perfect for summer BBQs!
Super easy to make, even for someone like me who burns toast. 😂
Pine nuts are just fancy nuts. I used sunflower seeds instead and it was good enough!
I put in some diced bell peppers too. YUM!
IDK, but aren’t peppers a bit too much for potato salad? Just sayin’.
Bell peppers sound like a great addition! I love the crunch they bring!
Do the potatoes gotta be peeled? I like the skins on them for flavor. 🤔
Yum! Simple and quick recipe. I’ll make it again for sure!
Glad to hear you enjoyed it! The pesto really makes it shine. 🌟
I forgot to toast the pine nuts and it still tasted good. Make sure to do that tho!
Not sure I get the point of putting pesto in potato salad—doesn’t it overpower the potatoes? It was flavorful, sure, but I kinda wanted something more “classic” and less herby.
Too much oil! I couldn’t even taste the potatoes. I’ll try less next time.
This potato salad is AMAZING! So flavorfull. I added some garlic and it made it even better. Thanks!
This recipe is okay but it was missing something…maybe garlic? Just my opinion.
I tried making this with store-bought pesto, it was okay but not as good as I thought. Need to try it again with homemade pesto maybe.
This recipe is so easy to make, even I (not good cook) made it! Taste was gr8!
Super easy for a weeknight side. I tossed everything while the potatoes were still warm so the pesto clung better. Big win. Will serve with grilled chicken next time!
Pesto is not good for potato salad, I prefer mayo. But it was ok I guess.
Mayo is way better! Pesto ain’t for everything. Just saying, I won’t try this one.
I totally disagree! Pesto adds a nice flavor contrast to potatoes. Mayo is just too heavy. Give it another try!
Potatos salad? Yea I like it if made right! This recipe tho…idk.
Wasn’t a fan of the pine nuts, too crunchy with the soft potatoes. Next time I’ll try without.
Super easy to make, loved how colorful it looked! Will definitely make again.
Looks nice but I wonder if the pesto overpowers the potatoes. Could be too strong for some.
I’m so glad you enjoyed it! It’s really a hit at parties, so colorful! 🌈
I dunno. Just doesn’t seem right to mix potatoes with pesto…?? Idk, not for me.
I totally disagree! Pesto and potatoes are a match made in heaven! You just gotta try it. 😍
Lol, I think it’s weird too. Potatoes should be with butter, not pesto. Not my thing.
Too much pesto, I couldn’t eat it. Maybe I did it wrong. I just wish it was simpler.
I made this for a picnic and everyone loved it! So easy and fresh! 🌿🥔
Wrong question: why are we boiling the potatoes in salted water but then adding salt again? I guess it’s fine, but I only added pepper and it tasted way better to me.
This was delicious! I didn’t have pine nuts, so I used sunflower seeds instead. Still yummy!
Why use pesto in a potato salad? Sounds weird, but tried it and it was okay. Just different.
Can I use sweet potatoes instead? Trying to eat healthy.
This was amazing! The pesto gives it such a unique flavor. My family loved it!
I agree! The pesto really does make it special. I added some grilled chicken on top and it was a hit!
Kinda skeptical about this. Potatoes and pesto? Sounds weird to me. But hey, if your family liked it, that’s awesome!
Isn’t pesto usually for pasta? I’m confused why it goes with potatoes… lol.
I didn’t have cherry tomatoes, used regular ones instead. It turned out fine! Recommend this!
This is the best potato salad I’ve made! The pesto adds such a great flavor.
So good. I will definitely make again! 😍
I’m so glad you liked it! The pesto really adds a nice flavor. 🌿
More salt please! I thought it was kinda bland.
I hear ya! A bit more salt can really bring out the flavors. Maybe try adding it at the end for a better taste?
Awesome recipe, served it at a picnic and everyone loved it! By the way, I used cashews instead of pine nuts.
I’m glad everyone loved it! Cashews are a great substitute! I might try that next time.
I followed it exactly, but my potatoes were a bit undercooked at 20 minutes. Maybe my cubes were too big. After I cooked a little longer and chilled it, it tasted better.
I dont know about putting pesto in potato salad…sounds weird.
I don’t understand why you would put pesto on potatoes. Seems strange to me.
Honestly, it’s just potatoes. You can put anything on them. It ain’t that strange.
I think it’s a great combo! Pesto adds so much flavor. Don’t knock it till you try it!
This salad is awesome! Perfect for summer BBQs. Made it twice already!
It was ok, but I felt like it needed something… maybe some cheese?
Made this for a BBQ and everyone loved it! So fresh and tangy!
I tried using store-bought pesto but it tasted kinda bland. Maybe I’ll try making my own next time.
I totally agree, store-bought pesto can be hit or miss. Making it from scratch is so much better! Just toss in some basil, garlic, and cheese!
Really? I thought store-bought was good enough… maybe I gotta up my game, LOL.
Kinda bland for me. Maybe I needed more pesto? Also I used canned tomatoes once (oops) and it didn’t taste right.
Potatoes should just be potatoes. Why ruin them with all this green stuff? 😒
Easy and quick! Pesto potato salad is a keeper! 10/10
I don’t see how potatoes and pesto go together. Seems weird to me.
Really good mix! But I used walnuts instead of pine nuts and it worked out fine. Can’t go wrong with potatoes!
Walnuts? That’s interesting! I never thought of that. I’ve always used pine nuts since they add a nice crunch. Might have to try it your way!
Meh. Pine nuts were a pain and I didn’t feel like it needed them.
