Instructions
Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Pour in the vegetable broth and bring to a simmer. Add the potatoes and carrots. Cook for 10-15 minutes or until the vegetables are tender.
Stir in the chopped kale and dried thyme. Simmer for another 10 minutes until the kale is tender.
Season with salt and black pepper to taste, then serve hot.
