Japanese White Stew, also known as cream stew, is a beloved comfort food in Japan, especially during the colder months. With its mild, creamy broth and tender chunks of meat and vegetables, this dish offers warmth and nourishment in every spoonful. It’s the kind of homey, cozy meal that brings families together around the dinner table after a long day.
Unlike rich European cream-based stews, Japanese White Stew has a lighter, more delicate flavor. It’s typically made with a base of milk or cream combined with a roux, which gives the stew its smooth and velvety texture without being too heavy. The flavor is subtly savory, often enhanced with chicken broth and just a touch of sweetness, a signature element in many Japanese comfort foods.
The heart of the stew includes bite-sized pieces of chicken or pork, along with a colorful variety of vegetables like carrots, potatoes, onions, and sometimes broccoli or corn. These ingredients simmer gently in the creamy broth, absorbing the flavors and becoming perfectly tender. The result is a stew that feels both satisfying and gentle on the palate.
What makes Japanese White Stew even more appealing is how easy it is to make. It’s often prepared with the help of ready-made stew roux blocks sold in Japanese supermarkets, which simplify the cooking process without sacrificing flavor. However, homemade versions are just as rewarding and allow for more customization with ingredients and seasoning.
This dish is typically served with steamed rice or crusty bread, making it a complete, hearty meal. It’s a popular weeknight dinner option for families across Japan, and its subtle, soothing taste makes it perfect for children and adults alike.
Japanese White Stew is a reminder that comfort food doesn’t need to be complex to be deeply satisfying. With its creamy texture, mild flavor, and nourishing ingredients, it’s the kind of meal that warms both the body and the soul.

Yummm! The milk and chicken combo is so creamy. Perfect for winter!
Totally agree! This dish is such a comfort food during those cold days. 😍
I dunno, milk and chicken? Sounds kinda weird to me. Is it really good?
I hate counting tablespoons of butter and flour—too much effort 😅 But I tried it anyway and it was actually really good. Maybe I’ll make it again when I’m feeling brave.
Good idea, but mine turned out a bit thick like gravy after step 3. I think I added the milk too fast. Still edible though, and the veggies were nice and soft.
Could use more seasoning like garlic or ginger. Salt/pepper alone feels kinda plain, but the sauce texture is nice.
I didn’t have enough chicken stock so I used water + extra salt. It was okay, but honestly the “buttery milk gravy” vibe wasn’t as rich. Ingredient quality matters a lot here.
I loved it, my partner not so much. He thinks it’s too plain. Guess it’s a hit or miss.
Nice but I forgot the broccoli 😅 Still turned out good!
Why is it called Japanese if it’s basically a creamy chicken stew? Still tasted good though. The pepper amount is on point.
Easy, quick, and tastes nice. Next time, I’m adding cheese! 🧀
Cheese sounds like a great idea! Adds flavor for sure. Enjoy your cooking!
Why is it called Japanese? It’s basically chicken and veggie stew with milk. Could be tasty, but the name feels off to me.
I get what you mean—ingredients-wise it’s more like a creamy chicken & veg stew. Maybe “Japanese” is just the vibe from using a roux-style creamy sauce (kinda like some Japanese comfort foods) rather than being strictly traditional. If you call it “Japanese White Stew,” it at least sounds cozy 😄
This recipe is way too complicated! Can’t just mix stuff?
Broccoli after 20 minutes feels too long to me. Mine got kinda mushy. Otherwise it’s fine—kind of bland until you season more.
I don’t get why people like this. It tasted kinda bland.
This looks really comforting! Can’t wait to try it this weekend! 😊
Chicken, potatoes, veggies? Sounds healthy, but where’s the beef? Disapoint!
Made this last night—so cozy. The roux step is key; once it thickened, everything came together nicely. I added a pinch of garlic too and it tasted even better. 10/10 for a “no-stress” dinner.
I’m skeptical about the milk + stock combo… mine turned kinda bland unless I used more salt/pepper, but the idea is good. Also I used 2 potatoes and it was probably less thick—still tasted okay though.
Yesss “no-stress” is exactly how this should be described 😄 The roux thickening part is so satisfying—mine usually gets glossy right when it’s ready.
