Olive Oil Cake

October 15, 2024

Olive Oil Cake is a moist, tender dessert that pairs the richness of olive oil with the delicate sweetness of citrus, creating a beautifully balanced cake. This simple yet sophisticated dessert is an ideal choice for those looking for a lighter, more savory-sweet alternative to traditional cakes. With a subtle fruity flavor from the olive oil, along with hints of lemon or orange zest, Olive Oil Cake offers a refreshing and elegant treat that’s perfect for any occasion, from a casual afternoon tea to a festive dinner party.

The base of Olive Oil Cake is made with high-quality olive oil, which replaces the butter typically used in cakes. This gives the cake a slightly savory flavor, which is complemented by the sweetness of sugar and the citrus zest. The olive oil also helps keep the cake moist, resulting in a light, airy crumb that’s rich without being overly heavy. The addition of eggs, flour, and a little baking powder creates the structure for the cake, while a pinch of salt and vanilla enhance the overall flavor.

Citrus zest, such as lemon or orange, brings a burst of freshness to the cake, brightening the flavors and adding a touch of aromatic complexity. For extra depth, you can incorporate a small amount of almond meal or ground almonds, which adds a subtle nuttiness that pairs wonderfully with the olive oil. The result is a cake that’s not overly sweet, with a smooth texture and a delightful balance of fruity, floral, and earthy flavors.

Olive Oil Cake is incredibly versatile and can be served on its own or paired with a variety of toppings. A dusting of powdered sugar, a dollop of whipped cream, or fresh berries make perfect accompaniments, while a drizzle of honey or a spoonful of yogurt can add an extra layer of creaminess. For a more indulgent treat, you can also glaze the cake with a simple syrup infused with herbs like rosemary for a unique twist.

This cake is perfect for anyone who enjoys more subtle, complex desserts. It’s a great choice for those following a Mediterranean diet, as olive oil is the star ingredient, offering healthy fats along with a distinctive flavor. Whether you’re baking it for a special event or enjoying a slice with your morning coffee, this perfect cake is a timeless dessert that’s sure to impress.

Why olive oil? Can’t we just use normal oil? I don’t get it. 3 stars because it was eatable.

Made this last weekend and it turned out super moist. The lemon zest makes it taste way brighter than I expected—definitely baking again.

I tried it once but mine was kinda dense. Maybe I overmixed after adding the dry stuff? Also 45 min—my toothpick was never “clean” till like 55, so idk 🤷‍♂️ Still tastes good though.

    2. User avatar Vladimir Harkonnen says:

      5 stars
Ahh that’s awesome! I always worry about olive oil cakes drying out, so “super moist” makes me feel better. 🍋 Did you dust it with powdered sugar too?

  3. User avatar todd.klein2018 says:

    4 stars
Simple and easy to make. I even let my kid help! He loved it!

  4. User avatar Draugr Scourge says:

I followed it but it tastes a bit eggy to me… also my lemon zest didn’t really show up. Maybe I need to zest finer?

    1. User avatar Gurney Halleck says:

      4 stars
Hmm eggy could be from underbaking—mine is super set only when the toothpick comes out clean *and* the center doesn’t jiggle. Also with lemon zest: I zest fine (almost powdery) and it kind of disappears into the batter rather than sitting on top.

Maybe your zest is too big chunks? I’d try microplane zest, but also I think olive oil cake can taste a bit eggy if you use big eggs or beat them too long. Next time maybe add a little more vanilla or even an extra pinch of salt.

It’s just cake. Who cares about fancy ingredients. My grandma’s cakes were better.

    1. 4 stars
Sure, but this one’s got a unique twist with olive oil! My grandma never did that. Maybe you should try it before judging? 🍰

  6. 2 stars
Cake good, but can we all agree that olive oil is weird in sweets? I prefer traditional recipes!

  7. User avatar shakia.moore80 says:

This is one of those recipes that sounds fancy but is actually easy. I like that it’s not overly sweet, and the texture is really nice.

    1. User avatar blair.shanahan says:

I tried something similar and it turned out kinda… too oily? Maybe my eggs were big? Also, do you really need both baking powder and baking soda? I always forget the zest part lol.

    2. User avatar Shantelle Bartoletti says:

      5 stars
Yes! That’s exactly how I feel about it—fancy vibes, but the steps are straightforward. The olive oil really helps the crumb stay tender without it getting overly sweet. Great call on the texture too.

Not gonna lie, I was skeptical about olive oil in a cake, but it turned out surprisingly good. The crumb is tender. Would make again.

  21. User avatar Alexia Schowalter says:

Idk why people like olive oil cake. It’s okay, but I think butter cakes are just better. Texture was alright though.

  22. User avatar Gita Strosin says:

Too oily for my taste… I think butter would have been better. 🥴

  24. 4 stars
I followed the steps exactly and it’s a really solid basic cake. Not too sweet, nice crumb. Would definitely bake again for brunch.

    1. User avatar MAGA2024.Trumpster says:

Nice! I might add a little more lemon next time. Also, did you use baking soda AND powder (some recipes make it one or the other)?

    2. User avatar Muwo Jeem says:

      5 stars
That’s awesome—brunch cake is the best kind. I love how olive oil keeps it moist without being overly sweet. 🙌

  25. 1 star
Boring! Why not just make a chocolate cake? This is just…meh.

  26. User avatar latoria.kling says:

This cake is sooo good! I can’t believe how moist it turned out. Definitely making it again!

  27. User avatar Dr. Misty Koch says:

Too oily for my taste. I thought oil cakes are supposed to be light, but this was heavy.

  28. 3 stars
Y’all, this was wayyy too oily for me! 😖

  29. 3 stars
I used extra-virgin olive oil and it tasted a little too peppery for my kids (they’re picky lol). Next time I’ll use a milder olive oil.

  30. User avatar jamison.altenwerth28 says:

Wow, who needs butter when you have olive oil? This blew my mind, great recipe!