Really good idea, but 20 minutes maybe depends on how big the cubes are. Mine were slightly underdone at 20—needed like 5 extra minutes. Otherwise great pesto-potato combo.
Totally agree—20 minutes really depends on cube size. Mine always cook faster if I make them small, but bigger chunks definitely need that extra 5 minutes. Thanks for calling it out!
This potato salad is delicious! The pesto really adds a nice flavor. Will definitely make it again!
Okay, pine nuts are expensive tho. I swapped with crushed walnuts and it was still pretty tasty. Would I make it again? Maybe, but only if I’m feeling fancy.
I followed it exactly and my potatoes still felt kind of firm after 20 minutes. Could be my cubes were bigger, but I’d adjust cooking time next time.
Made it exactly as written and it was good, but I think 20 minutes for the potatoes might vary—mine took closer to 25 before they were tender. Next time I’ll probably let them cool fully so it doesn’t get too oily.
I think I put too much salt, but still yummy. Gonna try again but less salt this time.
Pesto? What is that? LOL. Never heard of it before.
Verry good! My kids ate it all. 🙂
I’m glad to hear your kids loved it! This is a great way to sneak in some veggies!
Super easy and quick! Perfect for a fast summer dish.
I tried this last night and it was super yummy! Definitely making it again. 😊
I didn’t have pine nuts, used walnuts instead. Still turned out good, but not as crunchy.
This turned out so good! I love how easy it is to make. Definitely a keeper!
Made this for lunch and it was a hit—super flavorful without being complicated. I used store-bought pesto and still tasted amazing. Toasting the pine nuts was the right move.
Delicious! But what’s with the pine nuts? They’re too crunchy for me.
I’m skeptical about pesto with potatoes because pesto can get kinda strong, but honestly it balanced well. Next time I’ll add a tiny squeeze of lemon just to brighten it.
This turned out super flavorful. The pesto clings to the potatoes nicely, and the pine nuts add a great crunch. I used store-bought pesto and it was still delicious.
This turned out okay, but mine looked a little oily. I think I added too much olive oil (oops). Still tasty though, and the tomatoes help cut the richness.
Oily pesto dishes happen to the best of us 😅 Next time I’d start with less olive oil and add only if it seems dry. Glad it was still tasty!
Mine got oily too once. I swear the pesto was already greasy though—like, why add more oil? I just toss the pesto in and skip the olive oil unless needed. Also I forgot to toast the pine nuts, still tasted “fine.”
I don’t really like pesto, so I wasn’t a fan of this. I prefer my salad with mayo. Maybe I’ll try it with ranch next time.
Why would you ruin a good salad with mayo? Pesto is way better! You just have to try it again!
I totally get that! Pesto isn’t for everyone. Mayo does add a nice creaminess. Good luck with the ranch! 🌿
This is such a refreshing twist on classic potato salad. The pesto flavor really comes through without being too heavy, and the cherry tomatoes add a nice pop. I used store-bought pesto and it still tasted homemade!
Not bad, but mine got a little too salty. Maybe because my pesto was salty already—salt should be “optional” at the end for sure.
Totally agree—if the pesto is already salty, adding “to taste” salt at the end can sneak up on you. Next time I’ll skip the salt completely until after a quick taste.
Made this for a BBQ and everyone asked for the recipe. I used store-bought pesto and it still came out super flavorful. Toasting the pine nuts was a game changer.
Not gonna lie, pesto + potato feels weird to me. Like… I don’t hate it, but I expected more basil punch and less “potato” if that makes sense. Still edible.
Pine nuts are expensive! Can I use walnuts instead? But the salad was really tasty.
Walnuts could work just fine! They have a different flavor, but it’s worth a try. Glad you liked the salad!
Yum! Potato salad but fancy. I made it for a BBQ and everyone asked for the recipe. 10/10 would make again!
Took a bit longer to cool than I expected, but once it came together it was great. Next time I’ll toast the pine nuts a touch longer for extra nuttiness.
Yummy!
Totally agree! This sounds delicious! Can’t wait to try it.
Yummy and filling! My kids even liked it, which is a win for me. Will make again!
Why pine nuts? I didn’t have any so I used walnuts and it was… okay. Wouldn’t say it’s the same though. Still tasty!
I accidentally used too much pesto (like, heaping 1/2 cup) and it turned out kinda salty/garlicky. Still delicious though—just go easy with seasoning since pesto already has flavor.
Sounds like a lot of work for a potato salad. I just throw potatos with mayo, no time for all this mixing.
Potato + pesto = genius! Can’t believe I never thought of this before. Totally doing it.
Really solid idea—pesto makes it taste way more exciting than plain mayo potato salad. Mine needed a tiny extra splash of olive oil so it didn’t feel too thick, but otherwise perfect.
Made this for a picnic and it was a hit! Everyone loved it!
That’s awesome! I’m glad it was a hit! Pesto makes everything better. 🥗
I don’t see the point of adding pesto to potato salad… sounds weird to me.
Super easy and delicious! I added some feta cheese and it was great.
Yummy. Potato salad #1
Tasty, but I think the pesto amount might be slightly heavy depending on the pesto. Next time I’ll start with 1/3 cup and add more gradually so it’s not overpowering.
Totally agree—pesto can vary a lot. I’ve had batches that were super strong and it basically took over the whole salad. Starting smaller is the way to go 👌
I was worried the pesto would overpower everything, but somehow it’s balanced. The tomatoes give it a nice little pop.
I tried it but I forgot to toast the pine nuts. It tasted kinda bland to be honest. Also, I don’t like tomatoes in salad so I left them out (maybe that’s why?).
