      Ugh—sorry that happened! Rubberiness usually screams “a little too long” or not enough set time. I’d try pulling them closer to 25 min and letting them finish while cooling in the tin.

      Totally get what you mean—cottage cheese can definitely behave differently by brand. Mine don’t separate much, but I’ve noticed it gets more “watery” if the cottage is looser.