Not sure about the flour/butter step, because 3 tbsp flour + 3 tbsp butter felt like a lot for only 1 liter liquid. Mine was thick like gravy at first but loosened after simmering. Flavor was good!
So simple but so good! My kids devoured it. Will definitely make again.
Really good, but I substituted the chicken with tofu because I’m vegetarian. Still yummy!
Ok so I followed it but I got no “Japanese” vibes… felt more like a creamy chicken pot pie filling. Still good, just not what I was expecting.
I don’t have chicken stock, can I use vegetable stock instead?
Made this tonight—super cozy. The roux step is key; I stirred a little longer than 3 min and it came out nice and smooth. Family loved it, especially the broccoli.
I’m jealous 😅 I made something like this once and my sauce turned kinda gluey. How thick should it be before you add the stock—like gravy thick or thicker? Also do you stir the whole time once the milk goes in?
So glad you nailed the roux! That “stir a bit longer” tip is everything—white stews can get lumpy fast if you rush it. Love that your family liked the broccoli too 😊
Didn’t turn out quite right. The sauce was too thick. Not sure what I did wrong.
I don’t know about this. Sounds too bland for my taste. Why no spices?
I thought the same at first, but this stew is super creamy and comforting! Maybe try adding some herbs or a dash of soy sauce if you want more flavor!
OMG this was a disaster! The sauce didn’t thicken at all. What did I do wrong?
Disaster? That’s a bit dramatic! Did you follow the measurements? Sometimes less flour can make a difference.
You probably didn’t cook the roux long enough. Make sure to stir it until it’s golden before adding the milk!
5 stars! I made it for my family and they all cleaned their plates!!!
Kinda bland, but adding some spice might fix it for next time.
My kids wouldn’t touch it. I guess they wanted more flavor.
Delicious neva thought I’d like broccoli in a stew but it rocked!
I’m glad you liked it! Broccoli really adds a unique flavor to the stew. 😊
Pretty good, but mine got a little thick like gravy even after adding stock. Next time I’ll loosen it with a bit more milk/stock. Still tastes really comforting.
Didn’t have chicken so I used beef. Not the best idea. 😂
Beef? Really? 😂 That sounds like an interesting twist, but I don’t think that would work the same way! Stick to the chicken next time!
Lol, I mean who needs chicken anyway? Beef can work too I guess. Just don’t tell the recipe police!
I love chicken stew! I didn’t have broccoli, so I used peas instead. Still tasted great!
So easy and delicious! I might add some garlic next time. 🥰
Garlic would be a great addition! I love experimenting with flavors. 😊
I don’t know about adding garlic… Seems like it might mess it up? 🤔
Meh… was okay. I don’t see why people rave about it.
This looks delicious! I love the creamy texture. Can’t wait to try it!
Too much milk!! I didn’t like it at all. Yuck!
I actually loved the creaminess! Maybe you added too much milk by accident? 🤷♂️
best stew ever!!!
This was an amazing dish! My family loved it. Will definitely make again.
I am not a fan of stews in general, but this was decent. The roux part was confusing tho.
I don’t know why they call it stew. It’s more like a soup 😒.
Hum, I think it’s a stew cause of the thick sauce. Soup is more watery, ya know? 😂
Honestly, it’s whatever you wanna call it. Just make sure it tastes good. 🙄
Not very “Japanese” in my opinion… it’s more like a creamy chicken stew. Could be fine, just don’t market it as Japanese White Stew.
This tasted bland until I added extra pepper and salt at the end. Maybe 1 tsp salt isn’t enough for me? Also, I used chicken thighs instead—still good.
I made this for dinner but it came out too soupy. What did I do wrong?
Not sure about the flour-to-butter ratio—my sauce turned out a bit gluey. Maybe I didn’t cook the roux long enough. Tasted okay, just not pretty.
Huh, I had the opposite—my sauce was too thin. Maybe you needed more flour? Or maybe the milk was off? I usually do like 1 minute only and it’s fine lol. Still, if it’s gluey, I’d cook the roux longer and whisk more when adding milk.
That sounds like a roux timing issue, yeah. 2–3 minutes can be enough, but if your heat was low or the flour/butter weren’t fully bubbling, it can stay kind of pasty. I’d try stirring until it smells nutty and turns slightly deeper (not burnt). Also, adding the milk a bit slower helps prevent lumps and gluey texture.
