Pesto potato salad is one of those dishes that manages to be comforting and fresh at the same time. It takes the classic potato salad we all know and transforms it into something brighter, more vibrant, and undeniably flavorful. By swapping the traditional mayo-based dressing for pesto, this salad gets a big hit of herbs, garlic, and Parmesan, offering a Mediterranean twist on a backyard staple.
The star of the show is, of course, the pesto. Whether you make your own with fresh basil, pine nuts, and olive oil or grab a good-quality jar from the store, it adds bold, earthy flavor to every bite. When tossed with warm, just-cooked potatoes, the pesto sinks in beautifully, making each piece savory and satisfying. The potatoes absorb that rich green sauce in a way that feels indulgent but still light.
Beyond the basics, this salad is easily customizable. Add in green beans or arugula for color and crunch, or toss in cherry tomatoes for a juicy burst of sweetness. A handful of toasted nuts like almonds or walnuts can add texture, while a sprinkle of crumbled feta or shaved Parmesan brings creaminess and a salty bite. You can serve it warm, at room temperature, or chilled, depending on the vibe of your meal.
Pesto potato salad works equally well for casual cookouts or fancier dinner parties. It pairs beautifully with grilled chicken, salmon, or steak, but it’s also hearty enough to stand on its own. For a vegetarian main, it can be served alongside roasted vegetables or a fresh garden salad.
It’s also a great make-ahead option, as the flavors deepen over time. Leftovers taste even better the next day, making it a smart choice for meal prep or weekday lunches. Whether you’re feeding a crowd or just looking for something new to try, pesto potato salad is a guaranteed crowd-pleaser that never goes out of style.

This potato salad is the best! The pesto adds such a great flavor!
Totally agree! The pesto makes everything better. I can’t wait to try this!
I dunno, man. Pesto in potato salad? Sounds a bit weird to me. I’ll stick to mayo.
Did you really need 500g of potatoes? Seems like a lot. 😅
I tried this recipe and it turned out way too oily for my taste.
Oily? Really? I used the same recipe and it was just right! Maybe you added too much pesto?
I’m sorry to hear that! Maybe try using less olive oil next time? It could help balance it out.
I’m not sure about the combination of potatoes and pesto… doesn’t sound right.
Eh, too many steps for just a potato salad.
10/10 would recommend. Perfect for summer BBQs!
Super easy to make, even for someone like me who burns toast. 😂
Pine nuts are just fancy nuts. I used sunflower seeds instead and it was good enough!
I put in some diced bell peppers too. YUM!
IDK, but aren’t peppers a bit too much for potato salad? Just sayin’.
Bell peppers sound like a great addition! I love the crunch they bring!
Do the potatoes gotta be peeled? I like the skins on them for flavor. 🤔
Yum! Simple and quick recipe. I’ll make it again for sure!
Glad to hear you enjoyed it! The pesto really makes it shine. 🌟
This potato salad is AMAZING! So flavorfull. I added some garlic and it made it even better. Thanks!
This recipe is okay but it was missing something…maybe garlic? Just my opinion.
I tried making this with store-bought pesto, it was okay but not as good as I thought. Need to try it again with homemade pesto maybe.
This recipe is so easy to make, even I (not good cook) made it! Taste was gr8!
Wasn’t a fan of the pine nuts, too crunchy with the soft potatoes. Next time I’ll try without.
Too much pesto, I couldn’t eat it. Maybe I did it wrong. I just wish it was simpler.
This was delicious! I didn’t have pine nuts, so I used sunflower seeds instead. Still yummy!
Why use pesto in a potato salad? Sounds weird, but tried it and it was okay. Just different.
Isn’t pesto usually for pasta? I’m confused why it goes with potatoes… lol.
I didn’t have cherry tomatoes, used regular ones instead. It turned out fine! Recommend this!
So good. I will definitely make again! 😍
I’m so glad you liked it! The pesto really adds a nice flavor. 🌿
Awesome recipe, served it at a picnic and everyone loved it! By the way, I used cashews instead of pine nuts.
I’m glad everyone loved it! Cashews are a great substitute! I might try that next time.
I don’t understand why you would put pesto on potatoes. Seems strange to me.
Honestly, it’s just potatoes. You can put anything on them. It ain’t that strange.
I think it’s a great combo! Pesto adds so much flavor. Don’t knock it till you try it!
Made this for a BBQ and everyone loved it! So fresh and tangy!
Easy and quick! Pesto potato salad is a keeper! 10/10
