Paella Verdura is a vibrant, vegetable-forward twist on the classic Spanish paella, celebrating fresh, seasonal produce in every colorful bite. This dish is perfect for those seeking a lighter, plant-based alternative to traditional seafood or meat paellas, without sacrificing the rich, comforting flavors that make paella a beloved dish worldwide. With its mix of tender vegetables, saffron-infused rice, and fragrant spices, Paella Verdura is as pleasing to the eyes as it is to the palate.
The heart of any paella is the rice, and in Paella Verdura, it’s cooked to perfection with a blend of aromatic vegetables like bell peppers, peas, artichokes, zucchini, and green beans. Sautéed in olive oil with onions, garlic, and a touch of smoked paprika, the vegetables release their natural sweetness, infusing the rice with layers of flavor. A pinch of saffron not only gives the dish its iconic golden hue but also adds a subtle floral depth that elevates every bite. Stirring is minimal to encourage the formation of the socarrat, the cherished crispy layer at the bottom of the pan, which adds a delightful texture contrast.
Paella Verdura is highly versatile and can be adapted based on what’s fresh and in season. Cherry tomatoes, asparagus, mushrooms, or even roasted cauliflower can be added for extra flavor and color. Fresh herbs like parsley or thyme brighten the dish just before serving, enhancing both aroma and presentation. Lemon wedges are a must, offering a tangy finish that balances the richness of the saffron and olive oil.
This vegetable paella is ideal for sharing with friends and family, served straight from the pan for a casual, communal dining experience. It pairs beautifully with a crisp white wine like Albariño or Verdejo, which complements the earthy flavors of the vegetables and the subtle spice of saffron.
Paella Verdura proves that vegetarian dishes can be just as flavorful, hearty, and satisfying as their traditional counterparts. Its combination of vibrant vegetables, perfectly cooked rice, and aromatic seasonings makes it a centerpiece-worthy dish that celebrates fresh ingredients and the joy of cooking. Whether for a weeknight dinner or a festive gathering, Paella Verdura is a delicious, colorful, and wholesome choice.

OMG this is SO GOOD! My kids even ate it without complaining! I’ll make it again for sure.
Looks good but I doubt my family will eat it. They don’t like green beans, and saffron is too fancy for us. Anyone tried it with chicken?
I’m so glad to hear that your kids loved it! It’s always a win when they don’t complain about dinner. What sides did you serve with it?
Yum! 👌
This paella was so vibrant and full of flavor! Loved the saffron touch. 5 stars!
Saffron is so expensive! Is it really necessary for the flavor? I’m skeptical.
I’ve never tried making paella before, but it sounds delicious! Do you think I could add chicken?
It turned out a bit mushy for me. Maybe I added too much broth? Not sure if I’ll try again.
Instructions were a bit confusing, but the result wasn’t bad. I’ll give it another shot.
I think if you follow the instructions closely, it’s actually pretty easy. What was confusing for you?
I dont know what saffron is, but I put some curry powder instead. Works for me! 😂
Easy and quick! Perfect for a weeknight dinner. I added some chickpeas too for extra protein!
Eh, not my thing. I prefer meat in my paella. This just felt like a vegetable soup with rice.
Couldn’t find Bomba rice, so I used Arborio. It was tasty but I didn’t get that classic bottom crust (socarrat). Might be my heat.
Perfect dish for a cozy night in, but I left out the green beans (don’t like them) and it was still great!
This sounds delicious! Can’t wait to try it out with my family!
Made this tonight—so bright and veggie-forward! The saffron smell is seriously next level. I used frozen peas and it still came out great. Will definitely make again.
Love hearing that! The saffron really does make it so “restaurant-y” (in a good way). Frozen peas still working is a nice win too 😄
I’m not sure why you say “without stirring” because I always stir paella or it clumps 😅 But the veggies were tasty and the saffron smell is legit.
Just like my abuela used to make! A real gem of a recipe. I added some extra veggies and it was perfect.
I’m not gonna lie, I was skeptical about “stirring, 1-2 minutes” then “don’t stir.” But the paella crust idea makes sense. Mine got a little stuck in spots, but flavor was on point.