Pretty good, but I think 20 minutes wasn’t enough for my potatoes (they were still a bit firm). Next time I’ll dice smaller or simmer longer. Still tasted nice and mild.
Totally agree—potatoes can be stubborn. Dicing smaller or giving them 25–30 min usually fixes it. Glad it still tasted mild and nice!
This tastes like chicken pot pie filling without the crust. Pretty good! I used low-sodium stock so I added a tiny bit more salt at the end.
Easy and yummy.
It turned out too salty for my taste. Maybe I added too much? Not sure I’ll make it again.
Not sure why it’s called Japanese White Stew though… feels more like a Western creamy chicken stew to me. But hey, it’s delicious and that’s what counts.
I followed the recipe exactly, but it came out too thick. What did I do wrong? 🤔
I’m skeptical about the ratio—3 tbsp flour to 1 liter liquid sounds like it could be thin, but mine thickened eventually. Might depend on milk brand? Came out a bit more paste-y than stew, though.
The instructions are clear, but I didn’t love the flavor balance. Milk + stock is fine, yet it needs something to brighten it up. Maybe lemon juice at the end?
Broccoli after 20 minutes… i think that’s too long? Mine got soft like mush, but the rest was fine. I’ll try adding it sooner next time.
Yeah, 20 min + another 5 for broccoli can definitely push it toward mush, depending on floret size. I usually add it closer to the end (like 3–5 min total) or blanch it first.
I’m not sure about this. It seems too creamy for my taste. Maybe I’ll try it without the milk.
I get what you’re saying! The creaminess might not be for everyone. Trying it without milk could really change the flavor.
Nah, it needs the milk to be good! Otherwise, what’s the point? I guess some people just don’t like creamy stuff.
My kids love it! They ate all their veggies, haha. Thanks!
That’s awesome! Getting kids to eat their veggies can be a challenge, but this recipe seems to do the trick. I’ll have to try it soon!
Delicious! My family loved it. Will make again!
So glad you liked it! It’s become a family favorite for us too. 😊
This stew was so creamy and delicious! My family loved it, especially the kids!
Eh. Too bland unless you crank the pepper. Also 20 minutes didn’t fully soften my potatoes—could’ve been my cut size, but still.
Honestly, I was skeptical but it was really nice. Might make it again sometime.
I’m glad to hear you enjoyed it! It’s such a comforting dish. Did you add anything extra to it?
Really? The way you described it makes me think it would taste bland. How did you season it?
My roux got clumpy for a minute, I panicked, but I kept stirring and it smoothed out. If you’re new to roux, don’t walk away.
Hmm I usually skip the whole roux thing and just thicken with extra flour later—but maybe that’s why mine goes lumpy sometimes. I’ll try your method next time, though my pan always runs hot 😅
Yes!! That exact “uh oh it’s clumpy” moment had me stressed the first time too. Stirring it through always saved it for me. Great warning for beginners 👍
This stew is awesome! I added some garlic and it turned out great!
Glad you liked it! Garlic really does elevate most dishes. Did you make any other tweaks?
idk what i did wrong but mine came out so thick like cement… ugh
Cement? That’s funny! 😂 Sounds like you just need to adjust the liquid next time. More milk perhaps?
Maybe you added too much flour? That’s a common mistake. Try reducing it next time!
Yummy! But a bit too much broccoli for my liking, next time I might skip it.
Easy to make! I’m not a chef but I managed just fine. 10/10 would eat again!
Very yummy! I added some garlic and it was a great addition! Thanks for this recipe!
Tasty! But where’s the spice? I like some heat in my food!
I used frozen chicken and the texture was off. Stick to fresh for best results!
Made this tonight and it came out super cozy. The roux step is key—mine thickened perfectly after adding the milk. Family loved it!
Yes!! That roux really makes it feel like comfort food. I did the same and it turned out so creamy. Glad your family loved it 😊
So good! Can’t believe I spent my whole life without knowing this recipe. Thx!
I agree! This recipe is a game changer! I’ve made it twice this week already. So creamy and delish!
Looks good, but I’m not sure about the milk and chicken stock together. Isn’t that too liquidy?
Absolutely delicious! The creaminess is just perfect. My family loved it!
