Mushroom Quesadillas

September 26, 2025

Mushroom quesadillas are the kind of dish that prove simple ingredients can create something deeply satisfying. Warm, melty, and packed with earthy flavor, they’re a comforting meal that comes together quickly yet feels special every time. The magic lies in the combination of tender, sautéed mushrooms, gooey melted cheese, and a golden, crisp tortilla that holds it all together. Each bite is a perfect balance of textures and flavors: savory, rich, and just a little indulgent.

What makes mushroom quesadillas so appealing is their versatility. Mushrooms have a meaty, umami quality that makes them a great vegetarian alternative to traditional fillings like chicken or beef. They pair beautifully with a variety of cheeses, from sharp cheddar to creamy mozzarella or smoky gouda, allowing you to tailor the flavor to your mood. Additions like caramelized onions, sautéed peppers, or a sprinkle of fresh herbs can elevate them even further, while a drizzle of hot sauce or a spoonful of salsa brings a burst of brightness to every bite.

Another reason these quesadillas are a go-to favorite is how adaptable they are for different occasions. They make a satisfying lunch, a quick weeknight dinner, or a crowd-pleasing appetizer when cut into wedges and served with dips. Guacamole, sour cream, and pico de gallo are classic pairings that complement the rich mushroom filling perfectly. For something heartier, you can layer in black beans, spinach, or roasted corn to create a more substantial meal without sacrificing flavor.

Beyond their taste, mushroom quesadillas are a celebration of comfort food done right. They’re quick to prepare, endlessly customizable, and deeply satisfying without being complicated. They also happen to be a great way to highlight seasonal mushrooms, whether you’re using earthy cremini, delicate oyster mushrooms, or a mix of wild varieties for a more complex flavor. No matter how you serve them, mushroom quesadillas are one of those dishes that feel both familiar and exciting, a perfect blend of simplicity, comfort, and rich, savory flavor that always leaves you wanting just one more slice.

They were ok, but I thought it would be more flavorful. Maybe add some spices or something?

I totally agree! A pinch of cumin or some chili powder would amp it up so much. I’m definitely trying that next time!

    2. User avatar reginia.braun96 says:

      2 stars
Spices? But aren’t quesadillas supposed to be simple? Just enjoy the cheese and mushrooms, man!

  2. User avatar spring.marvin62 says:

I don’t get why everyone loves mushrooms so much. Tastes like dirt to me. Not a fan.

  3. User avatar Grunthos the Flatulent says:

    2 stars
Could’ve used more cheese. I also forgot to season the mushrooms and they tasted bland.

  4. 5 stars
These quesadillas were a hit! I added some spinach and it turned out amazing. Will make again!

  5. 4 stars
Yum! So easy to make! I used a mix of cheeses and served it with guac. So good!

  6. User avatar shonda.schmeler59 says:

    2 stars
Could use more seasoning. Salt/pepper alone feels kinda flat. Maybe add onion, chili flakes, or cumin next time.

  7. User avatar chante.aufderhar says:

    3 stars
Thought it was okay, but the tortillas burned a bit. Maybe I had the heat too high?

  8. User avatar bradford.ullrich2001 says:

5 stars for the simplicity! I forgot to buy sour cream, but the salsa still made it tasty.

  9. User avatar lazaro.effertz47 says:

I made this for lunch and my kid asked for seconds. The golden tortillas + melted cheese combo is elite.

  10. User avatar Dr. Toby Lebsack says:

    4 stars
This tasted way better than I thought it would. My kids loved it!

  11. User avatar Rita Story says:

    3 stars
Wow, this is like the best thing ever! But I thought quesadillas was with tortillas only, not mushrooms too!

  12. User avatar suspiciousCommentator says:

    4 stars
Mmm. I used mozzarella and it turned out really gooey. I did accidentally put the second tortilla on upside down (whoops) but it still worked. Would definitely make again.

  13. User avatar MAGA2024.Trumpster says:

    5 stars
These came out super crispy on the outside and melty in the middle—exactly what I wanted. I used mozzarella and they were gone fast. Will make again!

    1. User avatar jarrod.cremin says:

      5 stars
So glad they hit that crispy/melty combo! I love mozzarella too—makes them extra gooey 😄

  14. 4 stars
Super easy and quick! I added some jalapeños for a kick. Yum!

  15. User avatar zachariah.jacobson89 says:

    5 stars
This was amazing! I added some jalapeños for a kick and it worked perfectly. Definitely a keeper!

  16. 4 stars
Quick and easy! I made this for my kids and they loved it. I’ll try it with different fillings next time.

