Ingredients
  

  • 2 tablespoons olive oil extra virgin
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth low sodium
  • 4 cups kale rinsed and chopped
  • 2 medium potatoes peeled and diced
  • 2 each carrots sliced
  • 1 teaspoon dried thyme or fresh, if available
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Pour in the vegetable broth and bring to a simmer. Add the potatoes and carrots. Cook for 10-15 minutes or until the vegetables are tender.
  • Stir in the chopped kale and dried thyme. Simmer for another 10 minutes until the kale is tender.
  • Season with salt and black pepper to taste, then serve hot.

    Pretty good and simple. I used curly kale and it held up well, but next time I’ll chop it a bit smaller so it softens faster. Also, I needed more pepper than the recipe called for.

      Curly kale is cool, but I think the recipe is kinda off on timing. 10 minutes for kale alone seems short. I usually simmer longer and add pepper at the end so it doesn’t get bitter.

      Chewy kale after 10 min makes sense… kale’s kinda tough. I think you should just chop it way smaller or cook the kale longer like you said. Also, did you slice the carrots thin? Mine get tender quickest that way.

      Totally get that—“low sodium” still varies a lot by brand. I’ve had it stay salty too. Also yeah, chunky onion definitely extends cook time; 5 minutes only works if they’re pretty small. Next time I’ll cut them finer.

      Totally makes sense—kale can definitely stay chewy if it’s chopped bigger or the simmer isn’t long enough. Next time try cutting it smaller *and* simmering 5 more minutes (or partially covering the pot).
