A flavorful chicken dish made with vibrant pesto sauce that is perfect for any meal.
Ingredients
- 4 pieces chicken breasts Boneless and skinless
- 1/2 cup pesto sauce Homemade or store-bought
- 1 cup cherry tomatoes Halved
- 1/4 cup parmesan cheese Grated
- 2 tablespoons olive oil Extra virgin
- to taste salt
- to taste black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and black pepper on both sides.
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts to the skillet and sear until golden brown, about 2-3 minutes per side.
- Remove the skillet from the heat and spread the pesto sauce evenly over the chicken breasts.
- Scatter the halved cherry tomatoes around the chicken in the skillet.
- Sprinkle the grated parmesan cheese on top of the chicken.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (75°C).
- Remove the skillet from the oven and let the chicken rest for a few minutes before serving.
- Serve the pesto chicken with the roasted cherry tomatoes and your choice of side dish.