  17. User avatar ArabianNights says:

    4 stars
Really good and filling. I used half cheddar and half mozzarella for extra flavor. Yum!

    1. User avatar salome.raynor31 says:

      4 stars
Sounds delicious! I love quesadillas, but I’m not sure about the mushrooms… are they really that good?

  18. User avatar morris.konopelski says:

    2 stars
Wasn’t great. The mushrooms were too soggy for my taste. I think I prefer them grilled instead.

    1. 4 stars
I totally get what you mean! Mushrooms can get all mushy if not cooked right. Grilling them sounds way better! Have you tried roasting them instead? That might give a nice flavor too.

    2. User avatar andres.baumbach74 says:

      3 stars
Soggy mushrooms? Yikes! I don’t think I would like that either. You should put them under the broiler or something next time for sure.

  19. User avatar dolores.veum12 says:

    4 stars
Pretty good overall. I might’ve sliced the mushrooms a bit thick because mine took longer than 5 minutes, but the filling still tasted great.

  20. User avatar Spider Soldier says:

    5 stars
Yum! Cheese and mushrooms! what else do you need?!!!

  21. User avatar zoila.collins says:

    1 star
Mushrooms? No thanks. I would rather use chicken or something. Not my thing.

  22. User avatar marquita.muller84 says:

    2 stars
I dunno, I used regular cheese and it didn’t melt well. Not great.

  23. User avatar tillie.franecki says:

    3 stars
Pretty good, but I think it needs something else—maybe garlic or a pinch of cumin. Right now it’s a little bland even with salt and pepper.

  24. User avatar basementDweller says:

    2 stars
Too much cheese for my taste. Made it greasy. Not doing that again!

    1. User avatar lauren.herman says:

      4 stars
I hear you! Too much cheese can really ruin a good dish. Maybe try less next time!

  25. User avatar drew.haley2012 says:

    1 star
Idk why every1 likes mushrooms. They are slimy and gross. No thanks.

    1. 4 stars
I totally get you! Mushrooms can be weird for some people. But if you try this recipe with plenty of cheese, you might change your mind! 🤔

  26. 3 stars
Honestly… kinda bland. I followed the steps exactly and it just tasted like warm tortilla + cheese. Salt/pepper helped but I think it needs something like garlic or chili flakes.

  27. 5 stars
Super easy and the mushrooms get so savory so fast. I used mozzarella and a little extra cheddar—turned out perfect and crispy.

  28. 3 stars
Not bad, but I think there’s too much cheese relative to mushrooms? Mine felt heavy. Still tasty though.

  29. User avatar frank.ziemann98 says:

    2 stars
Mine stuck a little even though I used non-stick. Could be my tortillas were dry. Added extra oil and it helped.

  30. User avatar porfirio.kuvalis2009 says:

    4 stars
Good idea. Also super fast. 10/10 for the snack cravings.

  31. User avatar Leto II Atreides says:

Why flour tortillas? Corn would be better IMO. Flavor’s okay though—maybe I’m just picky.

    1. User avatar yoshiko.ortiz1997 says:

      3 stars
Idk, flour tortillas are kinda the classic for quesadillas though. Corn can get a little tough/crumbly in a pan if you don’t do it right. Still, maybe you’re onto something—try corn next time and see.

    2. User avatar Eddie the Computer says:

      5 stars
I get you—corn tortillas would be great with mushrooms. I usually use what’s in the fridge, and flour just melts more smoothly for me. But yeah, corn would add a nuttier flavor!

  32. User avatar annabelle.marks says:

    5 stars
Pretty easy weeknight meal. I added a little garlic and chili flakes to the mushrooms and it bumped the flavor a lot.

    1. 5 stars
Nice! Garlic + chili flakes is exactly what I would do—more savory kick. This is such a quick dinner idea.

  33. 4 stars
I was skeptical about mushrooms in a quesadilla, but it was surprisingly good.

    1. User avatar alphonso.white55 says:

      2 stars
Mushrooms? Really? I don’t know if I would try that. Quesadillas should be cheesy and meaty, not mushroomy. Just saying.

    2. User avatar filiberto.metz says:

      5 stars
I know right? Mushrooms in a quesadilla sounds weird but they taste so good! Glad you liked it!

  34. User avatar dollie.raynor2004 says:

    4 stars
I used mozzarella and it melted perfectly. Only thing: 3-4 minutes per side felt fast on my stove, but I just went by color and it worked.

  35. User avatar winifred.kunze1952 says:

    5 stars
These quesadillas are perfect for a quick dinner! My kids loved them too.

