Start by boiling baby potatoes or Yukon Gold potatoes until they’re tender but still firm enough to hold their shape. Once cooked, drain and let them cool slightly. For the best texture, cut the potatoes into bite-sized chunks while they’re still warm, allowing them to absorb the dressing better.

In a separate bowl, prepare the dressing by whisking together Greek yogurt or sour cream, a squeeze of fresh lemon juice, and lemon zest for an extra burst of citrus. Add finely chopped fresh dill, a drizzle of olive oil, salt, and pepper, and whisk until smooth and creamy.       Totally get what you mean—2 tbsp lemon juice can be mild depending on the lemons. If you want it tangier, next time add 1 more tablespoon (or even 1 tsp at a time) and taste as you go. Dill + garlic is already punchy, so extra lemon really helps.
