Kale and Artichoke Chicken Casserole is a hearty, nutritious dish that combines tender chicken, vibrant kale, and flavorful artichokes in a creamy, satisfying casserole. Perfect for busy weeknights, meal prep, or family gatherings, this recipe delivers comfort food appeal while incorporating wholesome ingredients that support a balanced lifestyle. The combination of lean protein, leafy greens, and savory vegetables creates a meal that is both nourishing and delicious.
The foundation of this casserole is juicy chicken, which provides a rich source of high-quality protein. Whether using shredded rotisserie chicken, cooked chicken breast, or leftover roasted chicken, the meat adds substance and flavor to every bite. Its mild taste pairs beautifully with the bold flavors of kale and artichokes, creating a balanced and satisfying dish.
Kale brings both nutrition and texture to the casserole. Known for its impressive vitamin and mineral content, kale is packed with vitamins A, C, and K, along with antioxidants and fiber. As it cooks, the leaves soften while maintaining enough texture to complement the creamy filling. The slight earthiness of kale helps balance the richness of the sauce and cheese.
Artichoke hearts add a unique flavor that elevates the casserole beyond ordinary chicken dishes. Their slightly tangy, nutty taste pairs perfectly with the savory ingredients, while their tender texture blends seamlessly into the filling. Canned or jarred artichoke hearts make preparation simple and convenient.
A creamy sauce ties all the ingredients together. Typically made with garlic, broth, cream cheese, Greek yogurt, or a light cream sauce, it adds richness without becoming overly heavy. Parmesan or mozzarella cheese provides a golden, bubbly topping that adds extra flavor and visual appeal. A touch of Italian seasoning, black pepper, and garlic enhances the overall taste while keeping the dish comforting and familiar.
One of the best features of Kale and Artichoke Chicken Casserole is its versatility. It can be served on its own for a low-carb meal or paired with rice, quinoa, pasta, or crusty bread for a more substantial dinner. It also reheats beautifully, making it an excellent option for leftovers and meal planning.
This casserole proves that comfort food can be both nutritious and satisfying. The combination of tender chicken, nutrient-rich kale, flavorful artichokes, and creamy sauce creates a meal that is filling, wholesome, and packed with flavor. Whether you’re feeding a family or preparing meals for the week, this casserole is sure to become a favorite.

Should I use fresh or frozen kale? It doesn’t say. Help!
Kale? Is that even safe to eat? Who put that in casserole? Sounds odd.
Honestly, I was skeptical about kale in a casserole. But it turned out pretty good! Who knew?
I made this for my potluck, and nobody wanted it…I don’t know why. 😕
This casserole is amazing! My family devoured it. 👍
Waste of time, turned out dry. What a letdown.
I tried this with spinach instead of kale and it was still yummy.
Was okay. Little bland for me, needed more flavor. 🤷♂️
So good! I added chicken seasoning for extra flavor. Yum!
Adding chicken seasoning sounds like a great idea! I’ll have to try that next time. Thanks for the tip!
I don’t think chicken seasoning really fits with artichokes and kale… seems kinda weird. Just saying.
I was skeptic about kale, but it actually turned out pretty good. I might make it again.
Kale? Seriously? Not a fan of that stuff. Gave it a try but won’t make it again.
Kale is actually super healthy! Maybe try it with a different recipe next time? 😄
This was amazing! So creamy and full of flavor. My family devoured it!
Easy to make and delicious! Definitely adding this to my regular meals.
I love this! It’s so creamy and flavorful. Perfect for a cozy dinner. ❤️
Horrible!! Tasted nothing like the picture! I don’t recommend.
This is a hit! We loved it at our family dinner. So creamy and full of flavor!
It was okay, but I think it needed more seasoning or something. A bit bland for me.
I used spinach instead of kale because I couldn’t find any. It turned out great anyway!
Too much cheese for my taste. It was like a heart attack on a plate!!
Kale? More like fail! Sorry, but this is not for me.
So many cheeses! I love it! But maybe lower the salt next time. Better for my blood pressure.
Yummy! My kids even ate the kale! 😂 Definitely going to make again!
That’s awesome! Getting kids to eat kale is a win! 😄 Can’t wait to try it!
I followed it pretty much exactly, but mine came out a bit thick. I think my chicken was drier than expected. Still tasted great though—creamy and cheesy!
Thick = maybe too much liquid cooked off? I usually squeeze the kale a little after wilting if it seems wet, but not the chicken. If your chicken was dry, that would do it. Glad the flavor was there!
Totally get that—these casseroles can thicken up fast if the chicken’s on the drier side. Next time maybe add a splash of milk/cream or use a bit more sour cream so it stays creamy. Still sounds delicious though!
Made this last night—super cozy. The kale stayed nicely tender and the artichokes give it a fancy vibe without much effort. Next time I’ll add a little more garlic.
Not bad, but I had trouble with the kale—still a little chewy after baking. Next time I’ll sauté the stems longer and maybe chop them smaller.
Yeah, kale can be stubborn. If the stems are chewy, chopping smaller and giving them a quick sauté longer (or even par-cooking) usually fixes it. I’m glad you’re adjusting—great call on the stems!
I had the same thing the first time. I now slice the stems thin and cook them in the skillet like 5-7 minutes before adding the leafy parts. Also make sure you don’t bake it too long—mine overbakes easily.
This was okay, but a little bland for me. I ended up adding extra garlic and some Italian seasoning and it improved a lot.
Looks good but 375 for 35 mins is to low I think. My friend said bake 1 hour at 400. Maybe I shouldve followed different temp??
I think 375°F for 35 min usually works since it’s already cooked chicken and the filling is thick—just needs to heat through and bubble. If your casserole was cold/very thick, I’d go a little longer instead of jumping temp.
I followed it exactly, but my kale stayed a bit crunchy after baking. Maybe I should’ve cooked it longer in the skillet. Still tasted good though.
Maybe your kale was just tougher or the stems were still in there? Also 30–35 min might not soften it fully—try baking a bit longer or chop smaller.
Totally feel you—kale can stay a little crunchy depending on the bunch and how thick the chop is. Next time I’d cook it closer to 4–5 min in the skillet (or give it a quick sauté longer). Still love that it tasted good!
No offense but I don’t trust casseroles with that much dairy. I’m more of a “roast it” person. That said, the flavors smelled great while baking.
Five stars? Yeah nah. It was good, but not better than my usual mac and cheese. Kinda heavy and rich.
Pretty good, but I think 375 is a little low for my oven—top didn’t get golden until closer to 40 min. Also I used low-fat sour cream and it was thinner, so next time I’ll stick to regular.
Thanks! I’ve had similar oven quirks—30-35 min is more like a minimum. Glad it still turned out tasty. I’ll note to bake closer to 40 if the top isn’t browning.
Interesting about the low-fat sour cream—makes sense it’d thin everything out. I usually use full-fat so it sets up better. Regular next time 👍