Paella? More like paella-ugh! Didn’t turn out well, my friends said it looked weird. Never again.
Sorry to hear that! Maybe it was just an off day? Paella can be tricky, but I love it when it turns out right!
My rice stuck to the pan a little because I used a smaller skillet. Maybe medium heat was too high? Tasted good though—nice flavor.
Totally makes sense—using a smaller skillet changes how heat hits the rice. Medium might’ve been a bit hot for your pan size, especially since the recipe says “uncovered” and not stirring after simmering. I’ve had good luck with a slightly lower simmer so the bottom doesn’t crisp too hard.
I dont know about saffron; too fancy! Could I use chili powder instead? Not sure if that’d work, ideas?
I dunno, saffron is super important to paella! If you dont have it, maybe just skip it instead of using chili? It won’t taste the same.
Chili powder could definitely add a different flavor, but saffron gives it a unique taste! If you want to try chili, maybe use half and half? Just a thought!
I screw up the rice every time! 🙄 but this recipe made it sooo easy! Finally got it right!
Wow, this Paella Verdura is amazing! So much flavor!
This turned out really flavorful—loved the smoked paprika with the saffron. I used frozen peas and it still tasted fresh. Great weeknight paella vibe!
This looks delicious—vegetable paella is such a comfort. I especially love the smoked paprika + saffron combo. Going to try it with bomba rice and not stir after the boil like the instructions say.
Not bad for a veggie dish, I guess.
Yummy! Quick & easy to follow. Just a little bland for my taste, maybe more spices next time.
Glad to hear you found it quick and easy! For more flavor, maybe try adding some cayenne pepper or even a splash of soy sauce? 😊
Bland? Really? I thought it was bursting with flavor! But hey, everyone’s taste is different. More spices next time, for sure!
Not my thing. Too many veggies! Gimme meat!
Hey, I get it! Not everyone likes veggies. You can always add some chicken or shrimp to this recipe!
This paella is super tasty! I loved how the saffron brought out the flavors. Definitely making it again!
I’ve never made paella before and this looked easy but I messed it up. My rice got mushy 😭. Need more practice!
Not bad, but paella needs seafood? That’s what my family says. Also I accidentally added the peas too early and they went mushy. Flavor still good, but texture was off.
Totally get you—traditional paella often has seafood (or at least stock from it). For this verdura version though, the veg + saffron broth still gives it that classic vibe. And yep, peas mushy is a real risk—adding them earlier can do that. Next time I’ll add them later (like the recipe says) or even briefly fold them in near the end.
Yum! Just made it for dinner and my whole family loved it. Will definitely make again!
I’m skeptical about “uncovered without stirring” for 20-25 minutes. Mine dried out and got crunchy on the bottom, so I added a splash of broth near minute 15.
Yeah, I get the skepticism. Uncovered and “no stirring” can work, but only if your heat isn’t too high and there’s enough broth evaporating at a steady pace. If the bottom dries/cooks too fast, a splash like you did is totally reasonable.
Huh, saffron is so expensive! I might skip that part. Still looks good tho.
I only gave it 3 stars because my bell pepper didn’t cook down enough—next time I’ll cut them smaller or cook them longer. Otherwise pretty solid vegetarian paella.
3 stars is fair. I always find bell pepper stays a bit crunchy if it’s chunky. Maybe also cover it for part of the simmer or add it a little earlier? Either way, sounds tasty.
Thanks for the honest feedback! Bell pepper can be stubborn—cutting smaller or just giving it a few extra minutes in step 3 usually fixes it. Glad you still liked the overall paella vibe 🙌
Pretty good, but mine was a little bland until I actually went heavy on the black pepper. Also I think 20-25 min wasn’t enough for my rice, so I added 5 more minutes. Still tasty though.
Smoked paprika in paella is kinda throwing me off. It tastes more like chili than Spanish rice. I might use regular paprika next time.
Saffron is expensive 😅 but I get it. I used a tiny pinch and honestly the color helped a lot. Would make again for sure.