  36. User avatar glynda.hill19 says:

    4 stars
I substituded mushrooms with chicken and it worked fine! Can mix it up! 😄

  37. User avatar sandy.kilback16 says:

    4 stars
The sauté time (5 min) was right for me—mushrooms were tender, not watery. Love how simple this is.

    1. User avatar Evan Lee Arps says:

      5 stars
Totally agree—5 minutes was perfect for me too. I love that it turns out tender instead of watery without a ton of extra steps. 👍

  38. 4 stars
I made these for lunch and they were gone immediately 😅. Next time I’ll sauté the mushrooms a bit longer to get more browning, but overall great flavor combo.

  39. User avatar jenice.heaney14 says:

    3 stars
Do you have to add sour cream? Can it be without? 🤔

  40. User avatar Ryan Shenlong says:

    3 stars
I’m skeptical about only 5 minutes for mushrooms—mine were still a little watery. Maybe my pan runs cold. But once I cooked a few extra minutes, it was pretty good.

  41. User avatar deandra.wisozk98 says:

    5 stars
Your recipe make me hungry just reading it! 😍

    1. User avatar joaquin.dickens40 says:

      5 stars
I’m so trying this! Mushrooms and cheese? YUM! 😋

  42. User avatar Questular Rontok says:

    5 stars
These were surprisingly good for how simple they are. The mushrooms caramelized a bit in my pan and the cheese got nice and melty. I added a pinch of garlic powder and it honestly made it taste restaurant-y.

    1. User avatar simonne.fahey39 says:

      5 stars
Totally agree—simple recipes that actually deliver are the best. I’ve found sautéing until the mushrooms really brown a little makes a huge difference, and melty cheese seals it. 😄

    2. User avatar keitha.kshlerin48 says:

      4 stars
Wait… restaurant-y with just garlic powder? 😂 I always overthink quesadillas. Gonna try this and not mess it up. Also I’ll make sure the pan is hot enough before putting them in.

  43. User avatar Thurman Bins says:

    3 stars
Mushrooms? Not really my thing. I subbed in chicken, still turned out okay.

    1. User avatar rudolph.konopelski1950 says:

      3 stars
Really? Mushrooms are like the best part! But I guess chicken is okay too…

    2. User avatar alton.walter1958 says:

      4 stars
Glad it worked out for you! Chicken is a great alternative. 🙌

  44. User avatar mathWizard says:

    2 stars
I’m not a fan of mushrooms, but I tried anyway. The seasoning helped a lot—still won’t choose it again.

  45. User avatar Marybelle Prosacco says:

    5 stars
These turned out super tasty—crispy edges and the mushroom flavor is perfect. I added a pinch of garlic powder and it totally bumped it up.

    1. User avatar Keira Bartell says:

      4 stars
Hmm, garlic powder makes sense but I usually add minced garlic right in the oil—doesn’t that burn fast on medium? Either way, I’ll try your tweak!

    2. 5 stars
Yes! Those crispy edges are the best part. I love that mushroom flavor really comes through with just a little seasoning.

  46. 4 stars
Pretty solid weeknight meal. I used mozzarella and it browned nicely, but I think I cooked the tortillas a little too long because they got slightly crispy. Still ate them all though 😅

  47. User avatar allen.hamill1989 says:

    5 stars
Easy peasy. I made for dinner in less than 20 minutes. Thx!

    1. User avatar Liz Onnia says:

      5 stars
That’s awesome! I love how quick it is. Perfect for a busy night!

  48. User avatar Pizpot Gargravarr says:

    5 stars
Mushrooms on tortillas… wow. Kinda weird but I get it. I added hot sauce and now I’m obsessed. Five stars.

    1. 5 stars
I totally get it—mushrooms + tortillas is such a comforting vibe. Adding hot sauce is honestly the move. 🔥

  49. User avatar dolores.auer88 says:

    2 stars
I tried it but my cheese wouldn’t melt right. I think my skillet was too hot or the cheese was too dry. Also, 3-4 minutes on each side felt longer than needed for me.

  50. 3 stars
Pretty good, but mine got a little soggy even though I cooked it long enough. Next time I’ll squeeze moisture out of the mushrooms first.

  51. User avatar ira.wisozk says:

    2 stars
I had high hopes, but the cheese just melted away and it was kind of bland…

  52. User avatar abe.glover97 says:

    5 stars
Absolutely loved this recipe! The mushrooms added such a nice flavor. Will definitely make again!