Why no lemon at the end? Paella always tastes better with a squeeze of lemon in my opinion. Still, the veggies sound great.
Soo good! I loved how colorful it looks on the plate!
Easy recipe! I added some chickpeas too. Yum!
Yum!
I used brown rice instead… BIG mistake. 😂
Isn’t paella supposed to have shrimp? I feel like it’s missing somethin. 🤔
Pretty good, but 20-25 minutes felt a little short for my rice. I had to add a splash more broth and cook 5-10 mins longer. Other than that, super nice texture and color.
I made something similar but I didn’t soak saffron… big mistake lol. The saffron water really makes a difference. Thanks for the clear steps!
Quick question: is 3 cups broth enough for 1 cup rice? I feel like it’s low but I’ll trust you. If it works, I’ll be very happy!
Not sure about “any short-grain rice.” Bomba/Arborio vibes are different, but still—looks solid. I’d recommend sticking to bomba if possible, otherwise it might turn a bit mushy.
Mushy paella is tragic 😅 I think “short-grain” can still work, but bomba is definitely the safer bet if someone wants that proper bite. Thanks for the tip!
Yeah I agree—bomba really makes the texture right for paella. I used arborio once and it got a bit too creamy. Next time I’ll stick to bomba.
This looks so bright and comforting. I love that it’s veggie-forward but still has that paella vibe with saffron and smoked paprika.
Saffron is expensive for me, so I used “saffron-style” threads from the store (probably not the real thing). It smelled nice but the color was weaker than I expected. Might try real saffron later.
That makes sense—saffron “style” stuff usually doesn’t give the same deep color or aroma. Your approach with soaking in warm water is spot on though. If you try real saffron later, I bet it pops more.
I tried this recipe but idk if I did something wrong, it was kinda bland…
Maybe try adding more spices next time? I usually put extra garlic or even some chili flakes for a kick!
Bland? What do you expect? It’s veggies, they don’t have much taste if you don’t spice them up right!
Not sure about “without stirring” part. I always stir paella so it doesn’t burn—ended up with uneven texture. Flavor was fine, but the rice didn’t feel right to me.
I dunno, it tastes okay but not really like the traditional one. Where is the seafood?
I don’t know… Paella is supposed to have seafood, right? This feels wrong.
I get what you mean, but this is a veggie twist! It’s still paella but without seafood. Try it, you might like it!
Nah, that’s not paella! Paella needs shrimp and mussels. This is just a glorified rice dish.
Didn’t have saffron, used turmeric instead. Still tasted good!
Turmeric is a good substitute! I always have some in my spice rack. Glad it turned out well for you!
Overly fussy instructions tbh—so many steps. I did not soak saffron properly because I was rushing and it clumped. Would’ve been better if it just said add it in.
Delicious! I’ll be making this for my veggie friends at the BBQ!
Sounds great! Your veggie friends will love it! 😊
Cooking rice is a bit tricky but try to not stir much! It helps! 😄
Why would anyone eat just veggies? Where’s the meat? No thanks.
Easy recipe, but is saffron really necessary? I used turmeric instead, and it turned out fine.
I followed it pretty closely and the rice came out great—nice texture and flavorful broth. Next time I’ll add a little extra paprika for more smokiness.
Nice! I tried something similar but I think my rice got too soft because I stirred too much. When you say uncovered—did it bubble the whole time? I might try your paprika idea too.
That’s awesome! I love when the broth actually flavors the rice like that. Extra paprika sounds perfect for a deeper smokiness—paella really benefits from that.
The proportions feel a bit off to me—3 cups broth for 1 cup rice maybe ends up tight depending on your rice brand. Mine absorbed fast so I added a splash of hot water.
Mine came out perfect with exactly 3 cups. I used Bomba though, so maybe your rice was more absorbent? I’d still keep an eye on it near the end and adjust if needed.
Yeah I agree—rice brands vary a lot. I’ve found 3 cups works best for Bomba/short-grain, but if your rice drinks it up quick, a splash of hot water is totally the move.
This tastes like Spain… maybe. I can’t verify because I’ve never been 😂. But my kitchen smelled amazing and my roommates went back for seconds.