  53. 3 stars
I followed it pretty closely, but mine got a little greasy. Next time I’ll pat the mushrooms dry after sautéing.

  54. User avatar leonie.labadie87 says:

    5 stars
Wow, these were a hit at my party! Everyone loved them. 👏

  55. 4 stars
Pretty solid weeknight snack. I added diced onions with the mushrooms and it made a big difference. Would make again.

    1. User avatar Thufir Hawat says:

      5 stars
Nice! Onions + mushrooms is such a good combo. I’ll try that next time—thanks for the tip.

  56. User avatar basementDweller says:

    3 stars
not bad, but I forgot to season the mushrooms. Oops!

  57. User avatar aldo.leannon says:

    1 star
Why do people make this? Just use a microwave burrito! This is extra.

  58. User avatar dexter.stoltenberg64 says:

    5 stars
Honestly I’m skeptical about quesadillas with just mushrooms… but I tried it and wow. Very flavorful for something so basic.

  59. User avatar marcelo.sipes99 says:

    2 stars
The instructions are clear, but my quesadilla came out soggy the first time. I think my pan wasn’t hot enough and I didn’t drain the mushrooms.

    1. User avatar manual.goyette63 says:

      4 stars
Mine was soggy too the first time 😅 I ended up cooking the mushrooms a little longer until the moisture cooked off, then I wiped the pan and used medium-high heat. Came out crispy after that!

    2. User avatar delois.pfeffer1991 says:

      5 stars
Totally agree—if the pan isn’t properly hot, the tortillas steam and you get that soggy middle. Also good call on draining the mushrooms; they can release a ton of liquid.

  60. User avatar MAGA2024.Trumpster says:

    5 stars
Tasty! I added some jalapeños for a kick. Yum! 🔥

    1. 5 stars
I love jalapeños too! They really add a nice flavor. Great idea adding them! 🌶️

  61. User avatar nicolas.kertzmann5 says:

    5 stars
Super good! The mushrooms cook down fast and the whole thing comes together quick. Perfect with sour cream and hot sauce.

  62. User avatar jude.mitchell1978 says:

    3 stars
Mine stuck to the skillet even though it’s non-stick. Also cheese didn’t fully melt in the middle, maybe my heat was too high. Still edible though.

  63. 3 stars
Not gonna lie, I burnt mine a little trying to get it ‘golden’—tortillas go from golden to brown real quick. Still tasted okay with salsa though.

  64. User avatar barbera.stehr says:

    5 stars
I followed it mostly, but I used a mix of mozzarella + a little parmesan. Melts great and 10/10 for an easy weeknight meal.

    1. User avatar tissues_with_issues says:

      4 stars
I tried this once but mine didn’t get “golden” like yours. Maybe I should’ve cooked longer? Still tasted good though 😅

    2. User avatar willian.bernhard1957 says:

      5 stars
Nice! Mixing mozzarella with a bit of parmesan is such a smart move—extra stretch + that salty bite. Glad it turned out great!

  65. 3 stars
Could be me, but I think I needed more cheese. Mine was tasty but kind of “open-faced” looking when I cut it.

  66. User avatar w00d_ch0p says:

    4 stars
I used cheddar and it worked, but it browned a little weird in the pan. Maybe my skillet runs hot? Tasted good either way.

  67. User avatar Linn Strosin MD says:

    4 stars
Not gonna lie, I was skeptical about just mushrooms + cheese. But it’s actually satisfying. Next time I’ll add onions or taco seasoning for more flavor.

    1. User avatar rickiestmorty says:

      5 stars
Totally get the skepticism—mushrooms can sound kind of “meh” with just cheese. But adding sautéed onions or even a dash of cumin is such a good upgrade. Nice call with taco seasoning!

  68. User avatar merideth.gerhold says:

    3 stars
Not bad, but 3–4 minutes on each side felt too long for my pan—burned slightly before the cheese fully melted.

    1. User avatar augustine.ortiz2000 says:

      5 stars
Ah, that makes sense—pan heat varies a lot. I usually go a touch lower (medium-low) and flip sooner if the tortilla starts browning. Also helps to cover the skillet with a lid for a minute so the cheese melts without burning.

  69. User avatar saundra.spencer1975 says:

    5 stars
My pickiest kid ate two wedges. That alone is a win. Salsa on top was the perfect kick.

  70. User avatar jeremiah.hodkiewicz1953 says:

    3 stars
Not gonna lie, I expected more flavor. The mushrooms taste fine, but the seasoning felt a bit basic. Next time I’m going to add sautéed onions or taco seasoning to bring it up.
